This is truly such a super simple salad that packs in so much flavor! It's a breeze to throw together and can easily be turned into a main entree by adding some chopped rotisserie chicken or grilled chicken to make it more hearty.

You'll love the lemon, poppy seed, and blueberry combo here. It may not be the first thing you'd think to add to salad, maybe perhaps more along the lines of a baked treat, but it works exceptionally well for a salad too.

Its sweet, tart, fruity, nutty, cheesy flavor fusion is completely crave-able, and it's bursting with fresh, nutritious goodness in every bite.

It's a different salad for a change, that's set to satisfy every tastebud and I'd say will likely even brighten your day!

French Hot Chocolate https://www.cookingclassy.com/french-hot-chocolate/ https://www.cookingclassy.com/french-hot-chocolate/#comments Wed, 26 Feb 2025 04:36:15 +0000 https://www.cookingclassy.com/?p=75794 Decadently rich and creamy French Hot Chocolate! This Parisian style thick hot chocolate is made with 3 simple ingredients and ready in minutes!

French hot chocolate in a small glass mug served with a croissant on the side.

Wondering what difference is between French Hot Chocolate and American hot chocolate? French hot chocolate is thick, dense, creamy, rich and typically made with real chocolate bars plus milk or cream, whereas American hot chocolate is usually cocoa powder based, is milder in flavor, thinner and typically sweeter.

While both can be delicious this hot chocolate is for those moments when you are ready to indulge in pure chocolate decadence. It us unapologetically chocolatey, it's unbelievably simple and heats on stovetop in minutes, and the level of sweetness can be adjusted to taste by adding more or less brown sugar (or even none at all).

If you are looking for a quick, perfectly sip-able treat then look no further. Make a batch of this memorable European style hot chocolate and pair it with some buttery croissants for dipping. It's the ultimate indulgence!

Mini Quiche https://www.cookingclassy.com/mini-quiche/ https://www.cookingclassy.com/mini-quiche/#comments Sun, 16 Feb 2025 23:06:15 +0000 https://www.cookingclassy.com/?p=74171 These easy Mini Quiche are tasty individual serving size quiches made with a shortcut of flakey store-bought pie crust and a rich egg filling dotted with cooked ham, melted cheddar and flavorful fresh herbs.

Want to Make a standard full size quiche? Use my recipe here.

Mini quiche stacked on a white oval platter over a teal cloth.

Mini quiche are perfect for a weekend breakfast, a holiday brunch or a make ahead on the go breakfast. They are easy to make and brimming with enjoyable flavor thanks to the abundance of savory fillings.

While eggs may be pricey right now this breakfast recipe is a good way to stretch them and get more servings out of them (since you'll mix in cream and fillings rather than using whole eggs alone).

For me I think these will be a new Easter tradition, there's just something about quiche that's so fitting for the holiday.

You can adjust the fillings to suite your own personal taste and it's a good way to use up what you have on hand in the fridge (see ideas below).

Wondering what to pair with mini quiche? I recommend yogurt parfaits, breakfast potatoes or smashed potatoes, and a vibrant fruit salad.

A completely enjoyable treat meant to be served year round!

Homemade Lemon Cookies

This is a splendidly flavorful, inviting cookie that's bright and cheery during the blistery winter season, yet it's also a cookie fit for those warm summer months where you'll find them reminiscent of a refreshing summer lemonade.

They are fun to finish by decorating them how you like, you can drizzle icing in zigzag patterns over the top or take a spoonful and make a simple circle atop them. And no one said sprinkles are wrong either. However you finish them just don't leave the icing off, it's critical to the abundant lemony flavor of the cookie (as this portion of the cookie calls for the most lemon juice).

If you like a more noticeably yellow cookie simply add a little natural yellow food coloring to the dough to mimic the hues of those sunny lemon peels. It won't affect the taste but I think we tend to eat with our eyes first so a little yellow addition is a nice touch if you have it.

Oatmeal Cream Pies https://www.cookingclassy.com/oatmeal-cream-pies/ https://www.cookingclassy.com/oatmeal-cream-pies/#comments Sun, 08 Dec 2024 21:03:35 +0000 https://www.cookingclassy.com/?p=73276 Nostalgic Oatmeal Cream Pies - made up of two chewy, buttery oatmeal cookies sandwiching a sweet, rich and creamy filling. A childhood favorite that's a hundred times better than store bought!

Stack of oatmeal cream pies on a blue plate with a blue cloth do the side and a glass of milk.

An oatmeal cream pie (also spelled oatmeal "creme" pies) are an old fashioned cookie that's been around for decades and for good reason. We know of the iconic Little Debbie version (I ate far too many as a kid) but now I much prefer them without all the self stabilizing additives, artificial flavors and added color. And of course made with fresh butter instead of various oils is better.

These homemade oatmeal cream pies are a family favorite which makes sense because they are basically an upgraded oatmeal cookie with a frosting filling. They are easy to make and the flavors never disappoint!

With each cookie you get a welcome blend of chewy textures, crisp golden brown edges a soft center (as it should be), with oat-y flavors and highlights warm winter spices and hints of deep molasses. Then for the filling it's a buttery, creamy, frosting type filling, with its sweetness balanced by a small addition of cream cheese (I preferred this option to using cream with the butter and sugar when taste testing).

It's a memorable treat that will always satisfy those homemade cookie cravings. Enjoy them together with family or friends, and serve them with a chilled glass of milk, or warm apple cider during the colder months.

They're crisp on the outside while fluffy, moist and tender on the inside. Exactly as a waffle should be.

They are made with smooth pumpkin, warm spices, flavorful buttermilk, a fair amount of eggs for billowy fluff, and oil for richness. They make an excellent lazy weekend morning treat, and they are even worthy of a festive holiday breakfast spread.

Mini Pumpkin Pies https://www.cookingclassy.com/mini-pumpkin-pies/ https://www.cookingclassy.com/mini-pumpkin-pies/#comments Mon, 11 Nov 2024 04:04:40 +0000 https://www.cookingclassy.com/?p=73986 Fun and festive Mini Pumpkin Pies! Made simple with flaky store-bought pie crust, canned pumpkin puree, and rich sweetened condensed milk. And of course they also include an ideal amount of those traditional warm pumpkin pie spices we crave.

Platter filled with many mini pumpkin pies topped with whipped cream and cinnamon.

These mini pumpkin pies are an exciting modern day twist on a nostalgic holiday classic! They are baked in a standard size muffin pan instead of as a whole pie. They are easy to make, faster to bake, and they're a tasty treat for people of all ages.

Their flavor is pleasantly pumpkin-y, deliciously sweet, and swirled with seasonal spice. And they have the best blend of textures with a crisp, flakey crust and a velvety, rich custard pie filling.

They are easy to serve and completely fitting for parties. And aren't most desserts just more enjoyable and charming when served in a mini individual serving size? They even seem fancier too.

With their smaller size plan on two of these per person, or even three for a Thanksgiving or other holiday feast. And as always take those classic pumpkin pie flavors up a notch by serving them with a generous swirl of billowy sweetened whipped cream atop.

Huevos Rancheros https://www.cookingclassy.com/huevos-rancheros/ https://www.cookingclassy.com/huevos-rancheros/#respond Wed, 18 Sep 2024 04:44:41 +0000 https://www.cookingclassy.com/?p=73374 Flavorful and hearty Huevos Rancheros - A deliciously scrumptious Mexican breakfast made with fresh ingredients, served warm and cozy, and sure to satisfy those bright spicy cravings. You'll have these devoured in minutes!

Huevos rancheros served tortillas, salsa ranchero, fried eggs, avocado, and cotija.

What are Huevos Rancheros?

Huevos Rancheros is a traditional Mexican dish made up of warmed corn tortillas, a cooked salsa (red tomato salsa or green tomatillo salsa), and fried eggs. It is pronounced way-vows-rhan-che-rohs and translates meaning rancher's eggs.

They are frequently served with refried beans or black beans on top or as a side, and you can garnish them with various toppings.

This version is easy to prepare and is fairly quick compared to other versions. That is thanks to a food processor, because we skip the option of roasting the tomatoes and veggies for speed (though there's no lack in fresh flavor), and hereĀ  the recipe calls for ground chili powder rather than managing the steps of whole dried peppers.

This Huevos Rancheros is practically perfect and such a welcome comforting way to start the day. You may even likely find you are craving it for not only breakfast but lunch or dinner too!

Make it a complete meal served with chorizo or sausage, and don't forget that side of beans.
