Homemade Pumpkin Donuts

These pumpkin donuts are one of the tastiest baked donuts, you'll be craving them as soon as fall rolls around.

They don't require any extra rise time (since they aren't a yeasted donut) and no deep frying messiness here. Plus no mixer required here, just a quick blend by hand for this donut batter.

They are baked in the oven in donut pans (or try mini muffin pans if you don't have donut pans), then after that while they are warm they are rolled in sweet cinnamon sugar.

I like to serve them with hot cocoa, warm apple cider, coffee, or you can't go wrong with a tall glass of milk.

They are perfectly fitting for an after dinner dessert or they make an excellent weekend breakfast treat. And there are lots of different additions you can add like finishing with a chocolate glaze or adding chopped nuts (more ideas below).

Our Go-To Blueberry Muffins!

Is a blueberry muffin healthy?  While the obvious answer is no a traditional blueberry muffin is definitely not healthy, we can however make a few simple modifications to make them quite a bit healthier.

And sure I have a not-so-healthy sugar packed blueberry muffin we love and enjoy sometimes but this recipe below is something I feel better about serving my family more often.  These have actually been one of our go-to breakfasts before school for quite some time.

It's something we can take on the go, they are such a tasty morning treat, and it's so convenient that they can be made ahead.

For the kids we usually just pair them with milk and a hard boiled egg for another make ahead option (we aren't morning people and appreciate those few extra minutes of sleep). And if you like them warm you can heat in the microwave briefly.

These blueberry muffins freeze well for several months (though you'll probably have them polished off much sooner), and you don't even need a mixer to make them!

They have a soft and moist crumb, plenty of blueberry flavor, and they are sweetened just enough.

If you are looking for a smarter way to enjoy a muffin without all the refined sugars and unhealthy fats I highly recommend trying these. You may likely agree muffins can still be delicious without all that extra stuff.

More often than not when I making donuts I go for baked donuts vs. fried.

Less mess, still such a delicious flavor, and a bit less fat since we skip the deep frying. Oh and none of that oily smell in the house, just a sweet coconuty scent!

Which Would You Choose Raw Coconut or Toasted?

I couldn't choose which I liked better, the raw coconut or the toasted coconut so I did half of each. But I will say the finely shredded coconut is definitely what you want here.

That fine texture won't detract from the soft fluffy texture of the donuts. You can find the fine coconut in the bulk bins of some grocery stores, or sometimes the baking section or on Amazon.

And if you don't own a donut pan you can also find those on Amazon (or in stores like Michaels or kitchen supply stores).

I recommend buying two though. I started with one back in the day and that didn't last long. Baking 6 at a time was kind of annoying when your recipe makes 12 - 18.

Easy Lemon Poppy Seed Muffins

Here's breakfast at its best — or at least close to it! I absolutely love poppy seed muffins, both lemon and almond poppy seed. I already have an almond poppy seed muffin recipe posted so I think it's time for the lemon version.

These homemade muffins are abundantly bursting with fresh lemon flavor, and the poppy seeds add that mellow hint of unique flavor. I made this recipe to yield deliciously moist and soft muffins, because that's the way every muffin should be.

Be sure to add the lemon glaze to the warm muffins because it allows the glaze to slightly absorb into the muffin and just gives the muffin tops the best flavor and texture — it might leave you wishing the muffin was just made up of two muffin tops!

You could just do what my kids do and eat the muffin tops only and save the bottoms for someone else :). They didn't do that with these though, they ate the entire thing and wanted more.

I simply couldn't resist having two. Normally I'm better at restraining myself because I'm always surrounded by sweets so I try not to constantly over-indulge, but with these I just couldn't. I hope you find these hard to resist too!

Lemon Poppy Seed Muffins Ingredients

For the muffins, you'll need:

  • All-purpose flour
  • Poppy seeds
  • Baking powder and baking soda
  • Salt
  • Granulated sugar
  • Unsalted butter
  • Vegetable oil
  • Lemon zest and juice
  • Eggs
  • Vanilla extract
  • Milk
  • Sour cream

And for the lemon glaze, you'll need:

  • Lemon juice
  • Powdered sugar

How to Make Lemon Poppy Seed Muffins

  • In a large bowl, whisk together dry ingredients.
  • In a separate bowl, beat butter, sugar, lemon zest and 1 tablespoon oil.
  • Add remaining oil to butter mixture, followed by the eggs, egg yolk and vanilla.
  • In a liquid measuring cup, whisk together milk, sour cream and lemon juice.
  • Fold wet and dry ingredients into the butter mixture, then divide batter among muffin cups.
  • Bake until toothpick inserted into the middle comes out clean.
  • Once muffins have cooled slightly, make lemon glaze and drizzle over muffins.

Can I Freeze These Muffins?

Yes, these muffins freeze well. To freeze these lemon poppy seed muffins, let them cool to room temperature before sealing them in a freezer bag. You may want to wait to drizzle on the lemon glaze until you're ready to eat the frozen muffins.

Can I Add Extra Lemon Zest to These Muffins?

Yes, adding more lemon zest would be fine. Just don't add extra lemon juice, otherwise the batter may be too runny.

Tips for the Best Lemon Poppy Seed Muffins

  • You need to beat the butter and sugar until pale and fluffy, otherwise your muffins won't be as light as mine.
  • I like large muffins, so I divided the muffin batter between 12 muffin cups. For smaller muffins, divide the batter between 15 muffin cups.
  • You can use any dairy milk you'd like in this recipe, but the higher the fat percentage the moister these muffins will be.

Lemon Poppy Seed Muffins

My favorite lemon poppy seed muffins! They're perfectly soft with big muffin tops and have lots of bright lemon flavor.

  • 3 cups all-purpose flour
  • 3 Tbsp poppy seeds
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup + 2 Tbsp granulated sugar
  • 6 Tbsp unsalted butter (, softened)
  • 1/4 cup canola or vegetable oil
  • 1 Tbsp lemon zest
  • 2 large eggs
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 2/3 cup milk
  • 2/3 cup sour cream
  • 3 Tbsp lemon juice

Glaze

  • 1 cup powdered sugar
  • 2 Tbsp fresh lemon juice
  1. Preheat oven to 400 degrees F. 

  2. In a mixing bowl whisk together flour, poppy seeds, baking powder, baking soda and salt for 30 seconds. 

  3. In a separate large mixing bowl, using an electric hand mixer set on medium-high speed, whip together sugar, butter, lemon zest and 1 Tbsp canola oil until pale and fluffy. Mix in remaining 3 Tbsp canola oil. Blend in eggs one at a time mixing until combined after each addition. Blend in egg yolk and vanilla extract.

  4.  In a 2 cup liquid measuring cup (used to measure milk), whisk together the milk, sour cream and 3 Tbsp lemon juice.

  5. Using a rubber spatula and working in three separate batches, beginning and ending with flour mixture, add 1/3 of the flour mixture alternating with half of the milk mixture and fold just until combined after each addition. 

  6. Divide batter among 12 - 15 muffin cups**, filling each to the top and bake in preheated oven 15 - 18 minutes until toothpick inserted into center comes out clean. 

  7. Cool in muffin tin several minutes then transfer to a wire rack to cool slightly. Drizzle tops with glaze while still warm. Store in an airtight container at room temperature.

For the glaze:

  1. In a bowl, whisk together powdered sugar and 2 Tbsp lemon juice until well blended.

  • **I did 12 because I like big muffin tops, but the muffins slightly touched each other on the sides so with that said if that would bother you just make more and don't fill them so heaping full.

I saw this recipe over on Fine Cooking and knew I had to try it. After reading through the reviews I made a few adaptations of my own to add flavor, increase muffin height, slightly change texture and opted to go for a doughnut glaze rather than a buttered cinnamon sugar coating.

Now the only problem I have is that I want to eat them for breakfast, brunch, lunch, snacktime, and dinner. I love being able to grab-and-go with my breakfasts when I'm already running late. It's a bonus if your muffins are also sweet enough to be dessert! Here are a handful of my favorite muffin recipes to add to your rotations:

Glazed Doughnut Muffins

Doughnuts in muffin form! These tastes just like cake doughnuts without being fried! Therefore they are easier, healthier, with less frying mess to clean up and they taste just as good as the real thing.

  • 3 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 3/4 tsp salt
  • 1 1/4 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 3/4 cup milk
  • 1/4 cup + 2 Tbsp buttermilk
  • 10 Tbsp butter (, softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Glaze

  • 1 1/2 cups powdered sugar
  • 3 Tbsp milk
  • 1/2 tsp vanilla extract
  1. Preheat oven to 400 degrees. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg, set aside. In a separate bowl, whisk together milk and buttermilk, set aside.
  2. In a large mixing bowl, using and electric hand mixer on medium speed, blend together butter and sugar until well combine, about 30 seconds. Mix in eggs one at a time mixing after each addiction. Blend in vanilla. Using a wooden spoon to mix, add flour mixture in three separate batches, alternating with two additions of the milk mixture, mixing just until combine after each addition (batter will be thick). Divide batter among 12 paper lined muffin cups (in a non-stick muffin tin) filling each one nearly full (about 1/3 cup batter per each). Bake in preheated oven 15 - 20 minutes until toothpick inserted into center of cupcake comes out clean. Transfer to a wire rack and allow to cool for about 10 minutes.
  3. During the last few minutes of cooling prepare glaze by whisking together powdered sugar, milk and vanilla in a small bowl. Dip each muffin in glaze, while twirling and rotating to evenly coat tops (and allowing it a few seconds to get a good layer of coating on), then lift and allow excess glaze to run off. Enjoy warm or allow cupcakes to rest at room temperature about 5- 10 minutes until glaze has set. Store in an airtight container.
