Hi Vinny, thank you for your kind words! Sour cream could be omitted the cheesecake will just be slightly denser. Another option is to substitute with plain Greek yogurt.

You could use sheets as well and just use the conversion listed on the box or online. If you wanted to omit that’s another option the bars just won’t be as stiff so you may want to freeze for a bit.
