An excellent summer treat! I forgot to add the extra sugar to the pomegranate reduction but it really didn’t need it (possibly due to the ripe garden fresh strawberries); amazing either way.

Raspberries should work as well but you may want to use a little more pomegranate juice to soak the lady fingers since they aren’t as juicy as strawberries.

This would probably reduce the juices soaking into the ladyfingers but do want some of the juices of the strawberries to help soften the lady fingers. So with this dessert I found timing just seemed to be best. But if you try that option please let us know how it goes!

Sorry I just updated and hopefully that is more specific. Use remaining half for layering then if you want more for garnish you’ll need extra (I used probably 1/2 lb on top sliced).
