I buy the gluten free oatmeal at Costco..and grind my own flour in a blender..It is easy to do. My niece has gluten issues..so can not use wheat flour…does anyone know how to make gluten free crepes or pancakes…maybe with gluten free type of flour? This recipe looks amazing..I like not using all white flour for crepes, pancakes or even muffins…thanks….I am always looking for a healthier choice…so like when I buy pasta…look for past make with other than flour..gluten free is easy to find.

Sorry about that! Here are for the pancakes, sorry there wasn’t an oat flour waffle linked though I don’t have a recipe for those.

1 1/4 cups (150g) oat flour, such as Bob’s Red Mill, scoop and level
1 1/4 cups (175g) all purpose flour, scoop and level
2 Tbsp (24g) sugar
2 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cups buttermilk
2/3 cup milk (anything but skim)
2 large eggs
3 Tbsp unsalted butter or coconut oil, melted
Instructions
Preheat an electric griddle over medium-high heat (about 350 to 375 degrees).
In a large mixing bowl whisk together oat flour, flour, sugar, baking powder, baking soda and salt until well blended. Make a well in center of mixture.
In a separate mixing bowl whisk together buttermilk, milk, eggs and butter.
Pour wet mixture into dry mixture then whisk just until combined (batter should be slightly lumpy).
Grease the griddle lightly with non-stick cooking spray. Pour about 1/3 cup batter onto griddle at a time (leaving a bit of space between rounds).
Cook until golden brown on bottom, about 2 minutes. Then flip to the opposite side and cook until golden brown on bottom.
Transfer to a wire rack and repeat process with remaining batter. Serve warm with desired topping.

I tried using all oat flour but the crepes didn’t hold together well without it and they’d tear. The few tbsp of flour adds gluten and structure.
