In this delicious fall dish tender chicken thighs are seasoned and browned in a hot cast iron skillet, then thin apple slices are sautéed in rich butter, and for more apple flavor they are drenched in a reduced pan sauce of fruity apple juice, bright spices and fresh herbs.

To finish it's all layered together for the ultimate cozy chicken dinner. The apple + chicken combination was a duo meant to be. Apples aren't just for snacking and desserts anymore.

Slow Cooker Spiral Sliced Ham

One of best ways to cook a (pre-cooked) ham in a crock pot is to cook it on low, covered with a simple glaze to upgrade it, just until it's heated through.

Here a savory smoked ham roast is generously coated with the perfect autumn inspired glaze. It includes apple juice concentrate, maple syrup, brown sugar and mustard. It lightly sweetens the ham and gives it a welcome extra layer of flavor.

At the end of cooking, you can choose the thickness preferred for the glaze. It will be very runny (more like a broth) so you can choose to thicken those juices from the crockpot with some cornstarch, or just keep it as is and spoon some over the sliced ham for added moisture and seasoning.

This is a recipe that is easy to modify to include other flavors you like or use up ingredients you may have on hand. Here are some ideas:

Possible Substitutes

  • Try it with pineapple juice concentrate in place of apple juice concentrate.
  • Switch out the spice. We went with ginger because I like it with this blend of ingredients but cloves or even cinnamon can be added.
  • You could even use fresh ginger here in place of dried (add a few teaspoons).
  • If you don't have real maple syrup try it with honey.
  • Dijon Mustard will work for spicy brown mustard. Add more mustard if you want more tangy flavor.

The Best Blueberry Syrup Recipe!

When I first really got into cooking, this was one of the first things I made. I would probably dub blueberries my favorite fruit (or top 3, I have a hard time picking absolute favorites), so that only makes sense.

Back then, I used to use water in place of the fruit juice. One day, I realized when you use water in recipes like this, it just waters things down. So why not replace that with something more flavorful that doesn't drown out that blueberry flavor?

When I want to splurge I use blueberry juice (for a more concentrated blueberry flavor) but it's pretty pricey for a small bottle. So grape juice or apple juice are great options too.

This homemade blueberry syrup is fresh, fruity, sweet, flavorful, exceptionally delicious and super easy to make. And it's one of the ultimate upgrades to your weekend and holiday breakfasts.

Plus there are endless ways to use it too, it's not just for pancakes. See the links below (near the recipe box), for ideas. Just remember the whipped cream for most of them!

Once you try this you'll realize that there's so much more to breakfast than maple syrup. Plus it's a hundred times better than the bottled blueberry syrup at the store.

Grilled Pork Chops Recipe

Everyone who tries these tender pork chops loves them, including picky eaters. Even the kids will polish these off. They’re amazingly flavorful and super easy to make! Plus they’re inexpensive since we use the thinner cuts.

It’s just a bit of whisking and being sure to allow time to soak up the pork chop marinade, then a brief cooking time on the grill (with these thinner cuts).

You could even make the grilled pork chop marinade the night before then add the chops the next day and let them soak while you’re at work.

Keep in mind this grilled pork chop marinade not only adds a a lightly sweet and tangy flavor, but it’s also salty so it will help keep the pork chops juicy and help tenderize them. Allow enough time to marinate (at least 2 hours), don’t skip it.

The Best Pumpkin Muffins!

If you are like me, when fall rolls around, you are adding pumpkin to just about every treat out there. And of course breakfast is no exception.

Pumpkin Pancakes and Pumpkin French Toast, and Pumpkin Scones are a fall necessity (lol yes necessities :), and I'm thinking we ought to add these Pumpkin Muffins to that list too.

Slow Cooker Pulled Pork Recipe

So what makes this my favorite pulled pork recipe?

  • A simple homemade dry rub (the seasoning mixture that's rubbed over the roast).
  • A slightly sweet, tangy, smokey broth mixture the roast soaks and cooks in for 8 hours.
  • I love that since it's cooked in the slow cooker it's super tender.
  • And I also like the shortcut of a store-bought bbq sauce here, making it doable for busy days (but feel free to use homemade if you got some on hand).

Then for me it's not complete without a side of coleslaw. The two just go hand in hand right?

My coleslaw of choice for pulled pork sandwiches is this simple recipe HERE, but I do like to add blue cheese crumbles when pairing it with pulled pork. It takes it over the top.
