An excellent homestyle dinner that tastes like it came straight from an orchard!

This chicken and apple skillet recipe is an ideal dinner to welcome the season.

In this delicious fall dish tender chicken thighs are seasoned and browned in a hot cast iron skillet, then thin apple slices are sautéed in rich butter, and for more apple flavor they are drenched in a reduced pan sauce of fruity apple juice, bright spices and fresh herbs.

To finish it's all layered together for the ultimate cozy chicken dinner. The apple + chicken combination was a duo meant to be. Apples aren't just for snacking and desserts anymore.

No-Bake Cheesecake https://www.cookingclassy.com/no-bake-cheesecake-bars-with-fresh-blueberry-sauce/ https://www.cookingclassy.com/no-bake-cheesecake-bars-with-fresh-blueberry-sauce/#comments Mon, 30 Jun 2025 19:36:52 +0000 https://www.cookingclassy.com/?p=20214 This chilled and refreshing No-Bake Cheesecake is utter dessert bliss! The texture is melt-in-your-mouth light and fluffy (similar to a mousse) and it has a sweet and tangy, rich and creamy vanilla kissed flavor. It's the perfect summer treat!

The Best No Bake Cheesecake!

My favorite no bake cheesecake recipe!

Why go the no bake route? Because you don't even have to turn on your oven during these hot summer months, and because this version is easier to make. No water bath required (like a traditional cheecake) and no tending to it, it just sets in the fridge.

I think you'll also love to switch things up for a change from the heavy and dense cheesecake to something with more of a light and airy with just enough body to it.

When you pair this sweet cream cheesecake with a fresh summery strawberry sauce or blueberry sauce you create the ultimate flavor pairing. You will truly be savoring each and every bite!

If you wanted to make it even easier you could use a can of blueberry, raspberry or cherry pie filling - but for the tastiest cheesecake bars possible I highly recommend making it fresh.

Tiramisu Cupcakes https://www.cookingclassy.com/tiramisu-cupcakes/ https://www.cookingclassy.com/tiramisu-cupcakes/#comments Wed, 26 Mar 2025 04:37:50 +0000 https://www.cookingclassy.com/?p=74236 Indulgent Tiramisu Cupcakes - made with a vanilla cake and espresso cake base, a rich and fluffy mascarpone frosting, and kissed atop with a dusting of deep cocoa. All the flavors we love in classic tiramisu transformed into a tempting cupcake!

Tiramisu Cupcakes

Making the Best Tiramisu Cupcakes

When I first started out testing these tiramisu cupcakes I tried going with several options that included steps mimicking those of traditional tiramisu. One of them was brushing the baked cupcakes with the liquid espresso but in doing so ended up with a soggy cupcake atop. So the simple fix was to simply include some espresso powder into half the cupcake batter and this left them with a better overall texture and deeply infused flavor baked in.

Since classic tiramisu includes a fair amount of egg yolks I opted for a cupcake batter that included more of them. So while those rich custardy flavors may not come from what is traditionally in the mascarpone filling you'll still find it within the cupcake. And the cupcake base simply replaces the lady fingers of tiramisu.

For the liquid of the cupcake these use both milk and buttermilk for some added flavor, but they only use half buttermilk so that it's not overpowering the delicate flavor of the mascarpone frosting. And for the cocoa finish I recommend adding plenty, because - chocolate! Who doesn't love that additional flavor?

Make these for your next celebration or weekend treat. They are such a heavenly cupcake!

Cheesy Garlic Bread https://www.cookingclassy.com/cheesy-garlic-bread/ https://www.cookingclassy.com/cheesy-garlic-bread/#comments Fri, 14 Mar 2025 11:41:14 +0000 https://www.cookingclassy.com/?p=20052 Cheesy Garlic Bread is made with soft french bread that's toasted to a perfectly crisp crust, a garlicky butter and olive oil spread, and it's layered atop with plenty of melty cheese and a sprinkling of herbs to polish it off. Simple and satisfying comfort food!

A Cozy Cheesy Garlic Bread Recipe

It doesn't get much better then a warm slice of cheesy garlic bread straight from the oven!

This recipe is so easy to make and doubles as a crowd pleasing appetizer or cozy side dish. Perfect for dipping in marinara sauce or serving alongside all your favorite pastas and soups.

It uses a combo of garlic and olive oil for both flavor and so the bread doesn't get bogged down being heavy and overly greasy with a what is traditionally a full stick of butter.

It's also a versatile recipe where you can use fresh or dried garlic, various breads and different types of cheese.

My personal favorite is just as listed, with fresh garlic and the combo of two cheeses. Simple Italian flavor in every bite!

Healthy Oat Crepes https://www.cookingclassy.com/healthy-oat-crepes/ https://www.cookingclassy.com/healthy-oat-crepes/#comments Mon, 20 Jan 2025 22:12:51 +0000 https://www.cookingclassy.com/?p=74770 Healthy Oat Crepes - a nutritious crepe made from oat flour, low fat milk, eggs, and a few other staple ingredients. They come together quickly and are a great way to start the day!

Looking for more ways to use oat flour? Also try my ever so delicious Oat Flour Pancakes.

These incredibly delicious and completely satisfying oat flour crepes have been a go-to recipe for our family for a few years, in fact I make them far more than traditional crepes.

Over the past few years I've realized I don't care much for the texture of morning oatmeal but I do however love the flavor of oatmeal. So a great solution is to turn oats into something that some of us may consider to have a much better texture such as pancakes, baked oats and these crepes.

Also, I think most of us are still cooking and baking with primarily white flour but I think it could be good for us to learn how to incorporate some healthier alternatives like oat flour into our diet.

I love this recipe for several reasons. You make the batter quickly in a blender, you don't have to wait 1 hour for the batter to rest like traditional crepes, and they are also a healthier alternative to traditional crepes made up of primarily of white flour.

This recipe took some testing and modifying over time. I originally started out trying to use only oat flour as the base but the crepes would always tear and didn't hold together well. I found that with just a few tablespoons of white flour (or even a gluten free blend) this did the trick to bind them. We also preferred them with cow's milk over a dairy free alternative for thickness and flavor.

We love to serve them with blueberry syrup (which I now usually make with real maple syrup as the sweetener) or raspberry syrup, but they are good enough plain on their own for a lower sugar alternative. You could even serve them as a savory option with eggs.

They keep well in the fridge for a few days so you can have a cooked breakfast already made. It's a wholesome breakfast you can feel great about serving and enjoying!

Chicken Gravy with a Carton of Broth

This is a simple yet completely delicious diner style gravy that doesn't require any roasted chicken drippings. So you can make mashed potatoes with gravy anytime the cravings strike without having to cook a whole chicken. In fact we most often serve it with a store-bought rotisserie chicken for a quick dinner.

You'll just need a good chicken base and packaged chicken stock along with a few other everyday ingredients.

And the best part is that you can have it ready in under 15 minutes! Plus you'll have the option to make it a creamy gravy with extra richness by adding just a little bit of cream.

It's a comforting, cozy, humble recipe with rich chicken flavor in each bite. There's just so much simple goodness to anticipate for dinner with this easy, must have chicken gravy recipe!

Lemon Cookies https://www.cookingclassy.com/lemon-cookies/ https://www.cookingclassy.com/lemon-cookies/#comments Thu, 12 Dec 2024 04:57:26 +0000 https://www.cookingclassy.com/?p=74383 Lemon Cookies - a melt in your mouth soft and cake-like, lemon infused cookie topped with a vibrantly lemony, sweet icing finish. A completely enjoyable treat meant to be served year round!

Homemade Lemon Cookies

This is a splendidly flavorful, inviting cookie that's bright and cheery during the blistery winter season, yet it's also a cookie fit for those warm summer months where you'll find them reminiscent of a refreshing summer lemonade.

They are fun to finish by decorating them how you like, you can drizzle icing in zigzag patterns over the top or take a spoonful and make a simple circle atop them. And no one said sprinkles are wrong either. However you finish them just don't leave the icing off, it's critical to the abundant lemony flavor of the cookie (as this portion of the cookie calls for the most lemon juice).

If you like a more noticeably yellow cookie simply add a little natural yellow food coloring to the dough to mimic the hues of those sunny lemon peels. It won't affect the taste but I think we tend to eat with our eyes first so a little yellow addition is a nice touch if you have it.

Oatmeal Cream Pies https://www.cookingclassy.com/oatmeal-cream-pies/ https://www.cookingclassy.com/oatmeal-cream-pies/#comments Sun, 08 Dec 2024 21:03:35 +0000 https://www.cookingclassy.com/?p=73276 Nostalgic Oatmeal Cream Pies - made up of two chewy, buttery oatmeal cookies sandwiching a sweet, rich and creamy filling. A childhood favorite that's a hundred times better than store bought!

Stack of oatmeal cream pies on a blue plate with a blue cloth do the side and a glass of milk.

An oatmeal cream pie (also spelled oatmeal "creme" pies) are an old fashioned cookie that's been around for decades and for good reason. We know of the iconic Little Debbie version (I ate far too many as a kid) but now I much prefer them without all the self stabilizing additives, artificial flavors and added color. And of course made with fresh butter instead of various oils is better.

These homemade oatmeal cream pies are a family favorite which makes sense because they are basically an upgraded oatmeal cookie with a frosting filling. They are easy to make and the flavors never disappoint!

With each cookie you get a welcome blend of chewy textures, crisp golden brown edges a soft center (as it should be), with oat-y flavors and highlights warm winter spices and hints of deep molasses. Then for the filling it's a buttery, creamy, frosting type filling, with its sweetness balanced by a small addition of cream cheese (I preferred this option to using cream with the butter and sugar when taste testing).

It's a memorable treat that will always satisfy those homemade cookie cravings. Enjoy them together with family or friends, and serve them with a chilled glass of milk, or warm apple cider during the colder months.

Spatchcock Chicken https://www.cookingclassy.com/spatchcock-chicken/ https://www.cookingclassy.com/spatchcock-chicken/#comments Sun, 17 Nov 2024 04:17:26 +0000 https://www.cookingclassy.com/?p=73840 The best way to prepare Spatchcock Chicken - a flattened chicken is rubbed with garlic herb butter and roasted on a sheet pan until gorgeously browned, surrounded by tender vegetables. It's a humble meal with impressively flavorful results!

Spatchcock chicken with potatoes and carrots shown on a large oval white serving platter with lemons.

What is Spatchcock Chicken?

Rustic spatchcock chicken is a whole chicken that has had the backbone removed and it's butterflied, then it is turned to the opposite side and breastbone is cracked to flatten the chicken. Then benefit of spatchcock chicken is that since it's splayed flat it cooks quicker and more evenly than a chicken left whole in its more natural rounded form.

Another great thing about this method is that no special ingredients are needed and no roasting pan is required. Just a simple ingredients and a standard baking sheet are used. You could even swap out the fresh herbs for dried if that's what you have on hand (just use 1/3 the amounts).

When roasting a whole chicken I've found I prefer to include vegetables alongside it for two reasons. An obvious reason is that you get a side dish cooked at the same time, and the other benefit is there's far less smoking in the oven. Win win.

This recipe yields tender juicy chicken with highlighting complementary flavors of lemon and herbs. And paired alongside are those golden brown, garlicky roasted vegetables to round it out. It's such a cozy meal in one, and if you want an extra upgrade pair it with simple 1-Hour Dinner Rolls.
