Easy Caramel Apples https://www.cookingclassy.com/easy-caramel-apples/ https://www.cookingclassy.com/easy-caramel-apples/#comments Mon, 30 Sep 2019 05:58:49 +0000 https://www.cookingclassy.com/?p=46697 Easy Caramel Apples are one of the ultimate fall treats! This is a foolproof recipe thats nearly impossible to mess up and it makes perfectly tempting and tasty caramel apples that are great for holidays, parties and gifting.

Caramel apples on a wooden cake stand. Apples are coated with various toppings.

Easiest Caramel Apples!

Caramel apples have been one of my all time favorite things to make since I first started cooking and baking. But that made from scratch recipe takes some time and it can be intimating so this year I decided to share the easiest caramel apple recipe ever!

It's so easy you really don't even need a recipe, it's more of just a quick how-to teaching you the method and ingredients to use. And the best part - you only need 3 ingredients!

Then from there if you want an upgrade you can add some of your favorite toppings, then just let the caramel set in the fridge briefly and you've got a perfectly tempting treat that no one will be able to resist!

This simple no fuss recipe takes all the stress out of caramel apples (there's not the extra worry of over cooking or under cooking homemade caramel, plus the extra mess and all the time it takes). This is just the fun hassle free method that everyone will want to help with.

This is how we celebrate the fall season, right?

These cookies taste like Twix but better, so in other words they're an absolute dream!

Thumbprint cookies filled with caramel and drizzled with chocolate.

Thumbprint Cookies with the Classic Twix Candy Bar Flavors!

It's getting to be that time of year, where there seems to be an endless supply of cookies coming from every direction - or maybe that's just me because I make ridiculous amounts of cookies during the holidays! But no one is complaining around here.

I've made a chocolate version of these cookies but I wanted to go with a traditional vanilla version - and they will remind you so much of a Twix candy bar!

What's not to love here? Melt in your mouth shortbread style cookie, chewy caramel center with a hint of sea salt, and a finishing touch of luscious chocolate, they are simply dreamy! Be sure to try them at least once during the holidays, you won't regret it!

I mean I normally have a really hard time picking favorites but these cookies are definitely one of the best I've made this whole year and that's saying something because I've made a lot of cookies I've really, really loved.

Salted Caramel Coconut Thumbprint Cookies

There's just something about these though. The coconut, the salted caramel, the melt-in-your-mouth buttery goodness. These cookies speak to me. In other words someone please hide them!

I just had to quickly take most of them to neighbors because I knew I couldn't resist these ones (then I later heard from my neighbor that she hid them away for herself lol. She had the same problem as me).

Salted Caramel Coconut Thumbprint Cookies | Cooking Classy

There are a few extra steps with these since they need to be rolled, indented and filled but those couple of extra steps make them an over-the-top, worthy of any holiday, kind of cookie. To keep them things from getting too messy, I like to use one hand for rolling in the egg, then the other for rolling in the coconut - kind of like when you bread chicken.

Salted Caramel Coconut Thumbprint Cookies | Cooking Classy

Another thing that helps is to press the coconut onto the cookie to help it adhere, if you just roll it through the coconut it doesn't stick all that well. And I chose to just chill these cookies directly on the baking sheets, but you can definitely chill them on plates or in containers if you don't have room for two sheet pans in your fridge.

Then just transfer them to the baking pans after they've chilled and bake as directed.

Salted Caramel Coconut Thumbprint Cookies | Cooking Classy

Obviously a highlight of the cookies is the course sea salt. I've got salt on my mind lately since last week I had the opportunity to attend Morton Salt's Next Door Chef event in New Orleans along with several other guests. It was a fun dinner experience where they converted someones home into an actual pop-up restaurant for a day.

Below is a few sneak pictures of the event. I'll be sharing more in the coming months so be sure to keep a look out for more. I think I might even have to share that Budino recipe!

Morton Salt Next Door Chef New Orleans

Of course,  my favorite part of the meal was the Coconut Caramel Budino with Grilled Mangos and Morton Kosher Salt which was served for dessert. It was dreamy so I knew I needed to use that combination again to make something for the holidays, and that's how these cookies came about.

Morton Salt Next Door Chef New Orleans

Acclaimed chef Nina Compton coached a home cook and then this cook prepared an incredible meal for us in which different types of Morton salt were used. At the event we tried a number of inspiring dishes where we could taste how different types of salt transformed each dish, from appetizer and drinks, to side dish, to the main dish and then onto dessert.

Salted Caramel Coconut Thumbprint Cookies

Tender buttery thumbprint cookies are coated with sweet shredded coconut and filled with salty decadent caramel. Such a delicious cookie recipe!

Cookies

  • 1 3/4 cup (150g) sweetened shredded coconut
  • 1 large egg
  • 1 cup (226g) unsalted butter, (cold and diced into small cubes)
  • 1/2 cup (108g) granulated sugar
  • 1/4 tsp Morton Fine Sea Salt or table salt
  • 2 tsp real coconut extract
  • 2 cups (283g) all-purpose flour

Filling

  • 28 (226g) soft caramels, (such as Kraft)
  • 3 1/2 Tbsp heavy cream
  • Morton Coarse Sea Salt, (for topping)
  1. For the cookies: Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper or silicone baking mats.

  2. Add coconut to a small mixing bowl. Add egg to a separate small mixing bowl and whisk well until blended. Set aside.
  3. Add butter and sugar to the bowl of an electric stand mixer fitted with the paddle attachment. Sprinkle fine salt evenly over butter and sugar then mix on medium-low speed until well combined.

  4. Mix in coconut extract. With mixer on low speed slowly add in flour and mix just until combined.

  5. Scoop dough out in 1 even tablespoon at a time and shape into balls. Roll each dough ball in egg mixture then in coconut mixture (press coconut onto cookies to help it stick better).
  6. Transfer cookies to prepared baking sheets spacing at least 1-1/2 inches apart. Make indentation in each cookie with thumb or forefinger. Transfer baking sheet to freezer and chill for 10 minutes, or refrigerate 30 minutes.
  7. Transfer 1 baking sheet to oven and bake for 10 minutes. Remove from oven and re-indent cookies using the back of a rounded 1/2 teaspoon*.

  8. Return cookies to oven and continue to bake 6 - 9 minutes longer until the coconut is golden brown on edges and cookies have baked through. Cool on pan for several minutes then transfer to a wire rack to cool completely.
  9. For the caramel filling: Add caramel to a medium microwave safe bowl. Pour in cream. Heat mixture in microwave in 30 second intervals, stirring well between intervals until melted and smooth.
  10. Spoon caramel into indentations in cookies. Sprinkle caramel lightly with sea salt before it starts to set. Store cookies in an airtight container at room temperature.

  •  At this point, if the coconut is browning too much your oven probably cooks too hot, but you can just tent the cookies with foil and proceed as directed.

If you're going to add caramel you may as well salt it, right? I still haven't gotten my brother and sister to like salted caramel but one of these days I know it's going to happen. They must have strange taste buds.

I've been posting cookies like crazy, but tis the season! Besides you can never have too many cookie recipes. And this one, you just can't do without.

No Bake Pumpkin Cheesecakes Recipe

Now for this post, I just have to say it. I really don't like these photos. But, these cheesecakes were so good that I just had to share anyway. I took pictures twice, yesterday then again today and I'm just not getting the photos to turn out how I'd like (for example, that caramel sauce in the second and third pic - yeah it looks artificial but it's real). These dark rainy days are just that, dark out. Frustrating but on a better note, since I made these two days in a row that means I get to eat them two days in a row! I'll never complain about eating cheesecake. Especially when I don't have to bake cheesecake!

I post cheesecake recipes and other various cheesecake-inspired desserts quite a bit. Cheesecake and ice cream and anything chocolate are all probably my favorite desserts, so I make them way too much I'm sure. Last week I posted Pumpkin Cheesecake Breakfast Smoothies (that are actually healthy yet so creamy and delicious), Pumpkin Cheesecake Cupcakes, and now these, just to finish off that pumpkin cheesecake list (although some form of pumpkin cheesecake cookie or blondie is sounding seriously tasty. I'll resist though and wait until next year for that :).

This would make a delicious pumpkin pie alternative for Thanksgiving, since it gives you that pumpkin pie filling taste with individual servings and a lighter finish. The combination of pumpkin spice with the cream cheese mixture to create a fluffy and creamy pumpkin cheesecake filling is incredible.

Talk about decadent holiday cookie—everyone will be asking you about these.

Caramel Stuffed Chocolate Crinkle Cookies

Hello Christmas Cookie Season!! I'm obsessed with cookies so this gives me one more reason to love the holidays. I created this recipe to be a no refrigeration necessary recipe. A lot of chocolate crinkle cookie recipes require that the dough be refrigerated 2 - 4 hours before baking, I don't have time for that. Mostly I just don't have the patience for that especially when I know what awaits me.

Salted Caramel Chocolate Crinkle Cookies

I love the idea of of biting into what you think is a standard chocolate crinkle cookie, with chewy chocolate dough and sweet dusted powered sugar, only to delightfully discover a melty bomb of salted caramel hidden in the middle! It's a huge hit for a Christmas cookie exchange because it's different from the usual suspects, and always a pleasant surprise.

If you prefer you can omit the coarse sea salt from the recipe if you are not a fan of salted caramel. I personally am unequivocally in love with the addition. These taste like caramel brownies in cookie form. They are intensely delicious! If you are baking them for someone else you'll have a hard time wanting to gift them after all. If you wanted to go all out with these cookies you could even toss in some semi-sweet chocolate chips and toasted nuts.  Enjoy!

Favorite Christmas Cookie Recipes

Do you need to refresh your Christmas Cookie recipe stash? Traditions are one of the best parts of the holiday season, but if you've been making the same Christmas cookies for a decade... it's time for some new recipes. Here are a bunch of my favorite Christmas cookies!

Salted Caramel Stuffed Chocolate Crinkle Cookies

Chocolate Crinkle Cookies stuffed with a layer of decadent chewy caramel and finished with a blizzard of powdered sugar! Talk about decadent holiday cookie!

  • 1 1/2 cups all-purpose flour
  • 1/2 cup + 2 Tbsp cocoa powder
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 10 tbsp salted butter (, softened)
  • 1 cup granulated sugar
  • 1/2 cup packed light-brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 2 dozen caramels ((such as Kraft) or Rolos, unwrapped)
  • coarse sea salt
  • 3/4 cup powdered sugar
  1. Preheat oven to 350 degrees. In a mixing bowl whisk together flour, cocoa powder, baking powder and salt, set aside. In the bowl of an electric stand mixer fit with a paddle attachment, whip together butter, granulated sugar and light-brown sugar on medium-high speed until pale and fluffy, about 4 minutes. Add in eggs one at a time, stirring after each addition until combine. Mix in vanilla. With mixer set on low speed, slowly add in dry ingredients and mix just until combine.
  2. Scoop dough out 2 tbsp at a time and roll into a ball. Press one caramel into the center, sprinkle top of caramel with a small pinch of coarse sea salt then fold cookie dough around caramel and salt (make sure the caramel is fully covered with dough around all sides). Shape into a ball once more then roll in powdered sugar*. Align cookies on Silpat lined or buttered cookie sheets and bake in preheated oven 11 - 13 minutes. Allow to cool on cookie sheet for 5 minutes before transferring to a wire rack to cool (note that the caramel will set after it cools, I liked these cookies best warm for soft gooey caramel). Store in an airtight container.
  3. *I gave my cookies a generous coating of the powdered sugar before baking, but when they baked a lot of the powdered sugar baked and dissolved into the cookie anyway. So I found you can coat the top again with powdered sugar after baking (which is not pictured) to get a prettier cookie. If doing so roll in powdered sugar once before baking (doesn't need to be generously), then bake them and allow to cool and dip the tops of cookies in a fresh batch of powdered sugar (so there is no cross contamination) and shake off some of the excess. If you want to do it that way I would recommend using 1/2 cup powdered sugar for rolling before baking and reserve 1/4 cup in a separate bowl to dip and coat the tops after baking.

What is the best part of the holidays? Family, friends and FOOD of course! I love that I get to indulge in the deliciousness of the holidays a little early since I like to post the holiday recipes before the holidays arrive.

This time around I wanted to create a dessert recipe that would be an exciting twist on a classic. Of course, we'll always keep a classic pumpkin pie on the table for Thanksgiving and Christmas. But sometimes you just want something different. Sometimes you just want cheesecake!

I just have to say it, this cheesecake is dee-vine! Just imagine your favorite pumpkin pie meets a fluffy, rich cheesecake and then it's generously covered in salted caramel sauce and finished with sweetened whipped cream.

Yeah, almost to good to be true.

I don't know that I'm going to care much about pumpkin pie during the holidays anymore, this has definitely stolen its limelight for me. Pumpkin pie just can't compare to the salted caramel glory of this magnificent cheesecake!

Start the holidays out right, with a gourmet and autumn inspired cheesecake! Enjoy!

To prepare filling

  1. In a large mixing bowl, using an electric hand mixer set on low speed, blend together cream cheese, light-brown sugar and granulated sugar until smooth, about - 30 seconds.
  2. Mix in flour, cinnamon, nutmeg and ginger. Add in pumpkin and vanilla and mix on low speed just until combined. Add in whole eggs one at a time, mixing after each addition just until combine, then add in egg yolks and mix just until combine.

Copycat Samoa Girl Scout Cookies https://www.cookingclassy.com/copycat-samoa-girl-scout-cookies/ https://www.cookingclassy.com/copycat-samoa-girl-scout-cookies/#comments Fri, 28 Sep 2012 01:17:00 +0000 https://www.cookingclassy.com/2012/09/copycat-samoa-girl-scout-cookies/ Copycat Samoa Girl Scout Cookies are the greatest combination of toasted coconut, smooth chocolate, sweet caramel, and crunchy shortbread in the iconic ring shape. The only bad thing about Girl Scout Cookies is that you can't buy them anytime you want—so I found a way to satisfy that craving with this copycat Samoa Girl Scout Cookies recipe.

Who doesn't love a Girl Scout Samoa Cookie? They are by far my favorite Girl Scout Cookie. This past spring I purchased eight cartons of the Dreyers Girl Scout Samoa Cookie Limited Edition Ice Cream and hoarded them away in my freezer. I thought they'd last much longer then they did.

I can only wish I could buy the Samoas year round, but since I can't I've had to improvise. That is why I've come up with my own version of the Samoa Girl Scout Cookies. These things are amazing! Tender shortbread, sweet chewy caramel, perfectly toasted coconut and a nice chocolate coating to finish things off. YUM!

Copycat Samoa Girl Scout Cookies
I won't lie to you, these cookies are quite a bit of work...but, they are well worth the effort. These cookies don't use real butter or fancy caramel, it's the cheap stuff just like what I'm quite certain they put in the real thing (it helps to read the ingredients list on the package when you are making up a copycat recipe =) . It's not often I use shortening and until now I've never used a cheap chocolate coating for anything, but for these I think it's a must.

Homemade Samoa Girl Scout Cookies

I know some of you are going to ask, what is desiccated coconut and where do I get it? Desiccated coconut is shredded coconut that has been dried to remove as much moisture as possible. I used toasted desiccated coconut (I used this one here) in these because it looks exactly like whats in the Girl Scout ones. You can purchase it at a specialty kitchen needs stores or online.
I hope you love these cookies as much as I do! Enjoy!

Copycat Samoa Girl Scout Cookies

Copycat Samoa Girl Scout Cookies

Delicious buttery shortbread-like cookie topped with caramel, coconut and chocolate.

  • 3/4 cup + 2 Tbsp all-purpose flour
  • 1 tsp cornstarch
  • 1/4 tsp salt
  • 1/8 tsp baking soda
  • 1/2 cup all vegetable shortening
  • 1/4 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 1 1/2 Tbsp milk (, as needed)
  • 3/4 cups toasted desiccated coconut (, divided)
  • 22 caramels (, unwrapped (such as Kraft))
  • 2 1/2 Tbsp milk
  • 1 pinch salt
  • 1 recipe Chocolate Coating (, recipe follows (or you could use melted chocolate chips, I'd recommend half milk chocolate and half semi-sweet))

Chocolate Coating

  • 5 Tbsp shortening
  • 3 1/2 Tbsp cocoa powder
  • 1/2 cup powdered sugar
  1. Preheat oven to 350 degrees. In a mixing bowl, whisk together flour, cornstarch, salt and baking soda, set aside. In the bowl of an electric stand mixer, fitted with paddle attachment, blend together shortening, sugar and vanilla until combine (only about 30 seconds). Stir in dry ingredients. Add milk 1/2 Tbsp at a time as needed, until dough comes together. Roll dough out between two large sheets of parchment paper, to about 1/6" thickness. Using a 2" cookie cutter, cut dough into circles then using the end of a small pastry tip cut a hole in the center of each circle. Using a large sharp knife or pastry scraper (floured as needed), slide knife under entire cookie and lift the cookie off of the parchment paper and transfer to a Silpat lined cookie sheet. Re-roll dough as needed until you've used it all. Bake cookies in preheated oven for about 10 minutes until lightly golden. Allow to cool 5 minutes on cookie sheet before transferring to a wire rack to cool.
  2. Pour 1/2 cup desiccated coconut into a shallow bowl and set aside. Heat caramels, 2 1/2 Tbsp milk and a pinch of salt in a medium saucepan over medium heat, stirring constantly until melted and smooth. Reduce temperature to warm, add remaining 1/4 cup desiccated coconut to melted caramel and mix to combine. Leave caramel mixture over warm heat (as you coat cookies), stirring caramel occasionally. Working one cookie at a time, spread about 1 tsp caramel mixture around the top of cookie, then immediately dip caramel coated side of cookie into the bowl of desiccated coconut then set on parchment paper (or cooled cookie sheets) and allow caramel to set.
  3. Prepare chocolate coating according to directions listed then dip bottoms of cookies (none caramel coated side) in coating and run the bottom of the cookie along the inside edge of the bowl scrapping excess coating off (you just need a thin coating). Place dipped cookie upside down (so the chocolate coating should be facing upward). Repeat process with remaining cookies. Once coating on cookies has set, flip cookies to opposite side. Pour remaining chocolate coating (rewarm as needed first) into a Ziploc bag, seal bag and cut a very small tip off one edge of the bag then drizzle chocolate coating over cookies. Allow drizzled coating to set then store cookies in an airtight container.

Chocolate Coating

  1. In a microwave safe bowl, using a fork, blend together shortening and cocoa powder. Microwave mixture in 15 second intervals on HIGH power, stirring after each interval until completely melted. Add powdered sugar and mix until well combine and smooth. Reheat as needed on 50% power for about 15 seconds, then stir.

Homemade Caramel Apples – A Favorite Fall Treat https://www.cookingclassy.com/ultimate-caramel-apples-a-favorite-fall-treat/ https://www.cookingclassy.com/ultimate-caramel-apples-a-favorite-fall-treat/#comments Fri, 21 Sep 2012 18:08:00 +0000 https://www.cookingclassy.com/2012/09/ultimate-caramel-apples-a-favorite-fall-treat/ Homemade Caramel Apples are the best caramel apples! Made with a buttery, homemade caramel and then coated in a rich layer of chocolate or white chocolate and finished with your favorite toppings—these are a standard fall treat tradition.

Caramel Apples

I know I've already posted these caramel apples, but since I've been doing this food blog nearly a year I've learned a few tricks about food photography so I just wanted to share some new photos. Plus these are one of my favorite treats so I figured I may as well share them again for those of you that weren't following along last year to see them.

Homemade Caramel Apples

I've made these caramel apples countless times and everyone always loves them. I mean who doesn't love a delicious, chewy, generously coated in caramel, chocolate covered, sprinkled with tasty toppings caramel apple? To take one bite is simply pure bliss. The chewy bite, the perfect texture and buttery stretch of the homemade caramel, ahhh. Words or pictures don't do them justice.

Caramel Apples

I like to make them pretty and fancy, but if you want you can just dip and coat the entire apple with caramel. I just love having that vibrant beautiful green show through though. The natural color of fruit is just gorgeous, so why hide it? This recipe is a bit time consuming but I'm telling you it is so worth it! Once you have these you wont want to let a Fall season go by without them.

If you don't want to take the time to coat them with the chocolate and toppings then these really are amazing with caramel alone. The homemade caramel makes all the difference in a great caramel apple. It turns an ordinary caramel apple into a fancy, gourmet caramel apple. These make a great gift to give friends or loved ones. I just took them to friends and told them, Happy Fall! Who needs a holiday to celebrate =). I love Fall.

Also note that a candy thermometer is a MUST with this recipe. The caramel needs to be heated to exactly 239 degrees or it will either be too runny or too hard. If you don't have one it's worth the investment. You can pick one up at a local supermarket for about $10 - $15. I use mine all the time. Enjoy!

  • 12 oz . milk chocolate or white chocolate chips*
  • Assorted toppings for coating (, see list below)
  • 10 craft sticks or twigs

Homemade Caramel

  • 1 cup butter
  • 2 cups granulated sugar
  • 1 1/2 cups corn syrup
  • 2 cups heavy cream
  • 1 tsp vanilla extract
  1. Insert 1 craft stick vertically through the center of each apple, set apples aside. Butter two 13x9 pans, and make enough space in the refrigerator for them to sit evenly.
  2. Prepare Homemade Caramel as directed and allow to cool about 5 - 10 minutes (until it's not incredibly runny) then immediately dip apples in caramel (note: from my experience this caramel doesn't reheat well, so with that said you basically get one chance to dip so don't let the caramel cool too long and work quickly when dipping, you may even want to have a friend help to be able work quicker).
  3. If you want to make yours to look like the ones pictured (with the apple showing through the center on top) then tilt apple when dipping and don't fully immerse apple in the caramel, then carefully swirl the apple to coat all edges. Lift apple and let some of the excess caramel drip off and run the bottom of the apple along the inside edge of the pan.
  4. Tilt apple upside down and swirl just until the caramel is about to run off, then immediately turn upright and transfer to buttered baking dish in refrigerator. Repeat process with remaining apples, be sure to space them a bit apart on baking dish so they don't stick together. Allow caramel coated apples to set in refrigerator.
  5. Heat chocolate chips in a microwave safe bowl on 50% power, in 30 second intervals stirring after each interval until melted and smooth. Using an icing spatula or butter knife, coat edges with melted chocolate and immediately sprinkle with desired toppings. Return to refrigerator to allow chocolate to set. Serve at room temperature and store in the refrigerator in airtight containers or Ziploc bags.
  6. *Blocks of chocolate can also be used, just chop into small, uniform pieces to ensure even melting. Also, I highly recommend using quality chocolate (chips or blocks) such as Guittard, Ghirardelli or Godiva (any of the G's =). The lower quality chips don't melt as well and tend leave that dull residue when they set.

Homemade Caramel

  1. In a large enameled cast iron pot, combine butter, sugar, corn syrup and 1 cup heavy cream. Heat mixture to a boil just over medium heat (the 6 of an electric stove), stirring frequently. Once mixture has reached a boil, stir in remaining one cup heavy cream. Then without stirring,(again just slightly over medium heat) bring mixture to exactly 239 degrees then immediately remove from heat (this should take around 20 - 25 minutes). Carefully pour caramel into a medium nonstick saucepan and stir in vanilla (transferring caramel to another pan helps it cool faster and will leave behind some of the little brown specs at the bottom of the cast iron pan. You don't have to transfer it but if you don't just allow the caramel to cool a little longer than the 10 minutes). Allow to cool 10 minutes before dipping apples.
