You have the option to sweeten it, then serve it warm and cozy or chilled and iced. I say this really just depends on the season. I think you'll love it warm during fall and winter months and chilled during spring and summer months.

A Quick and Easy Granola Recipe!

Sometimes I just don't have the patience for how long a lengthy-cook time granola traditionally takes in the oven. And so I set out to test granola over the stovetop to see if I could get a similar result in a fraction of the time.

And believe it or not, it works! It's sweet, nutty, crisp, toasty, made with nutritious ingredients, and deliciously fresh. In other words, it's much better than what you buy in a box or bag.

Plus, it makes a smaller batch because you may not always need a big batch of granola.

There are endless ways to use it, or you can simply snack on it plain because it's completely irresistible!

Ways to Use This Homemade Granola

  • Add to yogurt or finish it over berry parfaits.
  • Toss into a berry salad instead of croutons (love this one!).
  • Bake some diced, lightly sweetened fruit and use this for a finish.
  • Add to grilled fruit, such as peaches, with mascarpone.
  • Sprinkle over ice cream, a banana split, or pudding.
  • Dip fruit into a fruit dip or caramel dip, then dunk in the granola.

I love that these flourless cookies are a great on the go breakfast for mornings like those when you volunteered to help at the kids school.

A Fun and Tasty Egg Recipe

For the past few weeks I've been eating egg wraps a few days a week for lunch so I figured it was time I shared the recipe with you, or idea anyway.

So the wrap itself is made of egg, so this is very similar to what an omelet tastes like, but like a thin wrapped up omelet instead - and way more fun. Because wraps are fun, you can hold them and eat them using your hands and take them on the go.

Then it's layered with tangy melted swiss cheese, thinly sliced deli turkey (I used Boar's Head Mesquite, it's one of my favs, but for a cheaper alternative I also like Oscar Mayer Naturals), then it's topped with fresh tomato slices, rich creamy avocados and plenty of nutritious spinach.

So in other words, bring on the goodness!

Honey Almond Granola

This flavorful granola is made with rolled oats, flax seed, almond and it's sweetened and flavored with honey, almond extract and vanilla extract.

This recipe is a breeze to make yet the end result is even better than what you find in a bag at the store! It's hearty, crunchy, sweet and just totally satisfying.

What Ingredients go into This Recipe?

Here's the simple list of ingredients to make it:

  • Rolled oats
  • Almonds
  • Ground flax
  • Coconut oil (or butter)
  • Honey
  • Brown sugar
  • Vanilla extract and almond extract

How do You Make Honey Almond Granola?

Here's the straightforward steps to making this DIY granola:

  • Preheat oven and line baking sheet.
  • In a bowl toss oats, almonds, flax, oil, sweeteners, extracts, egg white and salt.
  • Spread onto prepared baking sheet and bake, tossing halfway through.
  • Let cool and break into clumps.

Tips for This Recipe

  • Try it with other nuts or dried fruit.
  • Don't use quick oats. They're already partially cooked and the texture doesn't work well here.
  • If you'd like you can cut back on the sweeteners a little but it might not crisp or clump together as well, but at least it would be a little healthier.

What Can I Add This Granola To?

  • Add it to salads. I love a spinach salad with berries, raspberry vinaigrette, feta and granola.
  • Sprinkle it over pudding or ice cream for some nice contrast.

  • Make it into a crust for a breakfast fruit tart.
  • Sprinkle it over a warm fruit filling (like apple pie filling) for a simple crisp.

Honey Almond Granola

Honey Almond Granola will quickly become a favorite DIY recipe! This is so easy to make,  it's deliciously sweet, perfectly crunchy and you'll love those bits of nuts! It's perfect paired with milk or serve with yogurt and fruit, it also makes a great on the go snack.

  • 3 cups (270g) rolled oats (don't use quick oats)
  • 1 cup (150g) almonds, chopped
  • 1/3 cup (36g) ground flax seeds
  • 1/4 cup (58g) coconut oil, melted and cooled slightly
  • 1/3 cup (110g) honey
  • 1/3 cup (77g) packed light-brown sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 large egg white
  • 1/4 tsp fine sea salt
  1. Preheat oven to 325 degrees (if your oven cooks hot be sure to decrease the temperature as needed or the granola will burn. I recommend using an oven thermometer when baking. I always have to reduce my oven by about 15 degrees to get the right temp). Line a rimmed 18 by 13-inch baking sheet with parchment paper, set aside.
  2. In large mixing bowl lightly toss together oats, almonds and ground flax seeds. In a medium mixing bowl whisk together coconut oil, honey, brown sugar, vanilla extract, almond extract, egg white and salt until very well blended. Pour honey mixture over oat mixture and toss well until evenly coated. Pour oat mixture onto prepared baking sheet and spread into an even layer.
  3. Bake in preheated oven 13 minutes, remove from oven and flip granola with a spatula and spread back into an even layer. Continue to bake until granola is just lightly golden brown, about 12 - 17 minutes longer (it won't be crisp until it cools, to check for doneness you can place a small piece in the freezer for about a minute or two and see if it becomes crisp. If it doesn't pop the granola back into the oven for a few minutes. After the granola has cooled for about a minute I like to press down on the granola with my hands while it's still warm, I think it helps it clump together more). Let it cool completely, break into clumps then store in an airtight container.

Baked Oatmeal with Sweet Banana and Nutty Pecan Flavor!

We could all use a few more healthy recipes right? Especially for breakfast, our most important meal of the day! I always appreciate creative ways to use up a ripe banana beyond just banana bread, too.

There are so many things I love about this Banana Pecan Baked Oatmeal, like for instance the fact that it almost tastes like dessert for breakfast while still being healthy.

Another thing I really love about it are the heart-healthy Fishers Pecans in this, which not only offer nutritional value, but they give it a wonderful crunch. This oatmeal needs the Fishers Pecans!

Here they offer the perfect flavor and contrast to the soft, almost bread-pudding-like texture of the oatmeal (plus don’t bananas and pecans just go together?).

I think there are many people who don’t like the texture of a bowl of oatmeal, to some it may seem like breakfast “mush” but to those I say—try this oven-baked version! It has more structure, as you can see it can actually hold a shape. Rolled oats help it feel thick and filling, but less gooey in the pan.

I baked this thinking I was going to be the only one that would eat it but my whole family loved it, kids included! You’ll never see my husband sitting down to a bowl of oatmeal, but he gladly polished off a generous serving of this. Toasted pecans will call to nut lovers everywhere!

Energy Cookies - A Healthier Cookie!

We definitely aren't morning people at my house so I'm always trying to find healthy on the go breakfasts. And then there's those days where it just seems like I don't have time to get to lunch by a decent hour so a healthy snack like these are just what I need.

I know there would be the nay sayers that say these aren't healthy because they still have the chocolate chips and brown sugar, but if it doesn't have a little bit of sweet I'm sure I just wouldn't be able to eat it so I need a happy medium, and at least I came way down to 1/4 cup of brown sugar.

That's big for me because I'm used to putting in about a cup for my cookies. You could cut the brown sugar down if you'd like but this was the perfect ratio for me, plus if I went any lower I'm sure there's no way I could get my kids to love these.
