What are Johnny Cakes?

Johnny cakes (hoecakes) are soft and tender cornmeal flatbread or hot cake made from a quick batter that's cooked in a skillet on the stovetop.

They are made with finely ground cornmeal and often flour, then mixed with a liquid such as buttermilk, milk or water. A fat such as oil, bacon drippings, lard or butter are also included to keep them rich and moist. And eggs are included to bind ingredients.

They were an early American, inexpensive staple food and they are popular in regions from Canada, the Unites States and down to Jamaica and other islands coming in many different variations.

To give you comparisons to foods you may likely be familiar with, they are like a cross between pancakes and cornbread. In other words they are the perfect homestyle comfort food and are absolutely delicious!

Also known as creamed corn casserole or spoon bread casserole. It's a comforting, corn side dish that is very moist, perfectly sweet, slightly creamy, deliciously buttery and oh so tasty when served warm from the oven.

It's incredibly easy to make whether you opt to go with the corn muffin mix or make it from scratch. Both variations are perfectly delicious - it must be all the butter!

The nice thing about making it from scratch though is that is the option to control amount of sweetener used, you can adjust according to personal preference. Whereas the box mix version may be a little sweet to some.

This is the perfect thing to serve at your Thanksgiving meal, or pair it with a pot roast dinner this weekend!

What is Chess Pie?

Chess pie is a popular dessert in the American South that originated from England. It is a custard style pie with a crisp browned topping.

It is generally made up of a traditional pie crust while the filling consists of eggs, milk or buttermilk, flour, sugar and often vinegar or lemon.

You'll love this pie not only for it's irresistible sweet flavor but also because it's one of the easier pies to make.

No peeling and chopping loads of fruit or making a tricky curd or meringue. Rather here you just blend some standard baking ingredients and pour into a pie crust and bake.

Why is it called chess pie?

There are actually several beliefs as to where the name originally came from. You can read about three of them here.

What makes this the best chess pie?

I like this version best because of the browned butter. This secret ingredient is the ultimate upgrade to chess pie.

Tried and True Best Cornbread Recipe

This dreamy cornbread is an old tried and true recipe. I shared this way back in 2012 and decided it was time to revisit a favorite in case you've missed it.

It's nothing like that dry mealy, lifeless cornbread we often get. It's fluffy, moist, tender, flavorful and deliciously sweetened with both honey and sugar (with an adjustable option depending on how sweet you like it).

Of course it's the perfect accompaniment to soups, chilis, roasts, bbq's and so forth but it is so good that it will even pass as a tempting dessert (just go for the sweeter option).

I can't count how many times I've made this easy cornbread recipe and on holidays people are always fighting for the last piece. Try it and you'll see why!

Oh and did I mention it's unbelievable easy to make? No electric mixer required, just a few bowls, a whisk and some seriously easy prep. Can't beat that!

Pumpkin Cornbread

This cornbread is so soft and moist, I hate dry cornbread so of course I made this to be completely the opposite. I love that this has plenty of pumpkin flavor - you don't have to guess what flavor of cornbread it is, and the whipped cinnamon honey butter just takes it over the top!

This would most definitely be worthy of making it to your holiday menu, but be sure to try it before the holidays because you just can't wait that long to try this Pumpkin Cornbread!

I absolutely loved it, as did everyone else who tried it both young and old alike - from a 3 year old up to an 81 year old and everyone in between.
