Mini quiche are perfect for a weekend breakfast, a holiday brunch or a make ahead on the go breakfast. They are easy to make and brimming with enjoyable flavor thanks to the abundance of savory fillings.

While eggs may be pricey right now this breakfast recipe is a good way to stretch them and get more servings out of them (since you'll mix in cream and fillings rather than using whole eggs alone).

For me I think these will be a new Easter tradition, there's just something about quiche that's so fitting for the holiday.

You can adjust the fillings to suite your own personal taste and it's a good way to use up what you have on hand in the fridge (see ideas below).

Wondering what to pair with mini quiche? I recommend yogurt parfaits, breakfast potatoes or smashed potatoes, and a vibrant fruit salad.

These Thai Chicken Lettuce Wraps are everything you'd want them be and then some! They have well rounded flavor, you'll find them easy to make, and they have the perfect crunch factor thanks to the tender crisp veggies, lettuce, and peanuts.

The chicken (or turkey) keeps them nice and filling but if you want an even heartier meal you can serve these with a side of rice.

You can adjust the sauces here to suite your taste. If you like the flavor of fish sauce you can add more. If you love heat load them up with the Sambal Oelek or Sriracha. And for more peanut flavor be sure to try them finished with a creamy peanut sauce (it so delicious and worth the extra bit of effort).

I know it's a fairly lengthy list of ingredients here but I don't recommend leaving any out. Everything comes together beautifully to create a truly tasty, veggie and chicken-filled lettuce wrap that you'll want to make on repeat.

Shortcut Korean Beef

An Easy Tofu Scramble Recipe

I never used to be a fan of tofu but that was likely because it was under-seasoned or just not cooked right. Tofu tastes incredibly plain and mild on it's own as is but when seasoned right and sautéed it can transform into something that's actually super tasty.

Tofu is very absorbent to flavors so it makes it highly adaptable which is great for these "scrambled eggs" using tofu. They're flavorfully seasoned with southwestern spices that soak right in, and it's cooked in a hot skillet until golden brown to take on more flavor. And I think you'll enjoy that the texture is very similar to scrambled eggs.

It's a quick to make vegan breakfast and it pairs beautifully with whole grain toast and sliced avocado. This has been a go-to breakfast for me lately and it actually re-heats really well so I can get a few breakfast meals out of it.

Feel free to add in other vegetables (things like mushrooms, zucchini, or tomatoes) and you could even splurge a little and add some cheese (vegan or regular) at the end.

Possible Variations

  • A simple swap for some textural variation, that contrasting satisfying crunch is to use celery in place of tomatoes.
  • You could garnish this option with sliced almonds, sesame seeds or pumpkin seeds for a light layer of nutty flavor and a fine, flaky crunch.
  • For some indulgence serve with crumbled bacon atop.
  • If it's grilling season try this with chopped grilled chicken in place of shredded chicken for a hint of charred smoky flavor.

This cozy soup is everything you love about a cheese laden baked potato and more. You get all those layers of flavor built into the goodness of a soul warming, homestyle, sip-able soup.

This soup recipe begins with actual baked potatoes. Many recipes will just go the route of chopping and boiling the potatoes but I prefer the baked method so we can skip the step of peeling and chopping the potatoes, and rather just scoop the interiors out after baking and mash them into the soup. Plus it just feels more authentic if we are going to call it "baked potato soup" lets use the real deal.

The potato skins are chopped up into small pieces (after baking) and then pan fried for extra crispiness. They are a favorite ingredient to the soup among family members, everyone just likes to eat them on their own because they are so good!

Just be sure to load up on all of those various toppings when serving the soup as it will add a lot of the flavor. And don't drain the fat from the bacon as this also builds up flavor and adds richness to the soup.
