A nostalgic summer-time treat that can be enjoyed year round thanks to your indoor oven!

S'mores have long been a favorite treat of mine. They were one of the first things I learned to make as a kid. Slowly and carefully roasting them in a rotisserie art sort of way over the hot coals of campfire during the summer. Then in the winter over the coiled burner of an electric stovetop, and at times I may have even settled for a melted marshmallow quick zapped in the microwave to make them.

One method many of us have been missing out on is this simple broiled option on a baking sheet. And might I add toasting the marshmallow on two sides of course not just one as other guides have shown.

There are many things to love about this simple oven method of making s'mores. You'll get the same golden brown toasted goodness without being campfire cooked, you still get that ooey gooey fluffy melty marshmallow sweetness along with its pairing of rich luxurious chocolate, and crisp honey kissed graham crackers to hold it all together.

And bonus, you can make many at once versus making one or two on a roasting stick! I've listed out 6 servings but make up to 12 at time if you'd like.

These are perfect for when the cravings strike without all the hassle of packing up and venturing into the outdoors to build a campfire. They are beyond easy and always a popular favorite!

Rice Krispie Treats with the Best Ratios

Rice Krispie treats were first made back in 1939 by Malitta Jensen and Mildred Day at Kellogg’s company for a fundraiser. They’ve lasted for generations as such a popular treat here in the U.S.

And for good reason. These are one of the easiest, quickest treats you can make and they only require 3 simple ingredients you make likely already have on hand. Plus they are inexpensive.

Then of course there's the fact that people of all ages love them. Sometimes if I don't know what to bring to a party I just go with rice krispie treats and I rarely return home with any left.

Rice Krispie treats were actually one of the very first things I learned how to make. And since then it's probably a bit crazy how many times I've made them (definitely in the hundreds).

My version (or I should say my Mom's version, she taught me how to make these) uses the same ingredients as the classic, I just use different ratios.

We are talking more marshmallows and more butter! It makes them deliciously sweet and chewy, and perfectly rich and buttery!

Once you try them this way you'll likely never look back! These addictive treats are just too good!

So you see, this is definitely the pie you want to try this year right. Along with my Pumpkin Pie and Crumb-Topped Apple Slab Pie of course :). People need options, and three slices of pie on Thanksgiving.

If you've got people that love chocolate in your family they will go crazy over this pie. I know because I'm obsessed with chocolate and I was swooning over every single bite!

It's fluffy. It's rich. It's oh so chocolatey. It's sweet. It's creamy. To sum it up it's basically pie perfection.

Perfect for the Holidays!

I love making a variety of cookies during the holidays and there always need to be a chocolate cookie of some kind right?

I've had hot chocolate cookies on my to-do list for probably the last 4 years and I've finally gotten around to trying them.

But I decided to add a peppermint twist to them because I love the chocolate and peppermint combination.Melted chocolate in a glass mixing bowl for hot chocolate cookies.

A Rich Chocolate Flavor

I love that the base for these cookies is packed with chocolate. Not just cocoa but a lot of chopped chocolate.

It gives them a rich flavor and a chewy, fudgy texture. They're almost like a brownie cookie.

Like Mississippi Mud Cake in Cookie Form

One thing these cookies really remind me of is Mississippi Mud Cake. It's that chocolate base, marshmallow and chocolate icing combination.

I think I'd also love these cookies drizzled with chocolate in place of the icing.

Don't get me wrong the icing is delicious but next time I might try chocolate. The more chocolate the better, right?

Peppermint Hot Chocolate Cookies

These cookies are the perfect festive holiday treat! Not to mention they're a chocolate lovers dream! Soft, chewy chocolate cookies are layered with a sweet vanilla marshmallow, chocolate icing, and crushed peppermint candies. Who could resist?

Cookies

  • 12 oz. semi-sweet baking chocolate, (broken into pieces or chopped)
  • 1/2 cup (113g) unsalted butter, (diced into 1 Tbsp pieces)
  • 1 1/2 cups (213g) all-purpose flour
  • 1/4 cup (21g) unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cups (280g) packed light brown sugar
  • 3 large eggs
  • 1 tsp peppermint extract
  • 1 tsp vanilla extract
  • 24 large marshmallows

Icing

  • 2 cups powdered sugar
  • 1/4 cup (21g) cocoa powder
  • 4 Tbsp (56g) unsalted butter, (diced into small pieces)
  • 1/4 cup half and half
  • 1/4 tsp peppermint extract
  1. For the cookies: Add chocolate and butter to a medium microwave safe mixing bowl. Heat in microwave in 30 second intervals, stirring well between intervals until melted and smooth, set aside to cool slightly. 

  2. Meanwhile add flour to a medium mixing bowl, sift in cocoa powder and add baking powder and salt. Whisk mixture to combine. Set aside.
  3. In the bowl of an electric stand mixer fitted with the paddle attachment blend together brown sugar, eggs, peppermint extract and vanilla. Mix in chocolate mixture.
  4. With mixer set on low speed slowly add in flour mixture and mix just until combined. 

  5. Cover bowl and chill 1 hour or until firm enough to handle (I actually divided the dough into two containers and it chills faster). Preheat oven to 325 degrees during last 15 minutes of chilling.
  6. Scoop dough out about 1 lightly heaping tablespoon at a time. Shape into a ball then transfer to a baking sheet lined with parchment paper or a silicone baking mat, spacing cookies 2-inches apart (keep remaining dough chilled). 
  7. Bake in preheated oven until slightly under-baked, about 9 minutes. Meanwhile cut marshmallows into halves using kitchen scissors. 
  8. Remove cookies from oven and add 1 marshmallow half to each cookie placing the cut side downward. Return to oven and bake about 2 - 3 minutes longer until marshmallows have begun to melt. 
  9. Remove from oven and gently press down on marshmallows to flatten slightly. Cool on pan several minutes then transfer to cookies to wire racks and set wire racks over a baking sheets.

  10. For the icing: Sift powdered sugar and cocoa into a medium mixing bowl, set aside. 

  11. Heat butter and cream over medium heat and cook, stirring frequently until butter has melted and mixture reaches a simmer. Remove from heat, pour in powdered sugar and cocoa powder and whisk until smooth.

  12. Mix in peppermint extract. If mixture is too thick thin it with a little hot water, if it's too thin thicken with a little more sifted powdered sugar. 

  13. Immediately spoon icing over cookies (or alternately drizzle from a resealable bag with a cut corner) and sprinkle each cookie with crushed peppermint after adding icing because the icing will start to set quickly.

S'mores Cookie Cups

I made these three times to get the perfect cookie base and I think it's safe to say I couldn't make them any better!

I learned a few things along the way, like for instance if you let the cookie batter rest for 5 minute before baking the cookies shouldn't collapse as much, if at all, in the center once removed from the oven (so they had a better structure. If they do fall a little it's not big deal at all because they are covered with marshmallows) and they didn't seem quite as greasy.

Still perfectly buttery and moist but the little bit of resting time I think allows for the graham cracker to absorb some of the butter before they bake so it doesn't start out an over-buttery batter (if that makes sense).

Eggless Chocolate Mousse

Desserts are usually the saddest complaint I hear from vegan, dairy-free, or gluten-free friends. I adapted this recipe heavily from Nigella Lawson and it is totally genius! I love making mousse from scratch, but sometimes the shortcuts are a better choice!

Mostly they just offer a light and fluffy texture and simple, sweet flavor and they leave plenty of room for the chocolate flavor to shine. Plus, they are what makes this mousse quick to set.

This mousse is going to be my go-to chocolate mousse recipe from now on! It has the perfect amount of chocolaty richness, its texture is fluffy, melt-in-your-mouth perfection, and it's just divinely decadent. You'll want to lick the bowl!

Well worth the splurge on occasion! My sister who isn't even much of a chocolate fan couldn't put it down, and my mom, a chocolate fanatic fully approved. Mission accomplished.
