Summer Corn Salad Recipe

So it seems that summer is in full swing, even though it's not quite yet official. I've been buying corn on the cob at least twice a week for the last month and the sun is blazing (quite literally, it's been 95 degrees). So, corn + sun = summer, right :)? There are so many things I love about summer - the beach days, the relaxing summer evening outdoor parties, BBQ flavors, the flowers, summer mornings, and vacation - but one thing I love the most of course is the food!

Fresh watermelon, fresh berries galore, grilled burgers every week, ice cream pretty much on a daily basis, and good food like this! This Creamy Confetti Corn with Bacon is the definition of summer! The ingredients start with freshly cut from the cob corn and ends with perfectly salty, crisp bacon. You just can't go wrong with this summer salad.

The corn salad dressing has such a delicious blend of flavors and textures and it will leave you craving it again and again! It will definitely be a hit at your next summer dinner party and it's one of the best uses you'll find for all that fresh summer corn! Forget the main dish, just pass me a bowl full of this fresh corn salad, please.

This amazingly delicious One-Pan Creamy Lemon Pasta with Chicken and Asparagus has got you covered! It's perfectly filling and I love that it is basically a meal all in one with carbs, protein, and veggies!

One-Pan Creamy Lemon Pasta with Chicken and Asparagus | Cooking Classy

Creamy Lemon Pasta with Chicken and Asparagus

This is a dish that your whole family can agree on and you'll be happy with the fact that you have two fewer pans to clean since the sauce and pasta cooks easily in the same pan with a quick drain. No oven—just a one pot version of sheet pan chicken.

The ingredients are a match made in heaven. Asparagus and lemon go so well together, each perfectly complimenting the other so you can't go wrong by adding the two to chicken and pasta - especially when you're going to be adding in Neufchatel cheese and a toss with parmesan cheese! It takes the lemon butter sauce to the next level.

You can experiment with your herbs and spices, like onion powder, garlic powder, Italian seasoning, oregano, thyme, and dill. If you want a little spice, you can also add some red pepper flakes—YUM.

Easy to make and super delicious, this dip is amazingly rich and creamy, and packed to the max with flavor. It will get rave reviews all around from both young and old alike!

Ranch Dip

Easy Bacon Cheddar Ranch Dip Recipe

This tastes just like a cheese ball but in a creamier more dipable, no cracker-breaking form! I made it the week before Thanksgiving and loved it so I decided to make it to have around for the holidays with all the company we'd be having. You can never have enough tasty appetizers when it comes to hosting! This dip would be perfect for Thanksgiving, Christmas, game day, game nights, birthday parties, after-school snacks....

Let's just say everyone was coming back for more at my house, and they'll be loving it at your house, too!

Ingredients for Ranch Dip

  • Sour cream
  • Neufchatel Cheese or cream cheese
  • Ranch dressing mix or seasoning pack
  • Green onions
  • Cheddar
  • Bacon or bacon bits
  • Parsley (for garnish)

It's the Ultimate Veggie and Cracker Dip

When I know this is in the fridge I just keep reaching in and grabbing some veggies to dive into this dip. I love everything about it. I mean with ingredients like bacon, cheddar and ranch how could you go wrong? All the best things in one incredible dip that is destined to please. And the instructions? Just mix it all up!

Serve this delicious crack dip with:

  • Potato chips
  • Celery sticks
  • Carrots
  • Tortilla Chips
  • Bell Peppers
  • Broccoli & cauliflower
  • Cherry tomatoes

This will be a regular on my holiday menu and maybe take over that yearly holiday cheese ball tradition my mom used to have. It's absolutely delicious and perfectly irresistible. Make it soon and enjoy!

Just FYI if you don't like things very salty you can use low-sodium bacon or you can add a little more sour cream to balance out the salt from the ranch seasoning packets. My family likes a bit of salt so it was perfect for us but if you don't like much salt then adjust accordingly. You can also make a thick dip more loose by adding a splash of buttermilk. What I love most about this recipe is that you can make it ahead of time. You can whip it up in a medium bowl before heading to any family function, just be sure and cover it with Glad Press'n Seal Wrap beforehand and leave it to chill in the fridge until ready to eat.

Light Fettuccine Alfredo https://www.cookingclassy.com/light-fettuccine-alfredo/ https://www.cookingclassy.com/light-fettuccine-alfredo/#comments Fri, 21 Dec 2012 20:19:33 +0000 https://www.cookingclassy.com/?p=3288 Light Fettuccine Alfredo is a healthier version of your pasta favorite. Now you can indulge without all the guilt. This is still perfectly comforting, deliciously hearty and oh so creamy. Make this easy swap if you're trying to cut extra fat or calories from your diet.

light fettucine alfredo

Light Fettuccine Alfredo

So we all know the holidays can be pretty unforgiving when it comes to diet friendliness. I know for me it's easy to say, well the holidays come just once a year, so I deserve to celebrate and indulge a little. I've earned it. Personally, I think we should indulge a little during the holidays, it gives us more reason to look forward to them.

I'm also a believer in balance when it comes to eating. I like my healthy foods and I love my indulgent foods.

The healthy ones keep me, well healthy, and the indulgent ones keep me happy. Does that make me an emotional eater :)? I'm a woman what can I say?

Anyway, I love love love Fettuccine Alfredo, but with it's heavy packing of calories and fats I don't like to make it more than once a month. Yet, I do want it more than that so I decided to create a healthier sister recipe, a more figure friendly Light Fettuccine Alfredo.

No this is not a fat free recipe. I think it would be impossible to make a fat free version because that would require the use of absolutely no Parmesan cheese,  and we couldn't considered that Fettuccine Alfredo now could we?
