Fried Rice with Hawaiian Flavors

One thing we always love for dinner at our house is fried rice. I mean who doesn't love it?

It's easy, flavorful, filling and it's also a versatile dish. You can swap out the protein, add different vegetables and even include different flavors in the rice.

This Hawaiian inspired version is made with rich coconut rice (my favorite!) and that classic sweet pineapple and salty ham combo. In other words think Hawaiian pizza meets fried rice and this is what you get!

So many delicious, fresh flavors in one bowl of fried rice. You can't go wrong with this meal in one!

The Best Fruit Salad Recipe

I first shared this recipe 5 years ago but it's one of my favorite recipes, so for new readers or in case you missed it I thought it needs to be revisited. Plus I thought this exactly what mom's want on Mother's Day for brunch paired with waffles, crepes or Eggs Benedict!

I know Skittles are good, but I'm thinking this has got to be the right way to get a taste of the rainbow. This blend of colorful fruits all come together to make a gorgeous rainbow, made with healthy ingredients!

Kids will love this this fruit salad and it is an easy way to get them to eat plenty of fruit at once.

Rainbow Fruit Salad

A Fruit Salad Dressing without Cream or Pudding

Plus this version is so much butter than those frozen whipped topping fruit salads.

This recipe shows you how to make fruit salad without the heavy, creamy fruit salad dressing that you're used to seeing. It leaves plenty of room for all the flavors of the fruit to shine without drenching it in sugar and other random flavors.

Plus it doesn't use any of those packaged pudding mixes. Why should we coat all the vibrant and incredible flavors of the fruit with an artificial flavor from a pudding mix?

Let's not ruin a good thing like fresh fruit by coating it with packaged ingredients where we can't even pronounce the ingredients on the label.

All it takes is a little honey and lime to really make that fresh fruit sing. 100% natural honey and lime make this fruit salad shine (literally and figuratively).

Hummingbird Cake https://www.cookingclassy.com/hummingbird-cake/ https://www.cookingclassy.com/hummingbird-cake/#comments Sat, 13 Apr 2019 18:57:17 +0000 https://www.cookingclassy.com/?p=11836 The best Hummingbird Cake! It's a tender, flavorful cake brimming with fresh pineapple, bananas, pecans, and spices and finished with luscious cream cheese frosting and coconut! The perfect cake for Easter or any other special occasion.

Single slice of homemade hummingbird cake on a white dessert plate.

Homemade Hummingbird Cake

I think of this cake as banana cake meets the tropics, in that it is loaded with bananas, laced with fresh pineapple, and covered in sweet, toasted coconut.

It will remind you a lot of banana bread, but with a bonus of decadent cream cheese frosting, of course. There are so many delicious flavors and perfect textures in this cake.

The cake has a nice tender thanks to the sugar and bananas and it has a nice moist crumb thanks to the vegetable oil, it's dotted with juicy bits of crushed pineapple and crunchy toasted pecans, and it's finished with a creamy, lightly tangy frosting and finished with crisp bits of toasted coconut (or chewy coconut if you like it un-toasted).

It's an old-fashioned style cake that will likely remind you of home. Made from scratch and sure to please!

Made with a topping of fresh pineapple pieces coated in a sweet buttery, brown sugar topping. Underneath lies a tender homemade vanilla cake, and atop it's finished with fluffy whipped cream and colorful maraschino cherries. It's a classic dessert that's destined to impress!

Slice of Pineapple Upside Down Cake on a white serving plate. Cake is topped with fresh pineapple slices and decorated with whipped cream and a maraschino cherry.

The Best From Scratch Pineapple Upside Down Cake

I've tried plenty of pineapple upside down cakes and this one is by far my favorite. It doesn't use any cake mix, it's all about being made from scratch. And the best part is the fresh pineapple!

Most pineapple upside down cakes use canned pineapple and canned pineapple really lacks flavor compared to the fresh. Once you try it this way you'll never look back.

This cake is perfect served with the fluffy whipped cream or pair it with a scoop of rich vanilla bean ice cream.

And doesn't something about it just have spring written all over it? Spring is just around the corner and hopefully it's paired with a slice of this cake!

It's full of fresh flavor and you'll love the balance of lightly sweet and lightly sour here. Add this one to the menu this week, it's a dinner the whole family will enjoy!

Sheet Pan Hawaiian Chicken

Sheet Pan Hawaiian Chicken

This Hawaiian chicken recipe is inspired by one of my most popular recipes, Hawaiian Chicken Kebabs. This sheet pan chicken recipe may not have the same charred flavor, but it skips some of the steps that those kebabs require, making this variation the more simplified version that's perfect for weeknight meals.

It's amazingly delicious, and I like to serve this with coconut rice, but white or brown rice works great as well.

It's an easy-to-make, seriously moist, deliciously dense, homemade pineapple cake with a fluffy vanilla buttercream frosting, and it's finished with shredded coconut for a nice finishing touch. Yes, I even dare say, it's the best pineapple cake recipe!

Pineapple Cake

How to Make Pineapple Cake

To make this cake, you'll follow the standard cake-making instructions: Whisk dry ingredients in a large bowl. Whip butter and sugar, then mix in eggs and vanilla. Then, you'll rotate mixing dry ingredients with wet ingredients (which here is that concentrate and crushed pineapple mixture).

Then bake it in the oven until cooked through, and let it cool completely. Then bring on that ultra decadent, super fluffy, whipped vanilla buttercream! And if you aren't a fan of coconut, you can skip it, but I liked the added flair.

Pineapple Cake

The secret to my pineapple cake is pineapple juice concentrate. I made three pineapple cakes until I figured out the trick on the third attempt. The concentrate has at least 3 times the flavor as the juice from the can, so it kind of seems like a no-brainer for this cake batter.

They're just as delicious as a standard-size pineapple upside-down cake but they're cuter, funner, and less messy in these smaller individual servings.

Pineapple Upside Down Cupcakes With Cherry and Whipped Cream

Pineapple Upside Down Cupcakes

I love these so much because they are just one of those good old-fashioned recipes like your mom or grandma used to make, but rather they're made into cupcakes!

I could eat three of them in one sitting no problem, which is why I'm making them again tomorrow for the second time this week!

I'm having family over for a ham and potato dinner (my mom makes the best ham gravy) and I thought these would be the perfect finish for that meal. Pineapple and ham just go together, right?

Mini Pineapple Upside Down Cakes on Cooling Rack

Easy to Make Pineapple Upside-Down Cupcakes

These are actually really easy to make, they require a few steps but they go pretty fast, especially with an electric mixer.  It's worth the extra steps, I promise.

Whatever you do though, don't leave off the maraschino cherries. It just wouldn't be the same flavor without them.

You can usually find the cherries either by the canned fruit at the grocery store or by the ice cream cones.

My kids go crazy for the things (oh, and me too). I have to hide them when I buy them or it's like the first thing they ask for every day.

Smart kids, I mean how could your day go wrong when you start it out with a maraschino cherry? The finer things in life.

Scroll below the recipe to see the instructions for making these cupcakes!

Ingredients for Mini Pineapple Upside Down Cakes

  • Large eggs
  • Pineapple Slices (you can use crushed pineapple or pineapple tidbits, but it's messier)
  • Yellow Cake mix or Pineapple cake mix if you can find it
  • Finish with a dollop of vanilla ice cream (optional)

Pineapple Upside Down Cupcakes

These delicious Pineapple Upside Down Cupcakes are the perfect party dessert.

  • 1 (20 oz) can pineapple chunks in pineapple juice
  • 1 (8 oz) can pineapple chunks in pineapple juice
  • 1/3 cup (2.7 oz) packed light brown sugar
  • 1/3 cup (2.6 oz) unsalted butter
  • 1 cup (5 oz) all-purpose flour
  • 3/4 cup (5.6 oz) granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup (2 oz) unsalted butter, softened
  • 1/2 cup (4 oz) pineapple juice (from pineapple chunk can)
  • 1 large egg
  • 1/2 tsp vanilla extract

Topping

  • 3/4 cup heavy cream
  • 2 Tbsp granulated sugar
  • 12 maraschino cherries
  1. Preheat oven to 350 degrees. Spray 12 muffin cups well with non-stick cooking spray.
  2. Drain both cans of the pineapple chunks while reserving 1/2 cup of the juice for batter. Place pineapple over several layers of paper towels to drain well. Melt 1/3 cup butter in a microwave safe bowl then stir brown sugar into melted butter.

  3. Divide mixture among muffin wells, adding about 2 tsp to each. Arrange pineapple chunks on top of the sugar mixture, about 5 in each (you may not use all of them but I found one 20 oz can wasn't quite enough so I ended up opening 2 cans. The pineapple may be too long to make a flower shape but try to squeeze in 5 of them unless they are large chunks). Set aside.

  4. In the bowl of an electric stand mixer whisk together flour, 3/4 cup sugar, baking powder and salt.
  5. Set mixer with a paddle attachment, add 1/4 cup softened butter and pineapple juice then mix until batter is smooth, about 1 - 2 minutes (if using a paddle attachment that doesn't constantly scrape bowl, then occasionally stop mixer and scrape down sides and bottom of bowl throughout mixing process).

  6. Mix in egg and vanilla extract until well combined. Divide batter evenly among muffin cups, layering batter over pineapple layer.
  7. Bake in preheated oven until toothpick inserted into into center of cupcake comes out clean, about 23 - 26 minutes. Remove from oven and allow to cool 5 minutes, then run a sharp knife around edges to loosen.
  8. Place a wire cooling rack over top of muffin pan and flip to invert onto wire rack. Let cool completely then pipe sweetened whipped cream over cupcakes just before serving and top with a maraschino cherry.
  9. For the sweetened whipped cream:
  10. In a mixing bowl using an electric hand mixer (or in a clean stand mixing bowl set with whisk attachment), whip cream on high speed until soft peaks form. Add sugar then whip until stiff peaks form.

Melon and Pineapple Fruit Salad with Honey, Lime and Mint Dressing https://www.cookingclassy.com/melon-pineapple-fruit-salad-honey-lime-mint-dressing/ https://www.cookingclassy.com/melon-pineapple-fruit-salad-honey-lime-mint-dressing/#comments Sun, 27 Mar 2016 15:58:24 +0000 https://www.cookingclassy.com/?p=23646 Melon Pineapple Fruit Salad with beautiful colors and refreshing flavors is sweet, cool, and a gorgeous centerpiece. It's so easy to throw together and the perfect side at any cookout or summer party.

Melon Fruit Salad | Cooking Classy

I know this Melon and Pineapple Fruit Salad with Honey, Lime, and Mint Dressing is pretty much skipping a season, but I couldn't resist. When you get pineapple for .99 cents, it only makes sense to spend $10 more and make a fruit salad. This is the perfect summer fruit salad, and if you can find good melons right now, it also makes the perfect spring fruit salad. All of the fruit I got was actually really sweet and delicious.

If you find a cheap pineapple but need more protein, try these Hawaiian Chicken Kebabs, with green bell pepper, onion, and a brush of olive oil.

Kitchen Tools

Almost anyone can successfully make a good summer melon salad with minimal kitchen tools. You really only need a large bowl and a knife! Slice the fruit into sizes you like best. If you have a melon baller, I think some rounded fruit shapes can add fun visual interest.
