Winter Fruit Salad Recipe

Typically we think of fruit salads as a summer side dish but there's still an abundance of fruit in season during winter so why not take advantage of that and make a healthy winter fruit salad?

I first shared this recipe eight years ago and we've made it several times each year since. It's so good it almost passes as a tempting dessert!

This is a great dish to add to a holiday menu because there are often lots of heavy sides served but this is a light, refreshing and nutritious option to help balance those out a bit.

You'll find this inviting fruit salad is so easy to make and it adds so much festive natural color to your table.

Just keep in mind the most important thing about a fruit salad is the quality of the fruit. You want the fruit to have a sweet ripe flavor and firm enough texture that it won't get mushy.

From there the honey and lemon will just balance and highlight all of it's natural, fresh fruity goodness.

This year I've been allll about those pasta salads! I didn't fully appreciate them until the last few years so I guess I'm just catching up.

And now I'm thinking of fun pasta salad flavors I've never tried before, like this perfectly delicious Poppy Seed Chicken and Grape Pasta Salad!

I'll always go for a good poppy seed dressing when it's an option so I knew it would be good added to a pasta salad, I also really love this Poppy Seed Chicken Salad recipe of mine.

So I combined those two ideas together and here you are left with a perfectly summery super tasty pasta salad! It's such a great side dish to serve at all your summer cookouts.

Don't Leave Out the Almonds!

For this recipe I used Fisher Sliced Almonds and they are a key ingredient here. I love that they are preservative free and I also love the resealable packaging that helps them stay fresh!

My family likes to snack on them plus we add them to so many things.

My husbands favorite way to use them is in his protein smoothies, they blend up easily and they give it a creamy texture and make it more filling. And one of my favorite way to use them is in salads, like so.

I love that they are thinly sliced so you get that perfect thin bite with each piece for multiple layers of crunch!

How do I Make this Poppy Seed Chicken Pasta Salad?

  • Cook pasta, drain and rinse then set aside to cool.
  • Whisk together dressing ingredients in a bowl.
  • To a salad bowl add drained pasta, chicken, grapes, celery, almonds, green onions and cranberries.
  • Pour dressing over and toss to coat, season with salt and pepper.
  • Chill at least 30 minutes.

Allow Time for the Pasta Salad to Rest

Once you add the dressing there will seem like there's too much, there's not, it just needs time to rest and allow the pasta to absorb some of the dressing. So be sure to give it at least 30 minutes to rest.

Can I Reduce the Sugar?

If you aren't generally a big fan of the sweetness of poppy seed dressing then you can reduce the sugar or even omit it in this recipe. But I liked the unique sweetness it gave this pasta salad, plus it gives it that traditional flavor of poppy seed dressing.

Can I Make it Ahead of Time?

You can make this a day an advance and it's still so delicious. That's one of the great things about most pasta salads is that they can be made ahead.

Poppy Seed Chicken and Grape Pasta Salad

In this delicious pasta salad you'll find tender bowtie pasta, hearty pieces of chicken, sweet grapes, crisp celery and crunchy almonds all coated with an irresistible creamy poppy seed dressing. It's just so good!

  • 10 oz. bow tie pasta (about 4 cups)
  • 2 cups cooked and cooled, diced chicken breasts ((I used rotisserie))
  • 12 oz. red grapes (halved (about 2 cups))
  • 1 cup diced celery
  • 3/4 cup Fisher Sliced Almonds
  • 1/2 cup sliced green onions (green portion)
  • 1/3 cup dried cranberries ((optional))

Dressing

  • 1/2 cup fat free plain Greek Yogurt
  • 1/2 cup full fat mayonnaise
  • 3 Tbsp white wine vinegar or apple cider vinegar
  • 3 Tbsp honey
  • 2 Tbsp granulated sugar
  • 1 1/2 Tbsp poppy seeds
  • 1/2 tsp salt (then more to taste)
  1. Cook pasta to al dente in salted boiling water according to directions on package. Drain then rinse with cold water and let drain completely. Set aside and let cool.

    For the dressing:

    In a mixing bowl whisk together Greek yogurt, mayonnaise, vinegar, honey, sugar, poppy seeds and 1/2 salt. 

    Add drained pasta to a salad bowl. Add in chicken, grapes, celery, almonds, green onions and cranberries then pour dressing over top and toss to evenly coat. Season with more salt to taste and toss. Chill at least 30 minutes (and up to 1 day) before serving (this allows some time for the pasta to absorb the dressing and time for the flavors to meld). Serve chilled.

It wasn't until later in life that I tried pomegranates for the first time and at first, I thought they were such a pain to seed.

My brother has a pomegranate tree in his backyard, and he showed me the most efficient way to get all those juicy little arils out by slicing, scoring, and tapping them out—but it still seemed somewhat complicated. So I still just do it the old-fashioned way by cutting in half, then kind of tearing the halves to sort of expose them more so I can pick them out in clumps.

Mandarin Pomegranate Spinach Salad with Poppy Seed Dressing

A festive colorful fruit filled salad that's perfect for holidays and parties! Spinach is layered oranges, pomegranate arils, avocado and topped with a creamy poppy seed dressing.

Salad

  • 5 oz baby spinach
  • 3 mandarin oranges (10 oz), (peeled and segmented)
  • 3/4 cup pomegranate arils*
  • 1 medium avocado, (diced)
  • 1/4 cup sliced almonds, (toasted)
  • 1/4 cup chopped walnuts

Dressing

  • 2 Tbsp white wine vinegar
  • 1 1/2 Tbsp sugar
  • 1/8 tsp salt
  • 1/2 cup light mayonnaise ((tested with Hellman's light))
  • 1 1/2 Tbsp honey
  • 1 Tbsp poppy seeds
  • 1 Tbsp milk, (if needed)
  1. For the dressing: In a small mixing bowl whisk together vinegar, sugar and salt until sugar and salt have dissolved. 

  2. Add mayonnaise, honey and poppy seeds and whisk until combined. Mix in milk to thin if desired. Store in refrigerator until ready to use.
  3. For the salad: In a salad bowl layer spinach, mandarine oranges, pomegranate arils, avocado, almonds and walnuts. 
  4. Pour desired amount of dressing over top (or alternately just dress each serving). Serve immediately.
  • *If you want to make this in the summer it's also good with a small pkg. of fresh raspberries in place of the pomegranate arils.

This salad is easily one of my new favorites! It has such exciting flavors that all blend so amazingly well together!

We all know that cranberry and orange were made to go together but when you add in creamy avocados, salty feta cheese, crunchy toasted almonds, and a slightly sweet poppy seed dressing incredible things just happen. I'd put this on my Thanksgiving menu, skipping the chicken and adding more autumn elements, like a butternut squash in bite-sized pieces. I think this would also be delicious with leftover Thanksgiving turkey and pomegranate seeds.

Then of course I added grilled chicken because I wanted to make a meal out of this, plus I just love the flavor of any kind of orange chicken so I knew this salad needed it. Pears or cherries would make great substitutions for the fruit, and you can get creative with the nuts too (my family loves pecans on everything for Thanksgiving dinner).

You can use another type of lettuce with this salad, pretty much any mellow type of lettuce will do, I just love spinach for its' color and nutrition. This would also make an incredible Brussels sprouts salad or kale salad. Choose goat cheese if you want a milder taste, or blue cheese if you like even more tangy flavor.

Another thing I may try adding to this sometime would be bacon. I actually love the way bacon and orange pair together, plus nearly any salad (or any food for that matter) is better with bacon, right?

I dare say this is one of the best salads you'll ever eat! It's packed with bright flavor and nutritious ingredients. And you'll likely find yourself making this Orange Poppy Seed dressing on repeat. Who new salad could be so good!

Dressing

  • 1/4 cup olive oil
  • 1/4 cup canola oil
  • 2 tsp orange zest
  • 1/4 cup fresh orange juice
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp honey
  • 2 tsp dijon mustard
  • 1/4 tsp salt
  • 1 Tbsp poppy seeds

Salad

  • 1 lb chicken (, grilled)
  • 9 oz baby spinach
  • 2 medium avocados (, cored and diced)
  • 1 cup crumbled feta
  • 3/4 cup sliced almonds (, toasted)
  • 3/4 cup dried cranberries

This is an incredibly easy recipe: stir dry ingredients together, then add to the mixed wet ingredients and pour into your loaf pan. I like to use parchment paper to make it easier to remove, but any cooking spray will work.

Is this bread or is this a cake? Well, I suppose it could go either way. My favorite part is definitely that sugar-coated topping. You'll be wanting to steal that portion from your kids or that guy sitting next to you (just do it while they aren't looking, like I did). One taste will just not be enough!

Or you could just be like my 3-year-old, she'll eat her slice of bread as she's sitting there watching a cartoon, and when it's over, she'll say, "Hey! Who ate my bread?" when really it was her and she just forgot.

But it's a great attempt at a second slice, though, just pretend someone stole it so you need another.

If you do have any leftovers (doubtful), just cover with plastic wrap or in an airtight container. Try it warmed up from the toaster, or cooled in the refrigerator!

Lemon Poppy Seed Bread

My favorite lemon poppy seed bread! It's brimming with bright lemon flavor, perfectly sweetened and it has a deliciously soft texture.

  • 1 2/3 cups all-purpose flour
  • 2 Tbsp poppy seeds
  • 1 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • 1/2 tsp salt
  • 1 cup granulated sugar
  • 2 Tbsp lemon zest ((from about 3 lemons))
  • 1/2 cup unsalted butter (, at room temperature)
  • 3 large eggs (, at room temperature)
  • 1/2 tsp vanilla extract
  • 1/4 cup + 2 Tbsp sour cream
  • 1/4 cup milk
  • 2 Tbsp fresh lemon juice

Lemon Glaze

  • 1/4 cup granulated sugar
  • 3 Tbsp fresh lemon juice
  1. Preheat oven to 350 degrees. Butter and flour an 8 by 4-inch baking dish, set aside.
  2. In a mixing bowl whisk together flour, poppy seeds, baking powder, baking soda and salt for 20 seconds, set aside. 
  3. Add sugar and lemon zest to the the bowl of an electric stand mixer fitted with the paddle attachment. Rub lemon zest with sugar using your fingertips, until the mixture becomes moist and pale yellow. 
  4. Add butter to sugar mixture and whip on medium speed until pale and fluffy. Mix in eggs one at a time, adding in vanilla with last egg.

  5. In (microwave safe) liquid measuring cup used to measure milk, whisk together the milk with sour cream. Heat mixture in microwave just until no longer cold (about room temp).

  6. Working in three separate batches, beginning and ending with flour mixture, add 1/3 of the flour mixture (to the butter/sugar mixture) alternating with 1/2 of the milk mixture and 1 Tbsp lemon juice (each time), and mixing just until combined after each addition. 
  7. Bake in preheated oven 45 - 55 minutes, tenting with foil at 40 minutes (don't let foil touch loaf), until toothpick inserted into center comes out clean (or with a few small crumbs). 
  8. Remove from oven and allow to cool 5 minutes in loaf pan, then invert loaf onto a wire rack.

  9. Combine lemon juice and sugar in a bowl and heat in microwave on HIGH power and heat in 15 second intervals, whisking between intervals until sugar has dissolve and mixture is hot. 

  10. Brush top of bread with the lemon glaze (it will take several coats but use it all. Give it a second between coats to absorb as needed). 

  11. Let loaf cool on wire rack (I also recommend covering it with a extra large bowl if you have one to seal in some of the moisture), then cut into slices. Store in an airtight container.
