My Favorite Way to Make Puff Pastry Chicken Pot Pie

Most often you'll see chicken pot pie with puff pastry made two ways. Either prepared and baked as a whole "pie" in a single baking dish, or made in individual ramekins or bowls.

Both work but I created this variation because I wanted something easier, a dish that finished with perfectly flakey and non-soggy puff pastry, an option that didn't waste puff pastry scraps (precious!), and something that wasn't so messy.

If you bake in a single dish the puff pastry doesn't cut cleanly, and if you do individual servings it's tedious to work with single bowls and get the puff pastry to stick well. You also may likely find the end result of both said options yields a soggy layer on bottom.

This method works beautifully, and it's so convenient that the filling only needs to cook on the stove top so you can bake the puff pastry and make the filling at the same time.

And honestly who can resist those cute little puff pastry bites? I want to put them on everything and it's hard not to eat half of them before dinner is served.

Hello, summer! Er, almost. To me it feels like it's summer outside so I'm just going to go with it and make all the good summery desserts - like these utterly decadent and purely irresistible Puff Pastry Fruit Tarts with Ricotta Cream Filling! As I mentioned above, we just do not have the time to be making homemade puff pastry all the time. Especially when store-bought puff pastry dough is so delicious and easy! A little egg wash gives them that crisp, golden crunch with a gorgeous glaze. A little bit of lemon zest and lemon juice in your ricotta really brings out the rich flavor, but vanilla ice cream is another tasty option!

Fresh Fruit Tarts

I once ate delicious blueberry tarts at a tea party, and I've always remembered that fancy treat. For the 4th of July, strawberry and blueberry puff pastry tarts would make a cute, patriotic dessert or breakfast option! I also love fresh summer blackberries, so I want to try those too.

I'm already planning out the next time I get to make and indulge in these tempting treats again! I'm thinking Memorial Day or July 4th and probably, most definitely breakfast tomorrow. It just seems right. I'll just add extra fruit to feel better about things—it's fiber and vitamin C, right?! Make them soon, everyone will love them!

Really these are semi-homemade toaster strudels, unless you want to be really legit and make your puff pastry from scratch. And here we ditch the toaster and actually oven bake them instead (these would be a mess in the toaster).

You're whole family will love these tempting breakfast treats! They put the boxed kind to shame. And I may have spotted my husband squeezing the icing straight into his mouth, that little touch of butter and almond extract makes it just that good.

These are a simple pastry to make since they begin with a store-bought puff pastry, and they also use a store-bought jam so they really are a breeze to prepare.

Despite the shortcuts they still have a delicious, fresh homemade taste. You'll be savoring every last bite, trust me!
