The Perfect Carrot Salad

You guys I just got thee best compliment today - my daughter claimed this Moroccan Carrot Chick Pea Salad to be better than butter noodles! Hahaha.

Coming from her though, buttered spaghetti noodles with salt are her favorite food so I was pretty excited to hear it! Especially since this is much healthier.

I'd have to say though that this is one of my favorite salad recipes too! Most definitely not your typical green salad but such a flavorful, well blended salad.

If you haven't had Moroccan food all these spices and ingredients together would seem really strange but let me tell you they are oh sooo good together!

My Favorite Couscous Recipe!

There aren't many recipes I post I tell you that you have to try but please let this be one of them! I'm head over heels in love with this delicious Moroccan Couscous with Roasted Vegetables, Chick Peas, and Almonds!

I love the blend of moroccan flavors here and I also really love all the texture going on (think itty bitty couscous, soft roasted veggies, crunchy almonds, chewy raisins and tender chick peas).

And in case you missed it I recently shared a Moroccan Grilled Chicken recipe that pairs perfectly with this couscous and completes the meal. It's a meal I'm excited to make again and again and again!!

So What's In This Couscous?

  • fresh veggies - bell peppers, carrots, onion, zucchini and garlic
  • fresh cilantro and mint
  • lemon
  • spices - turmeric, cumin, cinnamon and coriander
  • olive oil
  • low-sodium chicken broth
  • chickpeas
  • almonds
  • raisins
  • couscous

How can this amazing salad not taste good with flavors like that? You can also easily adapt this couscous with your favorite veggies it's great for using up what you have in you kitchen.

How to Make This Tasty Couscous

  • Preheat oven to 475 degrees. Grease baking sheet
  • Add veggies, drizzle with oil and season.
  • Roast until tender, about 15 minutes.
  • Whisk olive oil, lemon, garlic and most spices.
  • Bring chicken broth and turmeric to a boil.
  • Pour hot chicken broth over couscous and raisins in bowl and toss
  • Cover and rest 5 minutes.
  • Add roasted vegetables, chick peas, almonds, cilantro, mint and lemon mixture and toss.

It Makes Great Leftovers!

Normally I'm not one that get's super excited about leftovers but I was so happy that there was some of this left after dinner because I ate it for lunch for the next two days and enjoyed it down to the last bite!

Moroccan Couscous with Roasted Vegetables, Chick Peas and Almonds

My favorite couscous recipe! It's brimming with bright Moroccon flavors and packed with fresh veggies. You even get some protein from the almonds and chick peas. It's a great lunch on it's own or for dinner pair it with chicken, lamb or beef. It makes great leftovers too!

  • 1 large red bell pepper, (cored and diced)
  • 2 medium carrots, (halved through length and sliced fairly thin)
  • 1 small red onion, (diced into 1-inch chunks)
  • 1 medium zucchini, (halved through the length and sliced)
  • 4 Tbsp olive oil, (divided)
  • 2 Tbsp fresh lemon juice
  • 2 tsp minced garlic ((2 cloves))
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • Salt
  • 1 1/3 cups dry couscous
  • 1 (14.5 oz) can low-sodium chicken broth
  • 1/2 tsp turmeric
  • 1/2 cup raisins
  • 1 (14 oz) can chick peas, (drained and rinsed)
  • 1/2 cup slivered almonds, (toasted)
  • 3 Tbsp minced fresh cilantro
  • 2 Tbsp minced fresh mint
  1. Preheat oven to 475 degrees. Spray a 18 by 13-inch rimmed baking sheet with non-stick cooking spray. Place bell pepper, carrots, onions and zucchini on baking sheet.
  2. Drizzle with 1 Tbsp olive oil and season with salt and toss to evenly coat. Roast in preheated oven about 15 minutes until tender, tossing once halfway through roasting.
  3. Then if desired move oven rack closer to broiler and broil for about 1 - 2 minutes to add a light char.
  4. While vegetables are roasting, in a small mixing bowl whisk together remaining 3 Tbsp olive oil, lemon juice, garlic, cumin, coriander, cinnamon and season with 1/4 tsp salt, set aside.
  5. Bring chicken broth, 1/2 tsp salt and turmeric to a boil. Place couscous and raisins in a large mixing bowl, pour hot chicken broth over couscous and stir, cover bowl with plastic wrap and let rest for 5 minutes.
  6. Add roasted vegetables, chick peas, almonds, cilantro, mint and lemon mixture to couscous and toss to evenly coat (while seasoning with a little more salt to taste as desired). Serve warm.

There are only a few ways you can get me to eat raw broccoli and actually enjoy it. It either needs to be mixed into a salad like so or dunked into a really good dip.

This delicious Broccoli Apple Salad is one of the best ways you can enjoy fresh broccoli! Plus it's packed with nutritious ingredients! I also made it lighter (as I frequently like to with dressings) by substituting plain Greek yogurt for some of the mayonnaise.

The Dressing

Don't get me wrong, I love mayo. My go to brand of mayonnaise is Hellman's (AKA Best Foods in some states). I always have a full-fat version of it and a light version stocked in my fridge. I use it for countless things, from sandwiches, to dressings, to salmon, to chicken salads and so forth.

It's a pantry (or in this case refrigerator) staple. I love the rich creaminess the full-fat version offers to this salad. By using the ratio of 1/3 cup regular mayo to 3/4 cup Greek yogurt, you can still keep a healthy balance without compromising great flavor.

Tips For Making This Broccoli Apple Salad

  • Because the ingredients in this salad are raw it doesn't wilt so easily. You can make this in the morning and pack it in lunch containers for work, school or picnics. You can even make the dressing the night before to reduce morning prep time.
  • If you don't have walnuts then cashews would be a good substitute
  • You could also try adding some blue cheese (great with apple and walnuts)
  • Go for sweet apples such as gala apples rather than sharp and sour ones

Broccoli Apple Salad

This delicious Broccoli Apple Salad is one of the best ways you can enjoy fresh broccoli! It's packed with nutritious ingredients and sure to be a crowd pleaser, everyone will love this lighter dressing!

  • 4 cups small diced broccoli florets
  • 2 small gala apples (, cored and diced)
  • 1 cup walnuts
  • 1 cup matchstick carrots (, roughly chopped)
  • 1/2 cup golden raisins or dried cranberries
  • 1/4 cup chopped red onion

Dressing

  • 3/4 cup plain Greek yogurt
  • 1/3 cup Hellman's or Best Foods Mayonnaise ((full fat))
  • 1 1/2 Tbsp apple cider vinegar
  • 3 Tbsp honey
  • Salt

For the dressing:

  1. In a medium mixing bowl whisk together Greek yogurt, mayonnaise, vinegar, honey and season with salt to taste (about 1/4 tsp). Chill until ready to use.

For the salad:

  1. In a salad bowl toss together broccoli, apples, walnuts, carrots, raisins or cranberries and red onion. Pour in dressing and toss until evenly coated.

These cookies are moist and chewy and they are simply one of the best oatmeal cookies I've ever made or had (from bakeries included). I was so surprised that such a simple recipe could yield such fantastic results! This is definitely a recipe I'm going to hang on to for the days when I get a cookie craving but don't want to take the time to make a full batch + have a huge mess in my kitchen.

I was intending on adding vanilla extract to this but forgot the second time around and I didn't really notice, it just left room for the cinnamon to shine. So if you want to, add it, if you don't, I don't think it's needed and it keeps the ingredient list down for this simple recipe.

I created this recipe because I only had 1/4 cup butter in my fridge, so I had to improvise and try something a little healthier. The result was a delicious cookie that I can feel good about eating for breakfast or piling on a plate for my kids' after-school snack.

I'm so excited about how delicious they are!  I need, yes need, dessert every day or it's just not a great day for me.  Sort of a problem, but not now with these healthier cookies as an option.

These moist, cake-like cookies melt in your mouth!  The glaze is totally optional, I mostly added it for looks so feel free to leave it off if you want less sugar (but it does make them delectable!).  Also, if you wanted to you could ice them with a low-fat or even fat-free cream cheese icing.

We may not like to admit it, but we've ALL had cookies for breakfast before. I'm not shaming anyone, but I think there's a way to enjoy cookies for breakfast AND feel good about it. These cookies are perfect for breakfast, especially for busy families, because they're easy to grab-and-go in addition to being sneakily healthy. Your kids are eating veggies, whole-grain oats, and fruits for breakfast without having to whip up an entire breakfast spread.

Feel free to experiment with the ingredients to create something your family loves. Add other fruits, nuts, seeds, peanut butter, or even protein powder for a little extra boost. I also like to wrap these cookies individually and freeze them, so kids can grab one and warm it up quickly before running to the bus. Healthy Carrot Oat Cookies with glaze

Carrot Oat Cookies

A cookie made with less fat, oats, whole wheat flour, carrots and applesauce. Reduce the sugar by up to 1/2 cup if desired.

  • 3/4 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 3/4 tsp cinnamon
  • 1/8 tsp nutmeg ((optional))
  • 1/2 tsp salt
  • 2/3 cup applesauce
  • 1/4 cup butter (, softened)
  • 3/4 cup light-brown sugar
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups quick oats
  • 1 cup finely grated carrots
  • 1/2 cup raisins
  • 1/2 cup dried cranberries ((such as Craisins))

Optional Glaze

  • 1 cup powdered sugar
  • 2 Tbsp milk
  1. Preheat oven to 350 degrees. In a mixing bowl whisk together all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, optional nutmeg and salt, set aside. In the bowl of an electric mixer, whip together applesauce, butter, brown sugar and granulated sugar until well blended and smooth about 1 minute. Stir in egg and vanilla. Slowly add in flour mixture. Stir in quick oats, carrots, raisins and dried cranberries, mix until combine. Drop mixture by heaping tablespoon fulls onto a Silpat lined cookie sheet two inches apart and bake for 15 minutes until lightly golden and set. Allow to cool several minutes before removing to wire rack to cool. If using glaze: in a small mixing bowl, whisk together powdered sugar and milk until well combine and smooth. Pour into a piping or ziploc bag, snip a small tip off the end and pipe over cookies (note: store cookies in a single layer).
