Satisfying Sesame Noodles and Variations

That saucy noodle craving is real and this recipe (with it's delicious Asian flavors) is the perfect way to satisfy it!

This versatile recipe can be served as is or you could also include a protein such as chicken or shrimp.

Another great option is to sneak in sautéed vegetables such as broccoli, matchstick carrots, cabbage, bell pepper or pea pods.

You could also swap out the pasta or noodles for a healthier option. There are lots of choices out there now, with things like brown rice noodles, whole wheat noodles or pasta, lentil or chick pea based noodles, or others including things like spinach.

The key is to stick with this incredible sauce and you will want this dish on repeat!

It's that famous potluck ramen noodle salad that has been around for decades, the one people just can't get enough of. It must be that crave-able crunch.

I've loved this salad since I was a kid. When ramen is involved who can resist? We all love to snag a taste of the dry ramen crumbs before preparing it but here we can enjoy an abundance of them.

I love to serve this with grilled chicken or even rotisserie chicken for a shortcut dinner. You can even go ahead and toss the chicken right into the salad.

Tips for Making It the Best

My key changes to the classic recipe that set it apart are to:

  • Toast not only the almonds but also the ramen. It add nice notes of toasted flavor to an otherwise very bland ramen.
  • Add extra seasonings. Some recipes will use the seasoning packet but I think it's full of bad ingredients (and of course lots of sodium) so I make my own seasoning blend using garlic, ginger and sesame oil.
  • Replace the classic sugar with honey. It has great flavor that goes really well here, and it's a bit of a healthier option. Same with replacing vegetable oil with olive oil.

Asian Chicken Noodle Soup Recipe

The best time of year is soup season! Really I love every season, each one has things I love about it (although with winter, I wish it would just snow more often if it's going to be cold. Maybe I should be careful what I wish for. I love it when everything is covered with gorgeously white, glistening snow though). I'm getting so excited for fall and all the food and baking that comes with it!

This isn't exactly your typical fall soup, but it's soup so I'm sure I'll be making it plenty this fall - especially considering how much I loved it! Talk about the biggest upgrade on a package of ramen noodles! I know when I get a cold this season (which I wish I could say I won't but every year I get a few) this is the Asian Chicken soup I'll be craving. It's packed with delicious flavors, and simple ingredients, and it was a dinner my whole family loved.

Tips

In case you were wondering which brand of ramen I used, I went with these here. I like that they are thicker noodles and they just seem more authentic. You can use any brand you'd like, if you use the smaller classic packages you find here in the U.S. (3 oz) then just do 1 1/2 pkg. And of course, don't add the seasoning packets.

Also, if you can get your hands off fresh I'm sure that would be even better, they're just hard to come by at your traditional grocery store (then of course you'll probably need double or triple the amount since they aren't dry and dehydrated). You can also use other types of noodles, such as rice noodles if you prefer to go gluten-free. Beware egg noodles if you're vegan!

Then just FYI, I did ladle out about 1 1/2 cups of the vegetable broth from the pot of soup for these pictures, just so you could see more of what's in the soup - so expect a slightly more broth-y soup than what you see here. You can begin with less though if don't think you'd like much broth or just add some extra ramen. Enjoy!

Strawberry Spinach Salad with a Crunch!

Let me just start off by saying this is one of the best salads I've tasted! I had two big platefuls then the next day I was dreaming about having more. It's summer so that means make a strawberry spinach salad whenever you get the chance, right?

With this salad I wanted to switch up the classic strawberry spinach salad and make a Strawberry CRUNCH Spinach Salad. Everything is better when the word "crunch" is added in. I love ramen in my salads and the major crunch factor they add, it's makes for such a good use for those cheap ramen packets. And when you toast them up it just makes them that much better.

To compliment the fresh strawberries in this salad I added some crumbled goat cheese, toasted almonds and fresh green onions and then to bring it all together I finished it off with a vibrant, sweet and sour, Honey-Red Wine Vinaigrette.

All that together makes this salad 100% delicious and truly irresistible! It will definitely leave you wanting more. I know this will definitely be one of my go to summer salad recipes, I'm already looking forward to making it again. Trust me when I say this is a salad you've got to try! And you need crunchy ramen in your strawberry spinach salads from now on.

Here's that famous crunchy Asian ramen salad that you've had at potlucks. You know, the one everyone loves?

I've turned the classic ramen salad recipe into a dinner entree so you don't have to wait for a party to make it. I love salads, but I don't have a lot of time to make this loaded salad as a dinner side, especially during weeknights, so instead I usually just make the salad the main dish by adding a protein like chicken.

It has been so long since I've had this kind of salad, and after trying this one who knows why I waited that long. This Asian ramen noodle salad is amazing!

You get a serious abundance of crunch, the perfect light toasty flavor (from toasting the ramen and almonds in the oven, I nixed toasting them in butter because ramen is already fried in oil so why add more?), and you get the perfect balance 0f sweet and sour from the vinegar and sugar in the dressing.

Who knew a cheap, plain package of ramen noodles could do so much good? I still remember asking all the time when I was younger if I could eat mine uncooked because I loved that delicious crunch.

Add this one to your menu this week, you won't regret it!

Asian Ramen Chicken Salad Ingredients

For the chopped chicken salad, you'll need:

  • Chicken breasts, cooked and shredded
  • Dry ramen
  • Sliced almonds
  • Green and purple cabbage
  • Carrot
  • Green onions
  • Sesame seeds

And for the tangy Asian dressing, you'll need:

  • Canola oil
  • Apple cider vinegar
  • Granulated sugar
  • Soy sauce
  • Dried garlic, onion powder and ginger
  • Salt and pepper

How to Make Asian Ramen Chicken Salad

  • Toast ramen noodles and almonds in the oven. Set aside to cool.

  • Whisk together dressing ingredients.

  • Add the vegetables and cooked chicken to a large mixing bowl, along with the almonds, ramen noodles and sesame seeds.

Can I Prep This Salad in Advance?

This Asian salad is best enjoyed right away, as the noodles and cabbage lose their crunch the longer they sit in the dressing.

Can I Season the Dressing with the Flavor Packet in the Noodles?

I know a lot of Asian ramen salad recipes say to use the seasoning packet that comes with the ramen noodles in the salad dressing. I personally don't like using the seasoning packet since it contains MSG.

However, you can add it instead of the dried spices I've called for. Just note that you might need to scale back the amount of soy sauce in the dressing, or adjust other ingredients as needed.

Tips

  • If you want a little more depth of flavor, you could add just a bit of sesame oil to the dressing. I loved it as is but we all have different tastes, so make it how you'd like. The joy of cooking, right?
  • You can also use a pre-made 16-oz. coleslaw mix for this recipe, but I prefer shredding the cabbage myself.
  • Serve this salad right away while everything is still crunchy.

Asian Ramen Chicken Chopped Salad

Such a satisfying, crunchy salad recipe that's perfect for a dinner or potlucks! It's loaded with freshness and finished with a perfectly seasoned dressing. 

  • 1 lb boneless skinless chicken breasts (, cooked and shredded or chopped)
  • 2 (3 oz) pkgs. dry ramen (, seasoning packet discarded)
  • 3/4 cup sliced almonds
  • 5 cups shredded green cabbage ((12 oz, chop into thin shreds)*)
  • 2 cups shredded purple cabbage ((5 oz, chop into thin shreds))
  • 1 large carrot peeled and chopped into matchsticks ((3/4 cup))
  • 4 green onions (, sliced (about 1/2 cup))
  • 2 Tbsp toasted sesame seeds

Dressing

  • 1/2 cup canola oil
  • 1/4 cup + 2 Tbsp apple cider vinegar
  • 1/2 cup granulated sugar
  • 1 1/2 Tbsp soy sauce ((not low-sodium))
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp dried ginger
  • Salt to taste
  1. Preheat oven to 400 degrees. Crumble ramen into small pieces and place on baking sheet along with almonds, spread into an even layer. Bake in preheated oven until golden, tossing once halfway through baking, about 6 - 8 minutes. Set aside to cool.
  2. In a mixing bowl whisk together all of the dressing ingredients until well blended while seasoning with salt to taste, set aside.
  3. To a large bowl add green cabbage, purple cabbage, carrots, green onions, chicken, toasted ramen and almonds and sesame seeds. Drizzle dressing over top and toss to evenly coat. Serve right away for crunchiest results.
  • *If desired, you can also use a 16 oz coleslaw mix in place of the cabbages and carrot. I just prefer the freshly chopped for this recipe, plus the mixes are skimpy on the purple cabbage.
  • If you want a little more depth of flavor, you could add just a bit of sesame oil to the dressing.
