Cheddar Bacon Ranch Potato Salad

What makes this potato salad with bacon easy to make and why it calls for so few ingredients is because instead of a homemade potato salad dressing, it's made with a bottle of ranch dressing. I know, normally I'm all about making things from scratch but sometimes when I find a good product, I love a good shortcut.

I made this potato salad with the new Hidden Valley® Ranch Simply Ranch Dressing. I'm actually really excited about this product! It's bottled ranch dressing made without any artificial flavors, preservatives or colors.

Instead it's made with real ingredients like buttermilk, garlic, onion, herbs and spices and I like it better than the original! It has a delicious flavor and of course that same classic velvety smooth creamy texture.

Cheddar Bacon Ranch Potato Salad Ingredients

For this loaded potato salad, you'll need:

  • Red potatoes
  • Bacon
  • Hidden Valley Simply Ranch Dressing
  • Green onions
  • Shredded cheddar cheese

How to Make Potato Salad with Bacon

  • Boil the potatoes until fully tender, then drain and let cool.
  • In a large bowl, toss together the cooled potatoes, ranch dressing, crumbled bacon, sliced green onions and shredded cheese.
  • Serve immediately or chill up to 24 hours before serving.

How Long Should I Boil Potatoes for Potato Salad?

This is a red potato salad recipe, so you'll need dice the potatoes into 1-inch chunks and then boil for around 10 minutes. Add the red potatoes to a pot of cold water, then bring to a boil. This will give you super tender potatoes for your potato salad.

Can I Use Another Type of Cheese?

Yes, feel free to use any shredded cheese you have on hand in this recipe. I personally like sharper cheeses, like cheddar, in this recipe, otherwise it gets overwhelmed by the other ingredients.

Tips for the Best Potato Salad

  • If you want the bacon to be crispy when you serve this loaded potato salad, serve it immediately after making. The bacon loses its crispiness the longer it sits in the dressing.
  • Feel free to reserve some of the crumbled bacon and sliced green onions for garnishing the potato salad.

Cheddar Bacon Ranch Potato Salad

Such an easy flavorful potato salad recipe! Just cook potatoes in boiling water, drain and toss with ranch, cheese and green onions. A new summertime staple!

  • 2 lbs petite red potatoes, (diced into bite size chunks (about 1-inch))
  • 2/3 cup Hidden Valley® Simply Ranch Dressing
  • 1 cup shredded cheddar cheese ((I used medium))
  • 6 slices bacon, (cooked and crumbled (about 1/2 cup))
  • 1/3 cup chopped green onions
  • Salt and pepper ((optional))
  1. Cook potatoes in boiling water: Add potatoes to a pot. Add enough water to cover potatoes by about 2-inches. Bring to a boil over medium-high heat then reduce heat to medium and allow to boil until potatoes are fully tender, about 10 minutes. 

  2. Drain potatoes: Carefully pour potatoes into a colander to drain. Set aside to cool (to speed cool them run them under cold water until cool).

  3. Toss potatoes with dressing, and mix-ins: Pour cooled potatoes into a large mixing bowl. Add in ranch, cheddar, bacon and green onions, toss to coat. 

  4. Season as desired: season with salt and pepper to taste. Serve or cover and chill up to 1 day (if you like the bacon crispy wait to add it until ready to serve).

  1. You can set aside a few tablespoons of the bacon and green onions for garnish if desired.

Easy Bacon Cheddar Ranch Dip Recipe

This tastes just like a cheese ball but in a creamier more dipable, no cracker-breaking form! I made it the week before Thanksgiving and loved it so I decided to make it to have around for the holidays with all the company we'd be having. You can never have enough tasty appetizers when it comes to hosting! This dip would be perfect for Thanksgiving, Christmas, game day, game nights, birthday parties, after-school snacks....

When I know this is in the fridge I just keep reaching in and grabbing some veggies to dive into this dip. I love everything about it. I mean with ingredients like bacon, cheddar and ranch how could you go wrong? All the best things in one incredible dip that is destined to please. And the instructions? Just mix it all up!

Just FYI if you don't like things very salty you can use low-sodium bacon or you can add a little more sour cream to balance out the salt from the ranch seasoning packets.   • 8 slices bacon ((9 oz) cooked until crisp, cooled and crumbled into bits)
  • 1 (8 oz) pkg. Neufchatel cheese, softened
  • 1 1/4 cups sour cream
  • 1 (1 oz) pkg. Hidden Valley® Original Ranch® Dressing Mix
  • 1 cup finely shredded sharp cheddar cheese
  • 1/3 cup chopped green onions ((from about 2))
  • Fresh vegetables and crackers (, for serving)
  1. Place Neufchatel cheese in a medium mixing bowl and using an electric hand mixer whip until smooth. Add sour cream and mix until smooth. Add dressing mix, cheddar cheese, green onions and bacon and stir and fold until well blended*. Serve with vegetables and crackers. Store dip in refrigerator in an airtight container.

It's deliciously creamy and packed to the max with flavor! Make this for a cold winter evening or serve with your Super Bowl party food! 

I love a warm bowl of homestyle potato soup, which is why I decided to give it an upgrade. I grew up eating a lot of meat and potato meals. I don't think my mom ever missed a Sunday dinner of roast beef and mashed potatoes (and NEVER the instant potatoes, I didn't even know they existed growing up). So, basically, potatoes are one food I could never part with. One of my favorite dinner sides is Twice Baked Potatoes.

Bacon Ranch Potato Soup

The inspiration for this soup came from those incredibly delicious Twice Baked Potatoes, those dreamy, creamy potatoes that are loaded with Cheddar cheese, sprinkled with browned crispy bacon and chopped green onions then they're finished off with a generous drizzling of creamy Ranch dressing. It's the perfect soup to serve for a winter party or Super Bowl game day!

Yeah, all of that in soup form, and this Cheesy Bacon Ranch Potato soup better be good right? It's my new favorite potato soup—I'm not sure if I'll be able to eat the traditional plain old potato soup anymore. This stuff is just too flavorful and cheesily delicious to look back to that soup again =).

This recipe may seem a little different, I didn't make a roux to add the flour, rather I whisked it into the milk. I didn't want to add butter because the mayonnaise already replaced the fat and creaminess of what butter would do.

I also chose to use sharp cheddar cheese because in my opinion when you use sharp you can use less cheese (than if you were to use mild or medium) and therefore you're adding fewer calories (don't get me wrong this isn't a low-calorie soup, I just try to lightly reduce calories where I can).

Cheesy Bacon Ranch Potato Soup

I decided to leave the carrot and celery out of this recipe so it's more like a loaded or twice-baked potato but if you really wanted to you could add them.

If you want even more of a ranch flavor you could drizzle the top of the soup with additional ranch, made according to the directions on the package. I hope you love this soup as much as I do and make it often this upcoming fall and winter season! There's nothing like a perfect bowl of soup to warm a cold fall evening. Enjoy!

Cheesy Bacon Ranch Potato Soup

This soup is deliciously creamy and packed to the max with flavor! A tasty upgrade on the classic potato soup.

  • 3/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup whole milk
  • 1 1/2 Tbsp dry ranch dressing mix
  • 3 lbs Russet potatoes (, peeled and diced into about 3/4-1" cubes (about 8 medium potatoes))
  • 1 Tbsp extra virgin olive oil
  • 3/4 cup diced yellow onion ((about 1 small onion))
  • 2 cloves garlic (, finely minced)
  • 2 (14.5 oz) cans chicken broth*
  • 2 cups whole milk
  • 1/4 cup all-purpose flour
  • 6 oz . sharp cheddar cheese (, divided (about 1 1/2 cups))
  • 1 oz . finely grated Parmesan cheese ((about 1/4 cup))
  • freshly ground black pepper to taste
  • 10 slices bacon (, cooked and chopped (or crumbled if you like it extra crispy))
  • 3 green onions (, chopped)
  1. In a mixing bowl, whisk together sour cream, mayonnaise, 1/4 cup milk and ranch seasoning mix. Cover bowl and refrigerate.
  2. Heat olive oil a large cast iron dutch oven over medium high heat. Add onion and saute about 4 minutes until golden, add garlic and saute 1 more minute. Add chicken broth and diced potatoes and bring mixture just to a boil, then reduce heat to medium, cover pot and cook 15 - 20 minutes until potatoes are very tender.
  3. In a mixing bowl, whisk together 2 cups milk with 1/4 cup flour (whisk very well to break up flour) and pour mixture into soup. Increase temperature to medium high heat, and bring mixture just to a boil, stirring constantly (stirring constantly will help break down the potatoes a bit). 
  4. Once mixture reaches a boil, reduce heat to low, add ranch dressing mixture from refrigerator, 1 cup (4 oz) grated Cheddar cheese, grated Parmesan cheese and season with black pepper to taste. 
  5. Cook about 5 minutes, stirring frequently (note, if you want smaller potato chunks in the soup you can simply mash the soup with a potato masher to break them down a bit more). Serve warm, sprinkle each serving with remaining 1/2 cup cheddar cheese, chopped bacon, and chopped green onions.
  6. *you can use low sodium chicken broth if you prefer, for this recipe I just used regular and didn't add any salt to the soup. If you use low sodium you may want to add additional salt to the soup.
