This simple avocado salsa is basically guacamole mingled with salsa or pico de gallo. It's a dip that has the flavors of guacamole but more of a texture similar to a chunky salsa.

It's brimming with nutritious ingredients, and you'll love it's lively flavor. Plus who can resit that tempting blend of textures? Among them a soft bite, bits of crispness throughout, plenty creaminess, and with crunchy flakey chips a truly perfect pairing.

It's a fine-chop dunk-able chip dip, or you can use it as a topping over cooked protein such as pan seared salmon, black bean burgers, or grilled chicken. Another option of course is to heavily layer it over your favorite Mexican food - things like taco salad, chicken street tacos, fajitas, or even add a few spoonfuls to a bowlful of tortilla soup.

I think you'll really come to appreciate all the various ways you can enjoy this salsa!

Greek Chicken Bowl

I've shared Greek chicken bowls before but they called for marinated and grilled chicken. I wanted a simpler weeknight and winter friendly version that was just as delicious, so created this stovetop variation.

They are still brimming with flavor, abundant in fresh goodness, and it's all about those sauces (they include both tzatziki and hummus and it makes all the difference).

It's a one bowl meal you can feel great about serving as it includes a whole grain, a complete protein, healthy fats (olive oil and avocado), and a tons of vegetables. And of course we throw some cheese in there because feta adds so much flavor.

Also try the other variations I've shared below (you can swap out things like quinoa for rice, avocado for olives, and parsley for mint). It's a versatile Greek bowl that's sure to satisfy without leaving you feeling weighed down.

Our Favorite Apple Salad Recipe!

Who doesn't love a salad that includes fresh seasonal ingredients? Many of us are baking with those delicious seasonal fall apples (making apple crisp, apple pie or apple cobbler) but those juicy apples are also such great addition to savory recipes (like this autumn sheet pan chicken dinner) and side salads like this.

Apples are the crowing star of the show in this salad and they are highlighted beautifully by the other ingredients like the tangy feta and rich smoky bacon. Bacon makes everything better though right?

This salad is simple enough to be an addition to weeknight meal but it's also delicious enough to be served at a holiday gathering or a weekend party.

If you want to make it a main dish just add some chopped rotisserie chicken to it for more protein or consider tossing in a grain like farro, barley or even seedy tri color quinoa.

So much to love about this colorful, vibrant, sweet and savory salad!

Easy Corn Salsa Recipe

Corn salsa that's much better than Chipotle's corn salsa. It's a healthy dip that also doubles well as a side dish.

Fresh corn and bell pepper are fire-roasted over a hot grill or gas stove flame for a beautiful smoky char, then they're tossed with a colorful plethora of other complementary fresh Mexican-style ingredients.
