Spinach and Cheese Stuffed Chicken Breast

What is Bucatini?

Bucatini is a long, tubular, straw-like pasta that's made from durum wheat flour. It's similar to spaghetti but thicker because it has that hollow center running through it's entire length.

It is a popular pasta in Rome, Italy. It is said to originate from the city of Amatrice. It's name comes from the Italian word "buco", which in English translates to "hole."

Can you imagine the labor of love to create the handmade version of this pasta by wrapping individual pieces of dough around a thin rod (known as a ferretto) and rolling it thin?

For this recipe the commercially made, store-bought pasta will definitely do.

I think you will love this specialty pasta, and the fun change it is from your typical spaghetti.

And hopefully you are able to track some down at your local grocer. It is the perfect base to this tomato-y amatriciana sauce!

Easy Oven Baked Chicken Drumsticks

I set out to make the perfect baked chicken legs and after many batches settled upon what I found to be the best suited marinade and baking method. While the others were good, things like a simple seasoning left us craving more bright flavor, and a sweet and sticky asian marinade baked in a baking dish left us wanting more browned flavor and crispy skin.

Chicken, lemon, garlic and fresh herbs are always a combination you can't go wrong with and this recipe is proof. Simple fresh flavors are usually the best flavor enhancers.

And of course you'll appreciate how easy this is! Just blitz together a quick sauce in the food processor, marinate the chicken legs in it, then bake in the oven on a baking sheet until cooked through. So easy right?

With this recipe you have the option to serve them right from the oven with crispy skin, or at the end baste with the final 1/4 cup reserved sauce. It's a hard choice for me personally, that's why I'll leave it up to you.

Who can resist that crispy chicken skin, but you may also love the extra flavor of that herb sauce (it's just that the oils and liquids in it will quickly soften that crispy skin). So you may just opt to serve the remaining chimichurri sauce tossed with a vegetable side dish instead (potatoes or corn are a great option).

Either way you are going to LOVE this chicken!

I'm way behind on this one, but my brother has kept telling me how amazingly delicious baked feta pasta was, and now, finally, I've gotten around to making it. I don't really do trendy (and don't even have a TikTok account), but this is a trend I'll totally get behind!

I never should have waited so long to try it. Like just about everyone else, I'm obsessed! And luckily, now that things have calmed down with its popularity a little, you shouldn't have to deal with any feta shortages.

What is Orecchiette?

Orecchiette is a type of southern Italian pasta shaped like little ears. The word 'orecchia' translates to 'ear' while the suffix 'etta' translates to 'small' or 'little'.

It is made from semolina flour and can be found in two sizes, but in the U.S. usually just one size (in this recipe we use the larger size that's about 1/2-inch, the smaller works well for soups).

Orecchiette holds sauces well with it's bowl form, and it's a fun unique shape to cook with.

You can purchase it online, or I've also found this type of pasta at Target and larger Kroger stores.

The Perfect Summer Pasta Salad

What would summer be without at least one cookout or picnic that includes a vibrant and perfectly enjoyable, cold pasta salad?

This will quickly become a new favorite because there is so much goodness and an abundance of fresh flavor. Each of the ingredients blend exceptionally well together, each one complimenting the other.

It has a harmonious blend of textures as well. There's a nice trio of crisp, soft, and chewy.

Just one thing to note - it does make a very large salad, or enough for a small crowd. The recipe will halve nicely for a family dinner.

Tomato Basil One Pot Pasta

I've long loved one pot pasta recipes because they are as quick and easy as a made from scratch dinner gets.

It's a well balanced, richly flavorful spice blend that's truly a queen of spices. It's one of the easiest ways to build up and infuse an abundance of flavor into a dish, and when you make it from scratch you'll never want to use store-bought again!

What is Garam Masala

Garam masala is an aromatic blend of ground spices used in Indian, Pakistani, Afghan, Bangladeshi, Nepalese, and Sri Lankan cuisines. The most common type originated from Northern India.

It is used to season and bring complex flavor to curries, meat and fish dishes, lentil and vegetarian dishes, soups and more.

While you can usually find garam masala in a pre-mixed spice blend by the other spices in the baking isle at your local grocery store I highly recommend making it yourself at home. Why? It has a lot more flavor, you can control the amount of each spice that goes into it (store-bought blends vary widely in spices used and amounts), and you can also control heat.

Some store-bought blends in my opinion have way too much of one spice and lack another. Some are so peppery they don't leave a whole lot of room to taste much else.

Homemade spice blends, such as this, may take a little bit of extra effort but I promise you they are worth it!

When you are short on time, or if you are having a hard time finding whole spices I've also included measurements for a fast and easy recipe using using pre-ground spices.

If possible though I highly recommend trying the whole and freshly ground, they create that practically irreplaceable flavor.

What does Garam Masala taste like?

Garam masala tastes warm and earthy, lightly sweet, peppery and somewhat spicy, with hints of floral notes.

The taste can vary from blend to blend depending on various spices and ratios of each added. For or instance, here I like to add fennel seeds which adds faint hints of black licorice and bay leaves that add an ever so light herbal taste. They aren't always typical but I like that extra something.

Recommended Spice Storage

  • Garam masala should be stored in a well sealed airtight container, in a cool dry place away from sunlight.
  • For optimal flavor it should be used within 6 months.
  • You can up-cycle and use an old empty spice jars, or if you don't have any you can buy the same spice jar set I have HERE (as pictured above). It includes tons of pre-printed labels (and plenty of blank labels too).
  • I recently organized my spice drawer and bought this expandable spice drawer rack too HERE, if you're interested (just be sure to measure to ensure it will fit). It's been a game changer in quickly finding the spices I need for cooking.
