It has a nice light herbiness to it and it gets it's creaminess from the starches of the rice and the use of eggs blended into the broth.

We love it paired with a side salad and fresh made pita bread, but fresh rustic bread drizzled with good olive oil is also another tasty pairing option for a basic yet delicious, hearty and carby, get feeling better meal.

The Best Harvest Bowls

This recipe is a copycat recipe with inspiration from Sweetgreen's harvest bowl but with what I consider a few even more delicious additions.

In place of balsamic dressing I found honey lemon dressing tasted better and was more fitting, feta was overall more preferred among tasters versus goat cheese, and Brussels sprouts add one more veggie and will help get more servings out of it. Pan seared chicken was also used in place of roasted for a quicker option.

Simply put we are obsessed with these meal in one bowls, they are one of the tastiest healthy fall recipes and we just can't get enough of them! Once you try them you may just start making them weekly like we are lately, and you can switch them up with different toppings (see ideas below).

They are loaded to the max with flavor and wholesome goodness. They make an excellent dinner and leftovers are perfect for meal prep for lunch the following day.

How could you go wrong with deconstructed sushi salad piled high in a bowl? It's destined to be a new go-to weeknight recipe for you!

You get a slightly sweet, slightly tangy, tender sushi rice, and atop is a blend of crab (or imitation crab meat), crisp fresh veggies including carrots, cucumber, and buttery avocado. Then there's also umami-rich nori, flavorful pickled ginger, a salty soy finish, creamy and spicy sriracha mayo, then buttery little sesame seeds to finish it off with more texture.

Talk about an explosion of flavor in every bite!

Stuffed Poblano Peppers

Many of you have had classic stuffed peppers and these are similar but with a Southwestern flavor and poblano peppers (aka pasilla peppers) are used instead of bell peppers. Plus these are a bit of a healthier option too.

They come together easily and no boiling is required beforehand. You'll just bake the peppers until they start to soften and while they bake you make the filling in a skillet on the stovetop. Then stuff the peppers and finish them off in the oven.

You really don't need much else to serve with them, though if you wanted something else you can't go wrong with tortilla chips, salsa and guacamole.

The key here is just to find the larger poblano peppers at the grocery store (those little ones wont fit much filling), and I like to find some that will sit flat on each side if possible.

Homemade Shrimp Fried Rice

This easy shrimp fried rice recipe is a classic stir-fry favorite! It's completely delicious and easily worthy of being included in your dinner rotation on repeat.

I've made this version to be generous with the vegetables including carrots, onions, peas, bell pepper and cilantro. And you'll also find a fair amount of shrimp to make it more of a meal in one.

The important thing to note here (as with just about any fried rice recipe) is that you'll want to use leftover rice from the day before so it will soak up the moisture and doesn't end up soggy. In other words plan ahead if you don't usually have some on hand.

The chopping will take a bit of time but from there it's a total breeze and it cooks quickly. And when it's done to make it spicy finish your serving with Sriracha to your hearts content.
