I know what most of you are probably thinking. Black bean tacos. BORING! My family was thinking the same thing until I made these.

My kids were hoping I was making the same ground beef tacos and were sad to hear it "we're having black bean tacos for dinner" but after one bite everyone was raving about how good they are!

You get deliciously seasoned black beans (which are canned and there for already pre-cooked, thank you shortcuts) and they're tossed with salsa it all get's a quick simmer. And to finish it's layered over tortillas with a bright and creamy avocado cilantro lime crema and garnished with all your other favorite toppings.

Baked Creamy Chicken Taquitos

Who doesn't love the taquitos? They're like mini rolled tacos and you can fill them with all your favorite meats or vegetarian fillings (like beans and roasted vegetables).

Most commonly taquitos are deep-fried in oil but I highly recommend trying out this oven-baked version instead.

I used to be skeptical myself, thinking there's no way a baked version is going to be anywhere near as good or as crisp as a fried version, but these prove that thinking wrong. These are just as good without the greasy mess and extra fat!

This is a flavorful Mexican dish that your whole family can enjoy! They make a great party food or weeknight main dish. Just don't forget to pile on the bright fresh toppings (or serve to the side for dipping) it just makes them that much better.

Easy Homemade Taco Salad Recipe

I've been eating taco salad as long as I can remember. Of course as a kid, in the 90's, my mom made the Dorito version and of course we loved that but now I prefer to make it with more natural chips.

Taco salad is one of the ultimate weeknight recipes. When there's not much time to make something taco salad is a great option, especially this version which uses ground beef (no dicing up chicken or beef), bottled salsa to add lots of flavor without the prep, and pre-shredded cheese.

Want to Make it Healthier?

  • Use ground turkey in place of ground beef (avoid super lean turkey though like 99%) or even swap half pound of the beef for a can of drained and rinsed black beans.
  • Make your own baked tortilla chips. To do so brush corn tortillas with olive oil, season with salt then cut into wedges, bake on greased cookie sheet about 10 - 15 minutes until lightly golden brown, turning once halfway.
  • Use light sour cream or omit. Same with the cheese.
  • Add more veggies to the salad. Bell pepper, corn, or radishes are great options.

A Healthier Taco Salad

Long live taco salads! I grew up on taco salad - of course it was the classic Doritos taco salad that everyone was eating in the 90's and yes sometimes I still crave that but I prefer this healthier version by far!

Here I've made a taco salad filling with lean ground turkey, black beans, tomato paste, chicken broth and plenty of Southwestern seasoning so even though it's not made with beef it is still packed with flavor and you won't even miss the beef.

Who doesn't love the classic fajitas for dinner? So why not switch things up a little and make them breakfast style?

These are like breakfast tacos meet fajitas but you'll love the delicious addition of sautéed peppers and onions in them.

You just can't go wrong with a soft flour tortilla loaded with cheesy scrambled eggs and ham and those lightly charred veggies, then finishing all of that goodness off with a fair amount of avocados. And let's not forget about the final crowning of salsa, pico or hot sauce, because you've always got load up a fajita or taco right?

How to Make Breakfast Fajitas

Here's a breakdown of the easy steps to preparing these fajitas:

  1. Season and whisk eggs in a bowl.
  2. Heat oil in a cast iron skillet. Saute peppers onions, set aside.
  3. Cook eggs in same skillet.
  4. Heat ham, and add cheese to mixture.
  5. Layer warmed tortillas with egg mixture, avocado, and salsa or pico and serve.

Breakfast Fajitas

Such a tasty Tex-Mex breakfast taco recipe! Tortillas are layered with scrambled eggs, ham, sauteed peppers and onions, cheese, fresh avocado and salsa. So delicious!

  • 8 large eggs
  • 1/3 cup milk
  • Salt and freshly ground black pepper
  • 2 Tbsp vegetable oil
  • 2 small bell peppers ((any color), cored and sliced into strips)
  • 1 small yellow onion (, halved and sliced into strips)
  • 1 cup chopped ham ((I used a ham steak))
  • 1 cup shredded Mexican blend cheese
  • 8 6- inch flour tortillas (, warmed)
  • 2 medium avocados (, chopped or sliced)
  • Salsa (, lime wedges, fresh cilantro or hot sauce, for serving (optional))
  1. In a mixing bowl whisk together eggs and milk until well blended and season with salt and pepper, set aside.
  2. Heat 1 Tbsp oil in a large cast iron skillet over medium-high heat. Add peppers and onions, season with salt and pepper, and saute, tossing occasionally, until tender crisp and slightly charred.

  3. Pour into a bowl, and set aside. Return skillet to heat, reduce burner to medium-low. Pour in remaining 1 Tbsp oil and swirl pan to evenly coat.

  4. Add eggs and cook, stirring and scraping bottom constantly with a turner, until eggs just begin to set.

  5. Push eggs to one side, add ham to opposite side and heat through then toss into eggs. Add cheese and cook until eggs have just set.

  6. To assemble fajitas, layer warm tortillas with egg mixture, top with bell pepper mixture then avocados, and desired toppings. Serve immediately.

There are many different variations of Mexican lasagna, there's the enchilada lasagna, the ground or shredded beef Mexican lasagna, or a chicken and white sauce Mexican lasagna, but this time around I decided to go with a chicken, corn and salsa version.

Despite the long list of ingredients, this one is so easy to make and it's loaded with delicious South Western inspired flavors.

How do You Make Mexican Lasagna?

  • Preheat oven to 350 degrees.
  • In a bowl mix sour cream, 1 cup salsa, green chiles, cilantro, spices and shredded chicken.
  • Spray baking dish with cooking spray and spread 1/3 cup salsa evenly in bottom of dish.
  • Layer 15 tortilla quarters evenly over salsa.
  • Spread 1/2 of the chicken mixture evenly over tortilla layer the sprinkle 1/2 cup corn evenly over chicken mixture layer.
  • Spread 1/2 cup Monterey Jack and 1/2 cup Cheddar evenly over corn layer, the repeat layering process once more.
  • Cover with foil bake 40 minutes, then remove foil and bake 20 minutes longer.
  • Serve with toppings.
