Filling Thai Chicken Lettuce Wraps

These Thai Chicken Lettuce Wraps are everything you'd want them be and then some! They have well rounded flavor, you'll find them easy to make, and they have the perfect crunch factor thanks to the tender crisp veggies, lettuce, and peanuts.

The chicken (or turkey) keeps them nice and filling but if you want an even heartier meal you can serve these with a side of rice.

You can adjust the sauces here to suite your taste. If you like the flavor of fish sauce you can add more. If you love heat load them up with the Sambal Oelek or Sriracha. And for more peanut flavor be sure to try them finished with a creamy peanut sauce (it so delicious and worth the extra bit of effort).

I know it's a fairly lengthy list of ingredients here but I don't recommend leaving any out. Everything comes together beautifully to create a truly tasty, veggie and chicken-filled lettuce wrap that you'll want to make on repeat.

Healthy Szechuan Chicken Stir Fry

It's been a few months since I've made a stir-fry, and summer is the best time to make them so here we are! A quick and flavorful stir-fry that's perfect for those fresh summer peppers and snow peas. Plus it's an entree your whole family will enjoy!

There are so many things I love about this stir fry, but first off let's talk about the peanuts. Those to me are the highlight of this healthy stir-fry (which may seem funny because they're just a finishing touch), but I just can never get enough of that peanuty crunch on Asian food. Addictive!

Which is why I used 1/2 cup — let's not be skimpy, right? Another thing I love is the sesame oil and sambal oelek; the first brings loads of flavor while the second gives it that crave worthy heat (and you better believe I was spooning plenty more over my serving).

There is plenty of sauce in this chicken stir fry, because aren't saucy stir fries the best? The Szechuan sauce is slightly weet, slightly salty, perfectly spicy, and the sesame oil adds so much flavor!

Just don't leave out the cornstarch. Even though it's a small amount, it has strong thickening properties and the sauce would be like water without it.

And of course I love the fact that everything is cooked in one skillet and that I already have most of the ingredients on hand at all times (the only thing I don't always have on hand are the veggies, everything else is a staple in my house).

So while it does look like a long ingredients list, don't worry! You probably have most of it too. If you like Asian food, then this Szechuan chicken stir fry is one to add to the rotation.

Szechuan Chicken Stir Fry Ingredients

For the Szechuan sauce, you'll need:

  • Chicken broth
  • Soy sauce
  • Sesame oil
  • Sambal oelek
  • Rice vinegar
  • Granulated sugar
  • Cornstarch

And for the healthy chicken stir fry, you'll need:

  • Boneless, skinless chicken breasts
  • Olive oil
  • Salt
  • Yellow onion
  • Fresh ginger
  • Garlic
  • Red and yellow bell peppers
  • Snow peas
  • Roasted peanuts
  • Sliced green onions, sesame seeds, and rice (for serving)

How to Make Szechuan Chicken Stir Fry

  • Whisk together all the Szechuan sauce ingredients and set aside.
  • Add diced chicken to hot skillet and cook until no longer pink inside. Transfer to a plate.
  • In the same skillet, sauté onion, ginger and garlic until fragrant. Add bell peppers and snow peas and sauté another 2 minutes.
  • Pour sauce over veggies and cook until slightly thickened.
  • Stir in chicken and cook until warmed through.
  • Serve over rice and top with sesame seeds, green onions and peanuts.

Can I Use Ground Chicken in This Stir Fry Recipe?

Ground chicken would also work! You'd still need to brown the chicken and transfer it to a plate while the veggies cook, though.

Can I Use Another Sweetener in the Sauce?

Yes, honey would give you a similar flavor and wouldn't overpower the sauce.

Can I Use Flour Instead of Cornstarch to Thicken the Sauce?

I wouldn't recommend doing that, because you'd need more flour to do the same job. Cornstarch really is best in this healthy chicken stir fry.

Tips for the Best Szechuan Chicken Stir Fry

  • This Szechuan chicken stir fry is great for meal prepping. Store the rice and stir fry mixture separately and reheat throughout the week!
  •  Add more or less sambal oelek to the chicken stir fry, depending on how spicy you want it to be.
  • Be careful not to over cook the chicken, as you don't want it to dry out.

Szechuan Chicken Stir-Fry

Sauce

  • 3/4 cup low-sodium chicken broth
  • 3 1/2 Tbsp soy sauce
  • 1 1/2 Tbsp sesame oil
  • 1 1/2 Tbsp sambal oelek ((use more or less to taste))
  • 1 Tbsp rice vinegar
  • 1 Tbsp granulated sugar
  • 4 tsp cornstarch

Stir Fry

  • 1 1/4 lbs boneless, skinless chicken breast, (cut into 1-inch cubes)
  • 2 Tbsp olive oil, (divided)
  • Salt
  • 1/2 of a medium yellow onion, (sliced from top to root)
  • 1 Tbsp peeled and minced fresh ginger
  • 3 cloves garlic, (minced (1 Tbsp))
  • 1 yellow bell pepper, (diced into short strips)
  • 1 red bell pepper, (sliced into strips)
  • 1 1/3 cups diagonally sliced snow peas
  • 1/2 cup unsalted roasted peanuts, (chopped)
  • Sliced green onions, (sesame seeds, and prepared rice, for serving)
  1. For the sauce: In a small mixing bowl whisk together chicken broth, soy sauce, sesame oil, sambal oelek, rice vinegar, sugar and cornstarch until well combined, set aside.
  2. For the stir-fry: Heat 1 Tbsp oil in a 12-inch non-stick skillet over medium-high heat. 
  3. Add chicken, season lightly with salt (about 1/4 tsp) and cook, turning occasionally until chicken has cooked through (center should register 165), about 6 minutes. 
  4. Transfer to a plate. Heat remaining 1 Tbsp oil in skillet.
  5.  Add onion, ginger and garlic and saute 1 minute. Add in bell peppers and snow peas and saute 2 minutes. 
  6. Whisk sauce mixture once more then pour into skillet over veggies. Cook and stir until sauce has thickened and veggies are tender, about 2 minutes. 
  7. Toss in chicken and warm through, season with salt if needed. Serve warm over rice topped with peanuts, green onions and sesame seeds.

Thai Basil Beef Bowls

So I've decided I need more Thai food in my life. It's so uniquely flavorful and it always leaves me craving more.

These hearty Thai Basil Beef Bowls are no exception to that! It's a quick meal to throw together and it's jam-packed with amazing flavors! You'll love the way the sauce compliments the beef and the bold flavor of all the fresh basil used here (if you ask me fresh basil is one of the best ingredients known to mankind). You may also know this recipe as pad gra prow, pad kra pao, or even pad krapow depending on the restaurant and region.

If you haven't tried much Thai food here is a great place to start. It doesn't use loads of fish sauce, just enough to give it a nice depth of flavor, and it is an easy-to-follow straightforward recipe. This Thai Basil Beef recipe is gluten-free, but serving it over rice or noodles is delicious. Using a wok is best, but a large pan will suffice.

And once you buy the ingredients to make the sauce there are so many other Thai recipes you can use those ingredients for (like these Thai Chicken Tacos, or this easy Chicken Chow Mein, or this Chicken Pad Thai. All of them are delicious btw). Add this to your list of easy stir-fries that you can whip up on a busy weeknight, and don't be afraid to mix up your meats—ground beef instead of thin steak, pork, ground chicken, or turkey. For a vegetarian option, go for tofu, mushrooms, zucchini, and a fried egg on top!

Thai Basil Beef

Thin pieces of tender steak are seared in a hot skillet, then bright fresh veggies are sautéed and you'll toss the two together along with a deliciously flavorful sauce. Then serve over steamed jasmine rice to complete the dish. A quick weeknight dinner you'll love!

  • 1 1/4 cups jasmine rice or long-grain white rice for serving
  • 1 lb top sirloin steak, ribeye steak or flank steak, (sliced against the grain into thin strips)
  • 1 tsp cornstarch
  • 2 Tbsp + 1 tsp vegetable oil
  • 1 red bell pepper, (cored and seeded, diced into 2-inch strips)
  • 1/2 large yellow onion, (thinly sliced)
  • 1 1/2 Tbsp minced garlic
  • 1 cup matchstick carrots
  • 1 cup fresh Thai basil or Italian basil leaves ((roughly chop larger leaves), plus more for garnish)
  • Sesame seeds ((optional))

Sauce

  • 3 Tbsp low-sodium soy sauce
  • 1 1/2 tsp cornstarch
  • 1/3 cup water
  • 1 1/2 Tbsp fish sauce
  • 1 Tbsp oyster sauce
  • 2 Tbsp packed brown sugar
  • 1 Tbsp fresh lime juice
  • 1 Tbsp Sambal Oelek, (or more to taste (optional))
  1. Prepare rice: Cook rice according to directions listed on package.

  2. For the sauce: In a small mixing bowl whisk together soy sauce and cornstarch until smooth. Stir in water, fish sauce, oyster sauce, brown sugar, lime juice and Sambal Oelek if using, set aside.
  3. For the beef: Toss beef with 1 Tbsp oil and 1 tsp cornstarch. Heat 1 Tbsp oil in a large skillet over moderately high heat. Add half of the beef and cook until browned on both sides but still slightly under-cooked in the center. Transfer beef to a plate while leaving oil in skillet and repeat with remaining 1 Tbsp oil and remaining half of the beef.

  4. For the veggies: Reduce heat slightly, add bell pepper, onions and garlic and saute until crisp tender, about 2 - 3 minutes (if needed you can add another 1 tsp of oil to the skillet). Add carrots and whisk sauce mixture once more then pour into skillet. 

  5. Allow sauce to simmer, stirring frequently, until thickened, about 1 minute. Return beef to skillet along with basil leaves, toss until basil has just wilted. Serve immediately over cooked rice garnished with small basil leaves and sesame seeds if desired.
