What is Orecchiette?

Orecchiette is a type of southern Italian pasta shaped like little ears. The word 'orecchia' translates to 'ear' while the suffix 'etta' translates to 'small' or 'little'.

It is made from semolina flour and can be found in two sizes, but in the U.S. usually just one size (in this recipe we use the larger size that's about 1/2-inch, the smaller works well for soups).

Orecchiette holds sauces well with it's bowl form, and it's a fun unique shape to cook with.

You can purchase it online, or I've also found this type of pasta at Target and larger Kroger stores.

Flavorful Sausage Soup

Who knows how many soup recipes are already here on Cooking Classy but that list will never end.

Soups just warm the soul. Especially as it gets colder and colder out and as the days seem to grow shorter with a lack of the glowing suns rays, even by dinnertime (anyone else already wanting to be in bed by 7 these days?).

This soup is a combination of a few of my favorites, while the leading ingredient is Italian sausage. It brings so much flavor to this simple soup and doesn't require hours of simmering to build up flavor.

It's an easy soup that's perfect for a busy day. And there are a lot of ways to adapt the recipe and use up what you've got on hand. I'll share all plenty of ideas below.

What is Jambalaya?

Jambalaya is a famous New Orleans dish with Spanish, French and African influence (inspiration coming from dishes such as paella, jollof and jambalai). It's a one pan homestyle dinner with a rich history.

Most commonly it consists of andouille sausage, chicken or pork, and seafood such as shrimp or crawfish. Then also included is a sofrito blend of vegetables (bell pepper, onion, and celery) and white rice. And everything cooks together making it an easy and flavorful recipe.

You may be wondering, what is the difference between jambalaya and gumbo? The two dishes are very similar but a main distinction is that with gumbo it is served over rice while with jambalaya the rice is mixed right in and cooked with everything else. Gumbo is more stew-like and it usually takes hours of simmering whereas jambalaya can cook in under an hour and is drier.

You can't go wrong with either but today it's all about the jambalaya! Isn't it just fun to say? I mean it would have to taste good with a name like that!

Homemade Breakfast Burrito

Breakfast burritos are one of my favorite splurge breakfast recipes. Though normally I don't make them for breakfast - more often than not we actually eat them for dinner.

Really these are good served any time of day. Breakfast, lunch, or dinner they're always sure to satisfy.

There may be a few steps to cooking each of these various layers but I'm telling you the end result is so worth it!

Just work to keep each ingredient warm for best results (my tip is to wrap in foil while you move on to the next ingredient and keeping eggs warm in the skillet) or reheat burritos briefly in the microwave before serving. No one wants to bite into a cold burrito.

Another option, if you have multiple skillets have multiple ingredients cooking at once, that way they'll be ready faster too.

And feel free to mix up the fillings. Breakfast burritos are so versatile. You can add refried beans, add a different protein like steak or ham, try them with roasted vegetables, or try replacing the sautéed pre-cut hash browns with crispy roasted breakfast potatoes.
