The Easiest Caramel Recipe Ever!

Oh the things you can make in the microwave! Honestly though, I don't know if it gets much better than this one, caramel made in the microwave. I got this recipe from my mother-in-law and it is one of my favorite recipes ever!

This is caramel made easy and they taste completely perfect. She's used this recipe for about 30 years and she said everyone she gives the recipe to absolutely loves it and I can see why.

She also said it's so easy that her kids always used to make it when they were younger (adult supervision required here though people, this bowl gets HOT!). And now my kids love to help me make it, and we've been using the recipe for 4 years.

I've added a few minor changes to the recipe, like adding some vanilla and adding Maldon sea salt, add them if you've got them otherwise feel free to leave them out.

Try a batch this weekend, you'll be amazed!

I've already made these three times in the last three weeks, my family absolutely loves these and I love that they are quick treat!

Believe it or not my mom who is crazy about dark chocolate actually liked the white chocolate ones better so be sure that you try both versions at one point or another.

One thing I love about these is that the chocolate ones taste like those chocolate oranges you buy during the holidays - but so much better. And the white ones taste like a an orange creamsicle - but again, even better.

I mean once you start popping these things it's hard to stop. But they are like 66% fruit so that makes them about 66% healthy right :)?

Really though these are a better choice than the towers of cookies everywhere. But don't turn down the cookies this time of year, it happens once a year so enjoy the towers of cookies everywhere!

Tips for This Recipe

One important thing to note is that these should be served right away, as I listed in the recipe. The reason being is because the oranges may start to dry out - or maybe that's just me because I'm in a dry climate.

But I think that's pretty common for citrus in general in any climate.

You can lightly brush the un-dipped portion with a little water but it's a tedious task so I recommend that you just dip in chocolate about 10 minutes before you plan on serving them.

White Chocolate and Chocolate Dipped Mandarin Oranges

These sweet and tangy chocolate covered oranges slices are the perfect last minute treat for a party or gift! They are so easy to make, they only require TWO ingredients (plus sprinkles or salt if desired), and people of all ages love them!

  • 4 oz dark chocolate or milk chocolate (, chopped)
  • 4 oz white chocolate (, chopped)
  • 6 - 7 large mandarin oranges (, peeled and segmented (about 1 1/2 lbs)*)
  • Coarse or flaked sea salt ((optional))
  • Multi-color sprinkles ((optional))
  1. Line 2 baking sheets with parchment paper. Place white chocolate in a microwave safe bowl. Heat in microwave in 20 second intervals, stirring well between intervals until melted and smooth. 
  2. Dip half of the mandarin orange slices in white chocolate, dipping halfway, then lift and and let excess run off. Transfer to prepared baking sheet. Sprinkle with sprinkles if desired before white chocolate starts to set.
  3. Place dark chocolate in a separate microwave safe bowl. Heat in microwave in 20 second intervals, stirring well between intervals until melted and smooth. 
  4. Dip remaining half of the mandarin oranges in chocolate, dipping halfway, then lift and let excess run off. Transfer to lined baking sheet, sprinkle lightly with sea salt if desired. 
  5. Transfer baking sheets to refrigerator and chill just until chocolate has set, about 5 - 10 minutes. Serve immediately for best results.
  1. *I recommend using larger mandarins if you can find them, sometimes the Cuties are bigger than other brands. If using the itty bitty ones you'll probably need twice as many.
  2. Serve immediately for best results as the oranges tend to dry out once peeled.

I mean I normally have a really hard time picking favorites but these cookies are definitely one of the best I've made this whole year and that's saying something because I've made a lot of cookies I've really, really loved.

There's just something about these though. The coconut, the salted caramel, the melt-in-your-mouth buttery goodness. These cookies speak to me. In other words someone please hide them!

I just had to quickly take most of them to neighbors because I knew I couldn't resist these ones (then I later heard from my neighbor that she hid them away for herself lol. She had the same problem as me).

There are a few extra steps with these since they need to be rolled, indented and filled but those couple of extra steps make them an over-the-top, worthy of any holiday, kind of cookie. To keep them things from getting too messy, I like to use one hand for rolling in the egg, then the other for rolling in the coconut - kind of like when you bread chicken.

Another thing that helps is to press the coconut onto the cookie to help it adhere, if you just roll it through the coconut it doesn't stick all that well. And I chose to just chill these cookies directly on the baking sheets, but you can definitely chill them on plates or in containers if you don't have room for two sheet pans in your fridge.

Then just transfer them to the baking pans after they've chilled and bake as directed.

Obviously a highlight of the cookies is the course sea salt. I've got salt on my mind lately since last week I had the opportunity to attend Morton Salt's Next Door Chef event in New Orleans along with several other guests. It was a fun dinner experience where they converted someones home into an actual pop-up restaurant for a day.

Of course,  my favorite part of the meal was the Coconut Caramel Budino with Grilled Mangos and Morton Kosher Salt which was served for dessert. It was dreamy so I knew I needed to use that combination again to make something for the holidays, and that's how these cookies came about.

Acclaimed chef Nina Compton coached a home cook and then this cook prepared an incredible meal for us in which different types of Morton salt were used. At the event we tried a number of inspiring dishes where we could taste how different types of salt transformed each dish, from appetizer and drinks, to side dish, to the main dish and then onto dessert.

Salted Caramel Coconut Thumbprint Cookies

Tender buttery thumbprint cookies are coated with sweet shredded coconut and filled with salty decadent caramel. Such a delicious cookie recipe!

Cookies

  • 1 3/4 cup (150g) sweetened shredded coconut
  • 1 large egg
  • 1 cup (226g) unsalted butter, (cold and diced into small cubes)
  • 1/2 cup (108g) granulated sugar
  • 1/4 tsp Morton Fine Sea Salt or table salt
  • 2 tsp real coconut extract
  • 2 cups (283g) all-purpose flour

Filling

  • 28 (226g) soft caramels, (such as Kraft)
  • 3 1/2 Tbsp heavy cream
  • Morton Coarse Sea Salt, (for topping)
  1. For the cookies: Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper or silicone baking mats. 

  2. Add coconut to a small mixing bowl. Add egg to a separate small mixing bowl and whisk well until blended. Set aside.
  3. Add butter and sugar to the bowl of an electric stand mixer fitted with the paddle attachment. Sprinkle fine salt evenly over butter and sugar then mix on medium-low speed until well combined.

  4. Mix in coconut extract. With mixer on low speed slowly add in flour and mix just until combined.

  5. Scoop dough out in 1 even tablespoon at a time and shape into balls. Roll each dough ball in egg mixture then in coconut mixture (press coconut onto cookies to help it stick better). 
  6. Transfer cookies to prepared baking sheets spacing at least 1-1/2 inches apart. Make indentation in each cookie with thumb or forefinger. Transfer baking sheet to freezer and chill for 10 minutes, or refrigerate 30 minutes. 
  7. Transfer 1 baking sheet to oven and bake for 10 minutes. Remove from oven and re-indent cookies using the back of a rounded 1/2 teaspoon*. 

  8. Return cookies to oven and continue to bake 6 - 9 minutes longer until the coconut is golden brown on edges and cookies have baked through. Cool on pan for several minutes then transfer to a wire rack to cool completely.
  9. For the caramel filling: Add caramel to a medium microwave safe bowl. Pour in cream. Heat mixture in microwave in 30 second intervals, stirring well between intervals until melted and smooth.
  10. Spoon caramel into indentations in cookies. Sprinkle caramel lightly with sea salt before it starts to set. Store cookies in an airtight container at room temperature.

  •  At this point, if the coconut is browning too much your oven probably cooks too hot, but you can just tent the cookies with foil and proceed as directed.

From what historians have found apparently the pie goes way back to 1800's with the earliest dated recipe showing 1886 (but some would say earlier than that). So this humble pie has some history and it's here to stay.

And for good reason! This pie is brimming with nutty flavor, it's deliciously buttery and this sweet creamy filling just makes your tastebuds sing!

Ingredients You'll Need for This Recipe

  • All-purpose flour
  • Sugar
  • Sea salt
  • Unsalted butter
  • Pecans
  • Brown sugar
  • Cinnamon
  • Light corn syrup
  • Eggs
  • Vanilla extract

How to Make Pecan Pie

  • Prepare pie crust then blind bake it (so it's not soggy after adding wet filling).
  • For the filling: sprinkle 1 cup chopped pecans into pie crust, then sprinkle in 1 cup whole pecans.

  • Mix in butter, corn syrup, eggs and vanilla extract (there should be no streaks of egg).

Pecan Pie

The perfect pecan pie recipe! It starts with a buttery, flaky blind baked crust and it's filled with the most irresistible, rich pecan filling. A classic Thanksgiving pie people will love! 

Crust

  • 1 1/4 cups (160g) all-purpose flour
  • 2 tsp sugar
  • 1/2 tsp fine sea salt
  • 1/2 cup (113g) unsalted butter, ( cold and diced into small cubes)
  • 3 - 5 Tbsp ice water

Filling

  • 2 cups (214g) Fisher Pecan Halves, divided
  • 1 cup (220g) packed light-brown sugar
  • 1/2 tsp fine sea salt
  • 1/8 tsp ground cinnamon
  • 1/3 cup (73g) unsalted butter, (melted and cooled to lukewarm)
  • 3/4 cup Karo Light Corn Syrup
  • 3 large eggs
  • 1 1/2 tsp vanilla extract
  1. For the crust: In a mixing bowl whisk together flour, sugar and salt. Add butter and cut into flour using a pastry cutter or a long pronged for until mixture resembles coarse meal with small visible chunks of butter. 
  2. Add 1 Tbsp of water at a time and fold with a rubber spatula, while adding just enough water until mixture has almost fully come together and is in moist clumps. 
  3. Gently press dough together and shape into a 6-inch round disk, wrap in plastic wrap and chill 45 - 60 minutes until nearly firm.
  4. Dust a clean work surface with flour and roll crust out into a 12-inch round. Fold dough in half then fold in half once more, transfer to a 9-inch pie dish with the folded corner of the dough in the center of the pie pan. 
  5. Carefully unfold dough and fit into dish. Trim excess crust coming within about 3/4-inch of the pie dish. Tuck that excess under crust and flute or decorate as desired. 
  6. Pierce bottom and sides of the crust all over with a fork. Transfer to freezer and chill 15 - 20 minutes until firm*. Meanwhile preheat oven to 400 degrees.

  7. Place pie on a baking sheet. Fit two layered sheet of foil snugly against the pie crust (but being careful not to smash decorative edge but still covering loosely), fill with 2 lbs of dry beans**. 

  8. Bake crust on baking sheet in center of oven 15 minutes. Remove from oven. Lift out beans using foil. Return to oven and to bake 10 minutes longer. Reduce oven temperature to 350 degrees.
  9. For the filling: Chop 1 cup of the pecans then sprinkle evenly into pie crust. Sprinkle 1 cup whole pecans over chopped layer. Set aside.
  10. In a mixing bowl whisk together brown sugar, salt and cinnamon. Mix in butter, corn syrup, eggs and vanilla extract (there should be no streaks of egg). 
  11. Pour mixture evenly over pecan layer in crust. Transfer pie to a baking sheet. Bake in lower portion of the oven, covering edges or tenting entire top of pie with foil as needed***. 

  12. Bake until pie is set, about 45 - 55 minutes (it should appear set when you nudge the baking sheet, a very light giggle is fine). 
  13. Transfer to a wire rack and cool completely. Store in refrigerator until ready to serve.
  • *I recommend using the homemade crust recipe list but I'm guessing some of you may prefer to just use a store-bought crust. If so doing then par-baking the crust wouldn't be necessary, just fill then bake as directed once filled.
  • **Pie weights or even granulated sugar can be used here as well.
  •  ***I covered the edges of my pie shortly after putting it in so they didn't brown too much, then I had to tent the entire pie to prevent the top from over-browning at about 40 minutes.

I made mine with only one layer of bananas over the pastry cream layer and I decided they definitely needed a second one underneath (after I'd already piped mine out.

Really I just under-estimated how much pastry cream I actually had I wanted another layer but I was way off) so your pastry cream layer may look just a little bit thicker than mine since the bananas on bottom will take up some of that space and they may end up a little taller in the end too, but not by much.

I used homemade salted caramel sauce which I highly recommend and I've linked to the recipe for that in the recipe below.

Of course you can use your favorite store bought salted caramel sauce if you don't have time to make it. If you wanted to do a super cheater version here of this same idea you could do all the short cuts, it obviously just won't be as good.

I mean, I expected these to be good because they are made of all the good stuff, but they even exceeded my expectations! They were so dreamy and then some! Could I add any more exclamation points??!!

I really, really love these. If you like salted caramel you will love these too. I mean really what's not to love here?

I made these twice because I found out the hard way the first time that as some recipes may suggest to whip the egg yolks until they are light and fluffy (which I did, by hand for several minutes until it was that lovely creamy, pale consistency).

If doing that you'll find in the end you get all these air bubbles, foam layers just float up to the tops of the pots and give them this strange, not-so-appealing appearance once they're baked.
