What is Creamed Spinach?

Creamed spinach is a popular recipe in the Unite states that's commonly served at steakhouses. It is made with an abundance of cooked wilted spinach that's coated in a cream based béchamel sauce and often includes flavorings such as onions and cheese.

It is served as a side dish and can be made with fresh or frozen spinach.

Here we went with all the best upgrades including sticking to fresh spinach for the freshest flavor, and using two kinds of cheese along with a fair dose of cream and butter.

It's very easy to make and one of the best ways to use up an abundance of spinach! It's elegant enough for a holiday gathering yet easy enough for a weeknight meal.

Who doesn't love a recipe that makes the mark to be tasty enough for the holidays with a hint of gourmet elegance, yet it's easy enough for a weekday? This chicken Florentine is just that!

It comes together quickly since it's pan-fried on the stovetop but it tastes impressive enough to serve to guests.

You'll find that the sauce has layers of flavor thanks to the white wine, shallot, parmesan cheese, garlic, and an abundance of spinach. Plus there's plenty of sauce so you can have extra for dipping with fresh bread or pairing with pasta alongside the chicken. You can even feel good about it since there's so much fresh baby spinach to balance the carbs and creamy sauce.

A helpful tip and reminder whenever cooking chicken breasts, just cook them right to 165 degrees in the center so you end up with juicy, tender chicken breasts (if overcooked they become dry and chewy, I highly recommend using an instant-read thermometer to test for doneness).

I think for many the go to ways to cook green beans are to boil, steam and roast them. But after trying this simple skillet method though you'll probably realize sautéing green beans hasn't gotten the attention and praise it deserves.

I'd say it's easily one of the best ways to make them! Once you try them you may likely be thinking "Who knew green beans could be so good?" And you can have them crisp-tender and ready in under 15 minutes! It's the perfect side dish.

Even the kids might come to enjoy "those green things" on their plate rather than turning their noses to another vegetable. Nutrition for the win!

Chicken Marinade Recipe with Triple Citrus

Every summer it's all about those chicken marinades right? Because who likes bland and boring chicken without some extra flavor?

This marinade is incredibly easy to make! Don't be intimated by that list of ingredients, you can see in the ingredients photo below it's actually not much and you probably have a lot of what you'll need already.

Thanks to using all that fresh citrus, both juice and zest, you get a deliciously summery marinade you'll want to make time and time again.

You'll love that it's not overwhelming like some of those vinegar based chicken marinades can be. The splash of citrus is a nice welcome touch that always enhances the flavors of chicken.

Another fun way to use this marinade is to make grilled chicken skewers, instead of using whole chicken pieces cut into 1-inch cubes, marinate then thread onto skewers and grill.

Ingredients Needed for the Salad

  • Bacon
  • Fresh Brussels sprouts
  • Fresh parsley
  • Pecans
  • Pears
  • Gorgonzola cheese
  • Shallot

Ingredients Needed for the Dressing

  • Olive oil
  • Bacon drippings
  • Lemon
  • Dijon mustard
  • Maple syrup
  • Salt and pepper

How to Make Brussels Sprout Salad

  • Cook bacon in a skillet. Transfer bacon to lined plate and reserve rendered bacon drippings for dressing.

  • In a large bowl toss together Brussels sprouts, cooked bacon, parsley, pecans, pears, gorgonzola and shallots. Toss with dressing and serve.

How to Make the Dressing

  • Whisk together all dressing ingredients in a mixing bowl or shake together well in a jar. Stir or shake again just before pouring onto salad.
  • Note if it's chilled it will need to be warmed just slightly as the bacon drippings solidify once chilled.

Can I Make This Salad in Advance?

Once you add the dressing the salad will hold up well for about an hour - but keep in mind the pears edges can brown so if you want to add dressing to soften up the Brussels sprouts a little first just wait to add those pears until later.

You can definitely shred the Brussels sprouts one day in advance though and make the dressing a day in advance (then gently rewarm as the bacon grease will solidify.

Can I Use a Different Kind of Cheese?

Goat cheese would work well hear or feta would be another good option.

Pear Bacon and Brussels Sprout Salad

Pear Bacon and Brussels Sprout Salad

A delicious autumn pear salad that's brimming with bacon, nutty toasted pecans, tangy gorgonzola cheese, all with a base of finely shredded raw brussels sprouts. So delicious! 

  • 6 slices (6 oz.) bacon, (chopped )
  • 14 oz. brussels sprouts, (bottoms trimmed, shredded*)
  • 1/2 cup sliced fresh parsley
  • 1 cup pecans, (toasted and roughly chopped)
  • 2 bartlett pears, (cored and diced small)
  • 1/2 cup gorgonzola cheese**
  • 2 Tbsp minced shallot

Dressing

  • 3 Tbsp olive oil
  • 2 Tbsp rendered bacon drippings
  • 2 1/2 Tbsp fresh lemon juice
  • 1 tsp dijon mustard
  • 1 Tbsp maple syrup
  • Salt and freshly ground black pepper
  1. Cook bacon in a non-stick skillet over medium-high heat until browned and just crisp, about 6 - 8 minutes. Transfer bacon to plate lined with paper towels to drain (it helps to use a spatula and press bacon against side of pan to drain excess bacon drippings back into the pan) and reserve rendered bacon drippings for dressing.

  2. In a large bowl toss together brussels sprouts, cooked bacon, parsley, pecans, pears, gorgonzola and shallots. Toss with dressing and serve. 

For the dressing:

  1. Whisk together all dressing ingredients in a mixing bowl or shake together well in a jar. Stir or shake again just before pouring onto salad. Note if it's chilled it will need to be warmed just slightly as the bacon drippings solidify once chilled.

  2. *First half the brussels sprouts then thinly slice through the width so pieces will separate. 

    **If you prefer a more mild less pungent cheese goat cheese may be substituted.

Butternut Squash Salad with Spinach

You may not think of adding butternut squash to your salad but it really just works, especially when you add it to a spinach salad along with toasted pecans, pomegranate arils, and tangy goat cheese.

Then you coat all of that with a honey shallot red wine vinaigrette and incredible things just happen! I'm telling you I just can't get enough of this salad!

I made it once this week and loved it so much that I deemed it worthy of my party this weekend and made it again. I'm guessing just about anyone could eat three platefuls of it.

In the past I've always thought tomatoes and salmon were such a strange combo (who knows why), then I finally got over that and tried it and I totally love it, as long as things are seasoned right. This is like an Italian spin on salmon in foil and you are totally going to love it! My picky 4 year old couldn't get enough of it!

You could also experiment with potatoes, asparagus, carrots, red onion, and cherry tomatoes. The options are limitless!
