Easy Sauteed Veggies

This is the side dish that goes with just about anything and it's a breeze to prepare. It's a great way to use up the abundance of fresh veggies that are in season.

These sauteed mixed vegetables are not only nutritious but they're also deliciously flavorful. That's thanks to the best all-purpose vegetable seasonings and also from the light browning that's achieved through sautéing.

You can also prepare this in advance and divide into portions to serve with your meal prep lunch. It goes really well with a simple protein like grilled salmon or chicken.

I've listed the finish of parmesan cheese as optional but to really complete these sautéed veggies and highlight their flavor, I'd say don't go without. A little bit of parmesan makes just about anything better.

I first made this casserole about 10 years ago and I've made it many times since! It's the perfect thing to make for Thanksgiving and other dinner parties to add something new to the classics.

I used to make it with fresh bread crumbs but I've decided this classic southern style recipe is so much better with crisp, buttered panko.

Here you'll love how the flavors of the cheddar and parmesan pair perfectly with the yellow squash. It takes an otherwise bland and boring squash casserole to another sort of decadence.

Easy Roasted Vegetables Recipe

It's always sad when the holidays are over and all the tempting treats are gone but it's always about this time my body starts to crave more healthy food after all the indulgent food I've been eating. I guess it's a good thing the holidays don't last forever.

I love this recipe because it's a great way to load an abundance of fresh vegetables into one meal.

These are perfectly served with whole grain or alongside poultry, beef, or fish. This is just one of those side dishes that goes with anything.

Crazy enough I didn't start cooking vegetables in the oven until later in life. I had no idea what I was missing out on!

My kids don't care much for vegetables but when I roast them it's so much easier to get them to eat them. My daughter actually requests roasted Brussels sprouts all the time.

While this really isn't much a recipe it's more just a method to get you started. Once you try roasted vegetables you'll be hooked for life. It makes healthy eating much more enjoyable!

Lemon Parmesan Chicken With Zucchini and Squash

Chances are if you're growing a garden or live by someone growing a garden, then right about now you have a bunch of zucchini and squash you need to use up. This healthy chicken recipe is the perfect use for it!

My brother, sister and mother-in-law all have gardens (I'm failing this year, someday I need to make time a grow a real deal garden. Last year I had one small box garden, I felt pretty cool) but they are are all generously sharing so much from their gardens (thank you!).

My brother was just telling me how quickly the zucchini and squash grow and he said he planted way too many, so lucky for me I get a bunch of them too. This skillet chicken recipe will be a new go-to use for all the summer squash and zucchini for me.

This lemon Parmesan chicken recipe is about as easy as it gets! Just some quick dicing for prep, then the chicken cooks in about 6 minutes and you set that aside and in the same skillet saute the zucchini and squash for about 4 minutes.

This is how you do simple weeknight dinners! Just be careful not to overcook the veggies as they will go from perfectly tender to mush in what seems like the blink of an eye.

The Perfect Way to Use up Zucchini and Squash!

Helloooo summer! Okay it's not official but it seems official since the kids are getting out of school, and it's getting seriously warm, and the suns almost always out, and I couldn't be more ready for all the beach days!

I'm also super excited about all the fresh summer fruits and veggies. Yep I'm a total foodie, I look forward to good produce :).

I recently bought a ton of squash and zucchini since it was on sale and now I have to figure out what to do with all of it. First thing of course I knew I was going to saute some of it because that's one of my go-to uses for squash.

Usually I just do zucchini but to make it more colorful and to add more flavor this time around I added yellow squash and grape tomatoes as well.

Sheet Pan Salmon and Veggies

Not only does this meal look pretty with all those colors but it tastes perfectly delicious too! Of course it's so easy to throw together - it's made on one sheet pan, and the clean up is a breeze.

It's an all around winna winna salmon dinna and it's a recipe you'll have on repeat. With foods this good I could keep up healthy eating all year, even through December :).

There's really not a whole lot to this salmon sheet pan dinner. That's one thing I love about a honey mustard glaze on the salmon, a few simple ingredients add a lot of good flavor.
Then roasted vegetables really don't need much, fresh veggies taste good just as they are with some salt and pepper but I threw on a little garlic and finished them off with some fresh lemon for a nice bright flavor to round them out.
You don't even needs herbs here but feel free to add some if you'd like.

The directions might seem a little long or more complicated then they really are but after you've made it once you might not even need a recipe a second time.

Basically just go by the photos when keeping the vegetables separated by color if your going for the same rainbow look.

You can spread the veggies out more in the beginning, then before adding the salmon and tomatoes just scoot things down to create space or if you don't want so scoot them just place them as they are pictured from the beginning.

Either way works fine since this is only 3 servings they shouldn't be overcrowded. I hope all of you enjoy this simple healthy dinner as much as we did!

Sheet Pan Honey Mustard Salmon and Rainbow Veggies

Sheet Pan Honey Mustard Salmon with Rainbow Veggies is such a healthy flavorful one pan dinner! It's made with vibrant fresh veggies, tender salmon fillets and it's seasoned with honey mustard and garlic. Who wouldn't love this?

  • 1 medium yellow squash (, sliced into 1/2-inch thick rounds)
  • 2 1/2 cups bite size broccoli florets
  • 1/2 medium red onion (, diced into 1 inch chunks)
  • 2 Tbsp olive oil (, divided)
  • Salt and freshly ground black pepper
  • 1 Tbsp dijon mustard mustard
  • 1 Tbsp honey
  • 3 garlic cloves (, minced, divided)
  • 2 tsp fresh lemon juice
  • 3 (5 - 6 oz) skinless salmon fillets
  • 1 cup grape tomatoes ((I actually used 1 1/2 cups because I love tomatoes))
  • 4 lemon wedges (, for serving)
  1. Preheat oven to 400 degrees. Line a rimmed 18 by 13-inch baking sheet with parchment. Place squash on baking sheet on upper third portion of baking sheet then place broccoli in the middle portion and red onion on bottom portion*. Drizzle veggies with 4 tsp olive oil, season with salt and pepper and toss while keeping veggies separated in each section. Roast in preheated oven 8 minutes. Meanwhile in small bowl stir together mustard, honey, 1 tsp of the olive oil, 1 minced clove garlic and lemon juice, set aside.
  2. Remove baking sheet from oven. Move veggies down a little ways to fit tomato layer and salmon (as pictured in photos above). Place salmon on baking sheet next to squash layer (bottom side facing up), brush of salmon fillets with half of the mustard mixture and season with a fair amount of salt and pepper, then flip each portion and brush tops with remaining mustard mixture and season with salt and pepper. Place tomatoes on baking sheet in the top portion of the baking sheet, drizzle with last 1 tsp olive oil and season with salt and pepper. Sprinkle remaining 2 cloves garlic evenly over the vegetables and tomatoes. Return to oven and roast until salmon has cooked through and vegetables have softened, about 12 - 15 minutes longer. Serve immediately with lemon wedges for spritzing over salmon and vegetables.
  3. *I actually added the red onion later on when adding the tomatoes and salmon because I wanted them to be brightly colorful, but next time I'm adding them at the beginning so they soften more - as listed above.

The ultimate comfort food! Lasagna + soup, two of the world's best foods. A few years ago I shared a recipe for a beef lasagna soup and for the longest time I've been meaning to share a vegetarian version, so finally here it is.

Even my meat loving husband loved this soup! And of course I found myself heading back for a second bowl because it is just soooo good!

Vegetable Lasagna Soup

This vegetarian soup is so good you won't even miss the meat! It's perfectly hearty and totally filling and brimming with tons of fresh vegetables. Then it's finished off with a generous dollop of mixed lasagna cheeses that melt perfectly into the hot soup. 

  • 2 Tbsp olive oil
  • 1 medium yellow onion, (chopped (1 1/2 cups))
  • 1 1/2 cups diced carrots ((about 3 medium))
  • 4 cloves garlic, (minced (1 1/2 Tbsp))
  • 1 (32 oz) carton low-sodium vegetable broth
  • 1/2 cup water
  • 2 (14.5 oz) cans diced tomatoes
  • 2 (8 oz) cans tomato sauce
  • 1 (8 oz) medium zucchini, (ends trimmed, chopped)
  • 1 (8 oz) medium yellow squash, (ends trimmed, chopped)
  • 5 oz button mushrooms, (sliced)
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp each dried thyme and rosemary ((crushed))
  • 1 tsp sugar
  • Salt and freshly ground black pepper
  • 8 lasagna noodles (7 oz), (broken into bite size pieces (see important note*))
  • 3 cups (packed) spinach (3 oz), (roughly chopped)
  • 3 Tbsp chopped fresh parsley ((optional))

Cheese mixture

  • 1 1/4 cups (5 oz) shredded mozzarella cheese
  • 1/2 cup (2 oz) finely shredded parmesan cheese
  • 8 oz ricotta cheese
  1. Heat olive oil in a large pot over medium-high heat. 
  2. Add onion and carrot and saute until softened, about 8 minutes. Add garlic and saute 1 minute longer. 
  3. Add in broth, water, tomatoes and tomato sauce, zucchini, squash, mushrooms, basil, oregano, thyme, rosemary, sugar and season with salt and pepper to taste.
  4.  Bring to a boil then add pasta (or boil pasta in a separate pot as listed in notes) then reduce heat to medium low. 
  5. Cover and simmer, stirring occasionally (loosen any noodles that may stick to the bottom when stirring), until pasta is tender, about 10 - 13 minutes.
  6. Meanwhile in a mixing bowl stir together mozzarella, parmesan and ricotta while seasoning lightly with salt to taste.
  7. Stir spinach into soup and allow to heat through until wilted (it will wilt quickly, about 30 seconds). 
  8. Serve soup warm topped with spoonfuls of the cheese mixture (just swirl it lightly into your personal serving - it will melt quickly) and sprinkle with parsley if desired.

*If you won't be serving all of this soup right away I highly recommend cooking the lasagna noodles separately. Just omit the 1/2 cup of water and 1/2 cup of the broth. Boil the noodles in a separate pot in salted water, then add them to each individual serving. Also, leave the simmer time for the soup the same so the zucchini, squash and mushrooms soften.
I recommend doing this because I've made this soup twice and after it's rested for more than 20 minutes it starts to become more like a stew and the noodles just soak up all the liquid and become soggy. It works great to cook the noodles in the soup if you are serving it right away though.
