For the Bowls

  • Veggies including sweet potatoes, red onion, kale
  • Chick peas
  • Olive oil
  • Seasonings including cumin, paprika, cinnamon, turmeric, salt
  • Red onion
  • Quinoa

For the Ginger Tahini Sauce

  • Tahini
  • Lemon
  • Honey
  • Garlic
  • Ginger

Tahini can be somewhat strong (and it can vary by brand), so if desired use half cashew butter.

I love that this is such a delicious yet healthy appetizer or snack to serve at parties (double the recipe for a larger crowd and spread into a 13 by 9-inch dish). Usually party foods are always pretty indulgent but this one is loaded with good for you ingredients.

Part of what makes this a healthy dip are the garbanzo beans (aka chick peas) which are part of the pulse family.

Greek Seven Layer Dip

Seven Layer Greek Dip is a fun Mediterranean spin on the classic version we're all used to! This dip begins with a layer of freshly made hummus then it's topped with a creamy, garlic-herb Greek yogurt layer then a layer of English cucumbers, grape tomatoes, black or kalamata olives, then finally it's finished with feta and red onions. Don't you just want to dive into all that goodness?

  • 1 (15.5 oz) can garbanzo beans, drained and 1/4 cup liquid from can reserved*
  • 2 1/2 Tbsp tahini
  • 2 Tbsp fresh lemon juice
  • 2 small garlic cloves (, minced)
  • 1/2 tsp cumin
  • 1/2 tsp salt (, or to taste)
  • 2 Tbsp olive oil
  • 1 1/3 cups thick plain Greek yogurt (, such as Fage)
  • 1 1/2 Tbsp finely chopped fresh parsley
  • 1 Tbsp minced fresh dill
  • 1 cup diced English cucumber
  • 1 cup diced grape tomatoes or Roma tomatoes ((drain off excess liquid after cutting))
  • 1/3 cup sliced black olives or kalamata olives
  • 1/2 cup crumbled feta cheese
  • 3 Tbsp chopped red onion (, rinsed and drained)
  1. Add drained garbanzo beans to a food processor along with tahini, lemon juice, 1 clove of garlic, cumin and 1/2 tsp salt. Pulse for about 1 minute then with food processor running slowly pour olive oil and 2 Tbsp of the liquid from the chick peas into the food processor. Hummus should be somewhat thick, but add more of the liquid as needed 1 Tbsp at a time. Spread hummus into an even layer in an 11 by 7-inch or 8 by 8-inch baking dish (at this point chill through if you have time).
  2. In a medium mixing bowl stir together Greek yogurt with parsley, dill and remaining garlic. Dollop mixture over hummus layer in dish and spread into an even layer. Top with cucumbers, tomatoes, olives, feta and onions. Serve with pita chips (serve immediately after sprinkling veggies over top for best results). Store in refrigerator.
  3. *I made a double batch of the hummus so I could save half for later. If you want to do this just double eveything from the garbanzo beans to the olive oil then only use half of it for the dip.

Greek Chicken Wraps

Lately, I've been thinking, I need more wraps in my life! I rarely make them and that needs to change. They are basically a big giant taco and I'm obsessed with tacos so they should be a regular on my menu.

The ingredients can be as fancy or simple as you'd like. I opted to go with a homemade hummus because I always have everything on hand to make hummus, but if you are looking to make these quicker you can definitely just go with your favorite store-bought hummus. You could also use a rotisserie chicken for faster meal prep. Hang on to all of the unused ingredients, because you can remix them into a healthy Greek salad for lunch tomorrow.

Then if you want to go the other route and do everything from scratch you could make a homemade Greek vinaigrette to toss with the chicken.

You could also make these into more of a gyro-style wrap by swapping out the hummus for tzatziki sauce and using pita, I did however love the hummus on these so try it this way at least once.

I love Greek and Mediterranean food because of all its bright fresh flavors and these Greek chicken wraps are no exception to that. Crunchy vegetables like red onion and cool cucumber are perfect with salty kalamata olives and tangy fresh dill. Add a tbsp lemon juice spritzed over the Greek salad before wrapping it up and enjoy!

I loved everything about this Greek chicken hummus wrap and I'll make them again and again for an easy weeknight meal!

Greek Grilled Chicken & Hummus Wrap

These wraps are easy to make yet it's so incredibly delicious! Tortillas are layered with creamy hummus, tender grilled chicken breasts, crisp fresh veggies and feta. Perfect for lunch or a simple dinner.

  • 1 1/2 lbs bonless skinless chicken breasts
  • Olive oil
  • Salt and freshly ground black pepper
  • 6 Tbsp Greek vinaigrette dressing
  • 4 (10-inch, burrito size) flour tortillas ((wheat, low carb or spinach is fine))
  • 3/4 cup hummus, (store-bought or homemade (homemade recipe in notes below))
  • 3 cups chopped romaine lettuce
  • 2 medium roma tomatoes, (diced)
  • 1 medium cucumber, (peeled and diced)
  • 1/2 cup (2.5 oz) feta cheese, (crumbled)
  1. Preheat a grilled over medium-high heat to 425 degrees. Pound chicken to an even thickness using the flat side of a meat mallet. 
  2. Brush chicken breasts lightly with about 1 Tbsp olive oil, season with salt and pepper. 
  3. Brush grilled grates lightly with oil, and grill chicken, rotating once halfway through cooking, until it registers 165 in center on an instant read thermometer, about 6 - 8 minutes. 
  4. Transfer to a plate, cover with foil, let rest 10 minutes then dice into cubes. Transfer chicken to a bowl, pour vinaigrette over chicken and toss to evenly coat.
  5. To assemble wraps spread about 3 Tbsp hummus over each tortilla, top with chicken, lettuce, tomatoes, cucumber and feta cheese and wrap tortillas.

For the homemade hummus - to a food processor add 1 (14.5 oz) can drained chick peas, 3 1/2 Tbsp drained chickpea liquid or water, 3 Tbsp tahini, 2 1/2 Tbsp fresh lemon juice, 2 Tbsp olive oil, 1 clove garlic sliced, 1/2 tsp salt, 1/4 tsp cumin. Pulse until smooth (it will take about 3 - 5 minutes depending on your food processor). Season with more salt to taste if desired and add more liquid if needed.

Homemade Roasted Red Pepper Hummus

I could live on hummus. Okay, I still need my cupcakes and all that, but hummus is one of my favorite snacks and sides to my lunch. I used to just buy the store-bought hummus, then one day I finally decided to make it at home instead.

Homemade hummus is SO much better, so if you haven't tried it yet you really need to. I don't think I could call the stuff at the store authentic hummus, since many times the second ingredient in them is soybean or canola oil. And they contain preservatives — I'll take fresh, please!
