The foundational ingredients are all browned in batches first, then red wine and seasoned broth are added while scraping up that flavorful fond (the browned bits at the bottom of the pan), then it's all slowly braised over a low heat until everything is tender and infused with rich flavor. What is Spatchcock Chicken?

Rustic spatchcock chicken is a whole chicken that has had the backbone removed and it's butterflied, then it is turned to the opposite side and breastbone is cracked to flatten the chicken. Then benefit of spatchcock chicken is that since it's splayed flat it cooks quicker and more evenly than a chicken left whole in its more natural rounded form.

Another great thing about this method is that no special ingredients are needed and no roasting pan is required. Just a simple ingredients and a standard baking sheet are used. You could even swap out the fresh herbs for dried if that's what you have on hand (just use 1/3 the amounts).

When roasting a whole chicken I've found I prefer to include vegetables alongside it for two reasons. An obvious reason is that you get a side dish cooked at the same time, and the other benefit is there's far less smoking in the oven. Win win.

This recipe yields tender juicy chicken with highlighting complementary flavors of lemon and herbs. And paired alongside are those golden brown, garlicky roasted vegetables to round it out. It's such a cozy meal in one, and if you want an extra upgrade pair it with simple 1-Hour Dinner Rolls.

The Best Harvest Bowls

This recipe is a copycat recipe with inspiration from Sweetgreen's harvest bowl but with what I consider a few even more delicious additions.

In place of balsamic dressing I found honey lemon dressing tasted better and was more fitting, feta was overall more preferred among tasters versus goat cheese, and Brussels sprouts add one more veggie and will help get more servings out of it. Pan seared chicken was also used in place of roasted for a quicker option.

Simply put we are obsessed with these meal in one bowls, they are one of the tastiest healthy fall recipes and we just can't get enough of them! Once you try them you may just start making them weekly like we are lately, and you can switch them up with different toppings (see ideas below).

They are loaded to the max with flavor and wholesome goodness. They make an excellent dinner and leftovers are perfect for meal prep for lunch the following day.

That's just what you get in this soup recipe. It's like chicken noodle soup upgraded with fresh juicy corn, plus we dot it in some bacon and blend in some cream for good measure.

It's also similar to a chowder, and it's adaptable to what you have on hand (as usual see ideas below). For instance you can replace bacon with ham or make this Pennsylvania Dutch style with homemade mini dumplings called rivels in place of noodles (making the soup completely from scratch!).

Pair it with a slice of buttered homemade bread and a simple garden fresh salad with a homemade herby ranch for the most comforting homestyle dinner!
