What is Chess Pie?

Chess pie is a popular dessert in the American South that originated from England. It is a custard style pie with a crisp browned topping.

It is generally made up of a traditional pie crust while the filling consists of eggs, milk or buttermilk, flour, sugar and often vinegar or lemon.

You'll love this pie not only for it's irresistible sweet flavor but also because it's one of the easier pies to make.

What is Chicken Adobo?

Chicken adobo is one of the most popular Filipino dishes, and it seems as though everyone has their own way of making it. Bone-in skin-on chicken pieces are braised in a super simple sauce made up of minimal ingredients yet it packs a flavorful punch.

You'll always find soy sauce and vinegar in the dish. Then in authentic adobo there's usually garlic, bay leaves and black peppercorns. Then not always standard is sugar. I personally think the sugar is a must to balance the salt and acidity of the sauce. I've made it without and it's not near as good.

What About Marinating or Browning?

Sometimes chicken is marinated in the sauce, other times that step is skipped. I skip it because I think it has enough time to soak up flavor while cooking. Frequently you'll find chicken is browned first in adobo, other recipes just add raw thighs right to the sauce mixture and simmer. But why not brown it to add more flavor?

Then you'll find variations on the ingredients used for example the type of vinegar can vary from cane vinegar, to coconut vinegar or palm vinegar. And some people like to add a vegetable right to the dish while simmering such as potatoes and onions.

And as far as the soy sauce goes, for me I find full strength soy sauce to be overwhelmingly salty so I like to use half regular and half low-sodium.

The great thing about this dish is that it's pretty forgiving so ingredients can be adjusted to taste. I the idea is to stick to the staple ingredients and to have plenty of sauce so the chicken ends up nicely seasoned and then there's extra sauce to serve over rice.

I highly recommend this recipe, not only will the whole family enjoy it but it's a breeze to prepare! Then just serve it with white or brown rice and a steamed vegetable to complete the easy meal.

How to Make this Delicious Ravioli Recipe

  • First you'll boil the ravioli according to package instructions (usually about 7 minutes).
  • While that's cooking you'll melt butter with olive oil in a large skillet.
  • Then you'll saute the asparagus until it's tender and add tomatoes and garlic and saute to warm tomatoes through.
  • Now you'll pour in a splash of balsamic vinegar (hello flavor!).
  • To finish it all off you'll pour the cooked and drained ravioli in to a large bowl along with that asparagus mixture, the walnut, fresh herbs, and season with salt and pepper to taste and give it a good toss.
  • And finally finish it off with a large handful of shredded parmesan. Because what's a good pasta dish without parmesan?

This recipe doesn't require any browning beforehand or anything complicated just easy roasted chicken and vegetables for a satisfying meal you'll want again and again!

Roasted Chicken and Veggies with Herb Vinaigrette

How to Make Roasted Chicken Thighs

  • Place the chicken and veggies on a sheet pan.
  • Drizzle and toss chicken and veggies with olive oil and sprinkle with some seasonings (here I just used paprika, garlic powder and onion powder, just basics because the vinaigrette is where the main, bright flavors come from).
  • Roast mixture in a really hot preheated oven so you can get some color on everything. Also another reason the thighs are better here - they're fattier so they'll brown better on a dark baking sheet.
  • And while that's roasting you'll make a summery vinaigrette with lots of fresh herbs.
  • Once the chicken is done pour that bright vinaigrette over everything and you've got a new sheet pan dinner that's anything but boring!

This Grilled Chicken Chopped Salad could fall under a Greek salad or Italian salad, it tastes like either or. If you wanted it to be like a traditional Italian salad you could add in some salami or pepperoni but I wanted it to be a little bit healthier so I didn't add either of those.

Italian Salad Dressing

I love that this dressing is a slightly creamy vinaigrette thanks to the light mayo in it. The great thing here is that you'll likely have some leftover dressing for a lunch salad the next day! You can adjust this dressing to your personal taste, like more red wine vinegar or a quick whisk of some Dijon mustard for a more tangy flavor.

Italian Chopped Salad Ingredients

If you want to add more flavor to your grilled chicken you can definitely add more seasonings to it, for something like this I generally just add onion powder, garlic powder, salt, oregano, and pepper. Red pepper flakes will make it a little more spicy. Fresh basil torn or shredded as a garnish gives you that perfectly Italian taste. Ramp up your protein with garbanzo beans or chickpeas. Add more crunch with radicchio and crispy bacon bits. Sprinkle mozzarella or provolone cheese for a creamy angle.

If you want to make the ingredient list shorter you can omit some of the ingredients and still have an amazing salad. I'd say the olives, croutons, and red onions are optional, and of course, the peppers, leave everything else and you'll still have a wonderfully filling and delicious salad!
