The BEST Porcupine Meatballs!

Why are they called porcupine meatballs (or as we always just called them "porcupines")?

Obviously they're no actual porcupine meat included in the ingredients, rather it's how the rice in the meatballs pokes out while cooking giving them a porcupine-like appearance.

This dish became very popular during the great depression because it only required a few basic ingredients. Traditionally they were made with ground beef, rice, onion and canned tomato soup.

My mom made these quite frequently for us growing up so now they are one of the dinners from home I crave.

I think of them as more of a "stuffed pepper meatball" because this version includes bell pepper which isn't so traditional. But I would say it's a must!

Here I adapted my Mom's recipe but have also included egg for binding, a few extra seasonings, and have browned them for a little more flavor. But if you want to keep it perfectly simple you can skip the browning and they're still exceptionally delicious.

What is a Strata?

A strata is an American brunch casserole dish made up of layered pieces of bread, meat or vegetables, often cheese, and it's all soaked in an egg and milk mixture. It's oven baked until cooked through and set, and then cut into squares and served warm.

It's something like a savory French toast, with mix-ins!

I love this for a change because a lot of breakfast foods are sweet, or coated in something sweet. Like pancakes, pastries, scones, waffles, muffins, and French toast. But it's great to have a more savory option like this strata.

It's so convenient that you can make this the night before you want to serve it, pop it in the oven in the morning and have an easy, hot breakfast ready to serve! An overnight casserole that's great for holidays and weekends.

It also makes a great dinner and leftovers for lunch too. So much deliciousness in every layered bite!

This butter chicken recipe is easy and straightforward. It just involves a bit of extra time. It's one of those hard to mess up dishes as long as you follow a few simple directions and tips.

Chickpea Coconut Curry

This Chickpea curry is such a hearty and flavorful Indian dish that really packs in that crave-able flavor! It's made without any meat and you won't even miss it in the slightest!

The best part, in my opinion, really is the sauce with its vibrant taste and perfect smoothness (no chunks thanks to a quick blend). If you're a fan of butter chicken, I'm willing to bet you'll love this!

Though it may seem like an incredibly long list of chickpea curry ingredients here, don't be alarmed because the majority of it is spices you likely already have on hand in your pantry (plus I've even included a few as optional).

Some of you may be thinking, but wait, there's no curry? Here we make our own curry spice blend which gives us far more overall control over flavor and heat level.

And this recipe uses plenty of them for an exciting, rich depth of well-rounded flavor.

Serving suggestions are of course the classic basmati rice or cauliflower rice, but if you really want to go all out serve it with warm buttery naan bread. Roasted vegetables are a great side to it as well just ditch the Italian seasoning and use spices like those here instead. You can also try serving this over spinach or kale.
