This chicken and apple skillet recipe is an ideal dinner to welcome the season.

Slow Cooker Chicken Tikka Masala https://www.cookingclassy.com/crockpot-chicken-tikka-masala/ https://www.cookingclassy.com/crockpot-chicken-tikka-masala/#comments Sun, 24 Aug 2025 04:06:15 +0000 https://www.cookingclassy.com/?p=75969 Rich and well spiced Slow Cooker Chicken Tikka Masala! Made with bite size pieces of chicken, bright tomato puree, plenty of earthy spices, plus yogurt and cream to highlight. It's a go-to dinner for busy days!

Slow cooker chicken tikka masala garnished with cilantro in a black crockpot.

Yes that's right a crockpot chicken tikka masala that doesn't require any browning meat, sautéing aromatics, or the extra step of pureeing sauce. Everything is simply added right into a slow cooker, tossed together, cooked through, then finished off with a fair amount of cream.

It is the simplest way to cook this savory Indian-British dish and the final result is a full flavored, perfectly impressive curry style dinner. Who doesn't love a dinner recipe that takes minimal effort but yields maximum flavor!

This near effortless dish simmers low and slow allowing all the flavors to meld and soak into the chicken, and its generous allotment of cooking time allows for all those spices to marry together in a overall unified flavor.

The key to a good slow cooker curry style dish like this is just to use plenty of spices, fresh aromatics (garlic, ginger and onion), and never forget the cream (it compliments the tomato beautifully). Serve it with basmati rice cooked in a rice cooker for continued ease, and pair with a side of steamed peas or green beans to include a veggie.

Chicken Caesar Wrap https://www.cookingclassy.com/chicken-avocado-caesar-salad-wrap/ https://www.cookingclassy.com/chicken-avocado-caesar-salad-wrap/#comments Wed, 21 May 2025 16:08:17 +0000 https://www.cookingclassy.com/?p=25034 This Chicken Caesar Wrap is a hearty, flavor loaded wrap layered with tender pieces of chicken, crisp lettuce leaves, bright tomatoes, rich avocados and a homemade creamy caesar dressing. It's such a satisfying summery lunch!

Close up photo of chicken caesar salad wrap in whole wheat tortillas.

Lately I've been loving wraps more than ever! They are such a welcome change to the same old sandwiches or salads we've had far too often.

Here you take a basic caesar salad, add in upgrades of avocados, chicken and tomatoes, along with a cool caesar dressing (and nix the croutons because the carbs on carbs seems overkill). Then wrap it all up in a jumbo tortilla and you've got a colorful, loaded wrap everyone will be envious of at your lunch hour (plus they are perfect for dinner too).

Yes, you could go the cheater route and use a store-bought caesar dressing to save time, but really this homemade caesar dressing makes the recipe what it is. Plus is easy to prep and most definitely worth the extra bit of effort and ingredients (many of which are kitchen staples).

And if you are wanting to live on the edge and splurge you could even take these chicken caesar wraps one step further and add cooked crumbled bacon. No one will complain!

Creamy Dijon Mustard Chicken https://www.cookingclassy.com/skillet-chicken-with-mustard-cream-sauce/ https://www.cookingclassy.com/skillet-chicken-with-mustard-cream-sauce/#comments Sat, 19 Apr 2025 19:46:17 +0000 https://www.cookingclassy.com/?p=17445 Brightly flavorful Creamy Dijon Mustard Chicken is made with simple ingredients including lean chicken breasts, tangy dijon mustard, rich cream and inviting herbs. It comes together quickly and is great for both weeknight meals and hosting guests.

Creamy dijon mustard chicken shown on a white oval serving platter over a green cloth and a wooden tray.

This skillet seared chicken with creamy dijon sauce is richly flavorful, with a touch of gourmet. It's indeed an upgrade on otherwise bland and boring chicken breast. And the best part is it's made with a handful of staple ingredients you likely already have on hand.

Its simple dijon mustard infused sauce is something that you can use on other proteins like ham, pork or salmon, side vegetables such as asparagus, broccoli and potatoes, and breakfast dishes like eggs benedict and stratas. Basically you'll want to add to just about everything else in your fridge so you may as well double it up so you have extra.

Impress everyone with this creamy mustard sauce chicken, it may likely even become one of your favorite chicken dinners!

Coq au Vin https://www.cookingclassy.com/coq-au-vin/ https://www.cookingclassy.com/coq-au-vin/#comments Mon, 23 Dec 2024 18:12:10 +0000 https://www.cookingclassy.com/?p=74374 Coq au Vin is a cozy and rustic French stew made with hearty bone-in chicken thighs, deeply flavored red wine, aromatic herbs, and a base of vegetables that's all slow simmered to rich, glorious perfection!

Coq au vin served over mashed potatoes on a green plate with bread to the side.

Traditional Coq au Vin is a centuries old dish and a staple in French cuisine. It's an incredibly hearty and comforting dish built with a bit of time and layer upon layer of flavor.

The foundational ingredients are all browned in batches first, then red wine and seasoned broth are added while scraping up that flavorful fond (the browned bits at the bottom of the pan), then it's all slowly braised over a low heat until everything is tender and infused with rich flavor. From there the sauce is thickened with a roux (flour and butter mixture), and the bacon is added back at the end to maintain its crispness.

It's such a memorable dish with full bodied flavor. There's a reason it's become a world renowned dish!

Serve it with one of the many options listed below. I would say you can never go wrong with mashed potatoes to complement its rustic, homestyle goodness.Coq au vin shown in a braiser pot.

Spatchcock Chicken https://www.cookingclassy.com/spatchcock-chicken/ https://www.cookingclassy.com/spatchcock-chicken/#comments Sun, 17 Nov 2024 04:17:26 +0000 https://www.cookingclassy.com/?p=73840 The best way to prepare Spatchcock Chicken - a flattened chicken is rubbed with garlic herb butter and roasted on a sheet pan until gorgeously browned, surrounded by tender vegetables. It's a humble meal with impressively flavorful results!

Spatchcock chicken with potatoes and carrots shown on a large oval white serving platter with lemons.

What is Spatchcock Chicken?

Rustic spatchcock chicken is a whole chicken that has had the backbone removed and it's butterflied, then it is turned to the opposite side and breastbone is cracked to flatten the chicken. Then benefit of spatchcock chicken is that since it's splayed flat it cooks quicker and more evenly than a chicken left whole in its more natural rounded form.

Another great thing about this method is that no special ingredients are needed and no roasting pan is required. Just a simple ingredients and a standard baking sheet are used. You could even swap out the fresh herbs for dried if that's what you have on hand (just use 1/3 the amounts).

When roasting a whole chicken I've found I prefer to include vegetables alongside it for two reasons. An obvious reason is that you get a side dish cooked at the same time, and the other benefit is there's far less smoking in the oven. Win win.

This recipe yields tender juicy chicken with highlighting complementary flavors of lemon and herbs. And paired alongside are those golden brown, garlicky roasted vegetables to round it out. It's such a cozy meal in one, and if you want an extra upgrade pair it with simple 1-Hour Dinner Rolls.

Easy Homemade Chicken Fajitas

Chicken fajitas are most commonly made with chicken breasts but chicken thighs are the best, and this is my tested and perfected recipe I'm so happy to share with you!

Chicken is soaked in a seasoned, lime and oil based marinade then pan seared in a hot cast iron skillet to achieve a flavorful charred exterior with crisped edges, and juicy, tender interior.

After which fresh multi-color bell peppers, and boldly flavored onions and garlic are sautéed to a perfect tender crisp texture in the same piping hot skillet.

Then to assemble fajitas chicken is sliced, and mounded over flour tortillas along with those flavorful veggies.

It's brimming with vibrant flavor, has a satisfying blend of textures, and it's sure to be a hit at your next summer get together!

Chicken caesar pasta salad shown in a brown wooden serving bowl over a red cloth on a white marble surface.

Grilled Chicken Caesar Pasta Salad is made with tender penne pasta, lightly charred grilled chicken breasts, crisp romaine lettuce, sweet grape tomatoes, crunchy croutons, rich parmesan and it's all covered in a creamy, lemony caesar salad dressing.

It's a dish so filling and delicious that is could easily pasta for the main entree of a meal.

Plus it's easy to make and there's even a few shortcuts if you want to save some time, such as using rotisserie chicken, store-bought croutons, and even a store-bought caesar dressing (though I'd add some fresh lemon to it).

Or if you love to impress and go all out like I did here, which will create the very best pasta salad, then make the croutons from scratch, go for the grilled chicken option, and make the simple dressing fresh. This pasta salad is a dream and I think you'll absolutely love it!Grilled chicken caesar salad shown from overhead in a wooden bowl with romaine lettuce and wooden serving spoons to the side.

Thai Chicken Lettuce Wraps https://www.cookingclassy.com/thai-chicken-lettuce-wraps/ https://www.cookingclassy.com/thai-chicken-lettuce-wraps/#comments Wed, 19 Jun 2024 19:10:13 +0000 https://www.cookingclassy.com/?p=24328 Thai Chicken Lettuce Wraps are a flavorful Asian dish made with lean protein, veggies, a sweet and savory sauce and a variety of satisfying garnishes. You can serve them as an appetizer, side dish or main dish.

Thai chicken lettuce shown assembled close together on a white oval platter.

Filling Thai Chicken Lettuce Wraps

These Thai Chicken Lettuce Wraps are everything you'd want them be and then some! They have well rounded flavor, you'll find them easy to make, and they have the perfect crunch factor thanks to the tender crisp veggies, lettuce, and peanuts.

The chicken (or turkey) keeps them nice and filling but if you want an even heartier meal you can serve these with a side of rice.

You can adjust the sauces here to suite your taste. If you like the flavor of fish sauce you can add more. If you love heat load them up with the Sambal Oelek or Sriracha. And for more peanut flavor be sure to try them finished with a creamy peanut sauce (it so delicious and worth the extra bit of effort).

I know it's a fairly lengthy list of ingredients here but I don't recommend leaving any out. Everything comes together beautifully to create a truly tasty, veggie and chicken-filled lettuce wrap that you'll want to make on repeat.
