Didn’t have chilies
Used a rotisserie AND added 4 grilled boneless thighs
Added 2 cloves more garlic
No food processor, used a Cuisinart stick…a few times
Added a can of drained black beans
Added 1/4 cup more corn
Note: It was SUPER spicy (not sure why) until I added the cheese. I also let it cook low and slow for about an hour tasting as I went.

I didnt have pre-cooked or rotisserie chicken on hand, so I pressure cooked 2 chicken breasts with some of the same spices from the soup. I used the leftover liquid from pressure cooking the chicken as the majority of the broth in this recipe too, for extra flavor!
Shredded the chicken and set the cooking liquid aside, then put the pressure cooker on “sauté” to cook the onions and garlic. Followed the rest of the recipe exactly, except I added some chopped zucchini for extra veggie power, at the same time I added the chicken & beans! Used fresh corn I had on hand, too, and half pinto half cannellini beans since I only had one can of each. Turned out great with some shredded cheese, avocado slices, cilantro, lime juice, and crushed lime tortilla chips on top! Thanks for the great sick/rainy day recipe.
